How to Make Montreal Steak Seasoning | It’s Only Food w/ Chef John Politte

Creating an incredible jar of steak seasoning doesnt get much easier than this.

Place whole peppercorns in a small saute pan. Heat on medium-high heat for 2-3 minutes until toasted but not burnt. Mix often to prevent burning. Pour warm peppercorns into a high powered blender and blend for 5-10 seconds until broken apart.

Combine the peppercorns with all the other seasonings listed above. Mix well in a bowl. Then, using a funnel pour into a mason jar. Label the jar, and store in a dark dry place for up to 3 months. Use as directed in recipes or pat onto steaks before grilling.

    How Long To Season Steak

    This answer depends on when you plan on cooking your steak, and also the method, but essentially you have two options:

    • Cook the steak right after seasoning OR
    • Let the seasoning sit on the steaks for at least 40 minutes, up to 24 hours

    If youd like to read up more on the science behind this, check out this article, but the quick version is that between 3-40 minutes, the salt from the seasoning draws out moisture from the steak, then starts breaking down the fibers, before it is eventually reabsorbed after around 40 minutes. The in-between phase is what you want to avoid, so that you dont end up with tough or dry steaks.

    The method you use to cook the steak actually has an impact on when to season steak, too:

    • If you are using the reverse sear steak method, youll want to season the steak and let it dry brine in the fridge at least overnight, to allow the outside to dry out, so that it gets that perfect browned crust when you sear it.
    • If you are making simple sirloin steak in the oven , this matters less, and cooking steak right after seasoning is just fine.
    • If you are making a tougher cut of meat, like flank steak, I find that a steak marinade works best.

    Using Steak Seasoning For Steak

    As you can see here, we love to add a little to each side of the steak before either grilling it or searing it in a cast iron skillet.

  • Heat oil in a cast iron skillet. You want the oil to be smoking before you add the steak. Because of that you need to use an oil that can stand up to that high heat. I recommend either grape seed oil or canola oil.
  • Season the steak. Add about a teaspoon of the seasoning to each side of the steak .
  • Add the steak to the hot oil. Cook for about 2 to 3 minutes on each side. Or until it reaches the level of doneness you prefer using an instant read thermometer 145 degrees for medium, 150 for medium well, and 160 for well done.

    It worked perfectly! There are quite a few recipes on the Internet for Montreal Steak Seasoning, so I sort of combined them to suit my tastes.

    I do love the coarse texture of the store-bought version, so rather than using all ground spices, I opted for things like peppercorns, mustard seed, and coriander seed.
