    How To Season Steak

We are keeping the seasoning nice and simple by using kosher salt and black pepper. However, if you want to use a BBQ rub, spices, or herbs, feel free.

Unfortunately, many home cooks are terrified of salt. Maybe youve been subjected to it by your moms lack of exposure to seasoning or your familys medical history of hypertension. However, theres no need to be afraid of salt.

Trust me I get it. No one wants to eat an overly salty steak or develop hypertension. But when it comes to seasoning steak, you must be generous with the salt.

The first ingredient you need to season a steak is kosher salt. Do not use super-fine salt to season your steak. Kosher salt has a large enough crystal that permits dry brining and maximum absorption on the steaks outer surface.

The second ingredient you need to season steak is black pepper.

Generously coat both sides of your top round steaks with salt and allow the steaks to sit fridge uncovered for 1-2 hours or overnight.

Remove the steak from the fridge and season it generously with pepper while it is coming to room temperature.

Seasoning steak doesnt just happen while it is in its raw state. Once the steak has been seared and allowed to rest, give it another sprinkling of large flaky salt. If you want to know how to sear a steak, check out our how-to guide.

Charcoal Or Gas Grill For Steak

Charcoal or wood-fired grills are always the best choice for grilling steaks because of the additional flavor and charring they provide. If you have a charcoal grill, you also can add different kinds of wood to the fire to contribute smokiness and enhance the overall flavor of the meat.

Dont worryyou can still cook a great steak on a gas grill. If using gas, open the lid, turn on the gas, and light the grill. Dont light the grill with the lid closed gas can build up inside the grill and create an explosion.

    Why Should You Season Steak

How To Grill The PERFECT Steak Every time! | Cooking Is Easy

In this case, seasoning means spices, herbs, or a combination of spices used to enhance the flavor of the steak. Although most individuals season their steaks before they are cooked, they do it out of habit. Most individuals are unaware of the benefits associated with seasoning steak.

The most apparent reason for seasoning steak is that it enhances the steaks natural flavor. Yes, a steak would be enjoyable on its own.

However, when you add a little sea salt and ground black pepper to the steak before cooking it, it is like your taste buds are floating on a bed of flavor. It enhances the savory flavor you already know and love.

Nevertheless, seasoning a steak also has a hidden benefit: tenderizing the steak. A quality steak recipe has salt listed as an ingredient. This is because as the steak sit, salt pulls moisture out of it.

Salting a steak in advance is a process known as dry brining. After the steak has been salted, the steak is refrigerated, uncovered, and moisture pools on the surface of the steak. The moisture that accumulates on the surface of the steak is reabsorbed back into the steak and tenderizes the meat as it cooks.

A Cold Steak Is A Tough Steak

The reason we don’t want to cook chilled steaks is simple. A cold steak takes longer to cook, whether you use a pan, a grill or the broiler. The key to a perfect steak is cooking it at a high temperature for a short amount of time. The colder the steak is when it hits the grill, the longer it will take to cook it. And the more time it spends over the heat, the tougher it gets.

So just remember that a cold steak equals a tough steak. Taking the meat out of the fridge for a few minutes beforehand helps your steak stay tender and juicy.

Some people recommend leaving the meat out at room temperature for as long as an hour. The problem here is that you start to approach the territory of food safety hazard. Also, you would ideally like the interior of the meat to be a bit cool when it hits the grill. This helps you to achieve that perfect medium rare steak. If you leave the steak out for too long, the whole steak gets warm and you give yourself less margin for error. It’s better to undercook a steak than to overcook one.

When Should You Season Steak For Grilling

Timing iseverythingwhen it comes to seasoning a steak. If you wait too long to season your steak before it hits the grill, the salt will draw out the moisture in the meat leaving it dry and tough. To avoid this, the experts at Omaha Steaks suggest letting the seasoning sit on the steaks surface between 30 and 45 minutes at room temperature before putting it on the grill.

Chef Timothy Hollingsworth, Owner of Otium and OXO Chef in Residence, suggests seasoning the steak a second time once its cooked, just before serving it. When you season steak youre seasoning the outside of the steak, and most of the time it doesnt reach the inside. So, finishing salt gives it more texture and an extra burst of flavor, he explains to First for Women.

Finishing salts like Maldon Sea Salt are great for this, because they have coarser flakes and a crunchy texture. A little goes a long way.

    Gas Vs Charcoal Grills

Most people will tell you that charcoal or wood-fire grills are preferable for grilling steaks because they bring that smokey, charred flavor. If you are using a charcoal grill, skip the charcoal briquettes and lighter fluid, as these can add a kerosene flavor to your steak. Instead, opt for wood or natural, hardwood lump charcoal .

But don’t fret if you have a gas grill. The heat is ultimately more important than how you get it. You can still achieve great results with a gas grill. And gas grills allow for greater precision and control over the heat, which is definitely a plus for the amateur and the grill-master alike.
