    How To Season Steak

    We are keeping the seasoning nice and simple by using kosher salt and black pepper. However, if you want to use a BBQ rub, spices, or herbs, feel free.

    Unfortunately, many home cooks are terrified of salt. Maybe youve been subjected to it by your moms lack of exposure to seasoning or your familys medical history of hypertension. However, theres no need to be afraid of salt.

    Trust me I get it. No one wants to eat an overly salty steak or develop hypertension. But when it comes to seasoning steak, you must be generous with the salt.

    The first ingredient you need to season a steak is kosher salt. Do not use super-fine salt to season your steak. Kosher salt has a large enough crystal that permits dry brining and maximum absorption on the steaks outer surface.

    • Dont allow steak to sit out for more than 2 hours.
    • Please dont thaw a steak by letting it sit out on the counter all day either. That can be dangerous.

    Timing iseverythingwhen it comes to seasoning a steak. If you wait too long to season your steak before it hits the grill, the salt will draw out the moisture in the meat leaving it dry and tough. To avoid this, the experts at Omaha Steaks suggest letting the seasoning sit on the steaks surface between 30 and 45 minutes at room temperature before putting it on the grill.

    Chef Timothy Hollingsworth, Owner of Otium and OXO Chef in Residence, suggests seasoning the steak a second time once its cooked, just before serving it. When you season steak youre seasoning the outside of the steak, and most of the time it doesnt reach the inside.   • Allow steaks to sit at room temperature for 20 to 30 minutes. In the meantime, fire up your charcoal or gas grill . Make sure the heat is high before beginning to grill.

  • Place steaks on the grill over the area with the most heat. Allow steaks to sear on that side for 3-5 minutes, or until a brown, crisp crust forms. Flip the steaks over with tongs and do the same to the other side.
