Like most steaks, strip steak is available in different qualities. Premium strip steaks are marked as Premium Angus, USDA Prime, or Wagyu. Any of these labels mark these steaks as high-quality, relating to their marbling, color, texture, and sourcing.

Also, look for dry-aged or wet-aged labels. These refer to the aging process. Wet-aging yields a moister steak. There are so many variables when cooking NY Steak such as the thickness of your steak, the heat of your grill or skillet, your type of skillet, and your desired level of doneness each will all impact the time it takes to cook your steak. You can pick up an inexpensive instant read thermometer at the grocery store or Amazon, or I am obsessed with this digital probe thermometer you will never overcook any protein again! Instant read thermometers can be temperamental, but this digital probe thermometer retrieves temperature precisely to within ±1.8°f and you leave it in the steak while it cooks, whether on the stove, grill or oven.

The best way to ensure the most succulent, juicy NY Strip Steak every time is to check the temperature with an instant read probe style thermometer so you dont overcook it. I personally like my steak cooked medium-rare to medium. These temperatures create the juiciest steak because the moisture inside the steak cant escape at these low of temperatures. I dont recommend cooking your Strip Steak above 150 degrees, as it will become tough, dry and chewy.

Use the below temperature chart to gauge your steaks doneness. To check the temperature, insert the probe of an instant read meat thermometer into thickest part of the steak. You want the temperature to register 5°F lower than the desired doneness temperature because the steaks will continue to cook and rise in temperature while resting.

NOTE: The USDA recommends steaks and roasts be cooked to 145°F and then rested for at least 3 minutes for safety.

How To Grill The PERFECT New York Strip Steak (7:54 Min Exact Time)

Grill a 1-inch strip steak for 9-12 minutes, and a 112-inch strip steak for 12-14 minutes, flipping once before the halfway point, for the perfect medium-rare strip steak! A meat thermometer should read 130 degrees Fahrenheit. Cover your steaks with aluminum foil for 5 minutes before serving to allow them to rest.

New York Strip Steak Recipe Variations

  • Scale the ingredients up or down depending on how many people you plan to serve. You can easily cook twice as many steaks, or cut it back to just 1 pound of meat.
  • Seasoning: we love the simple combination of herbs and spices in our all-purpose house seasoning, but you can substitute with any seasoning blend of your choice. Pick your favorite steak seasoning blend, or just use a good amount of kosher salt, freshly-ground black pepper and garlic powder.
  • Indoor Grilling: if you dont have access to an outdoor grill, you can grill these steaks on the stovetop by using an indoor grill pan. Just make sure that the grill pan is preheated really well over high heat so that you can achieve that great sear on the outside.

How To Grill The Perfect Ny Strip Steak

Serves: 2 | Prep Time: 15 minutes | Cook Time: 5 Minutes

Ingredients2 tbsp compound butter

Step 1: Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.

Step 2: Light grill and set up for high direct heat. Youll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.

Step 3: Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.

*Tip I dont recommend putting pepper on at this point as the extreme heat will burn it, producing a bitter flavor. I also dont recommend using a premixed rub as many of them contain sugar which will also burn. Trust me on this one, just use the salt and let the meat shine through.

Step 4: Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

Step 5: After about five minutes of total cook time, use a reliable quick read meat thermometer to check the internal temperature of the steak. Remove steaks from the grill when the internal temperature reaches 115° F for a medium rare steak.

Grades Of New York Strip Steaks

A Wagyu Strip Steak is gonna be the best quality but its also the most expensive by a lot. Prime is also a fantastic premium quality thats a bit more affordable and available locally.

After that we move dow to Choice and then Select. Both are still good steaks but they will be less tender then Wagyu or Prime New York Strip Steaks.

My best recommendation is buy the best steak you can afford. if its just a Tuesday night select or choice will due just fine but if its a special occasion or you want to impress you should treat yourself to a premium steak every once in a while.

How to Grill New York Strip Steaks  The Mom 100

Sometimes Im in the mood for a really simple steak. Today was a salt and pepper day. I simply sprinkled salt and pepper on both sides of my huge steak.

Use a good quality Kosher salt and a coarse ground pepper. none of that table salt for a beautiful steak like this.

Once my grill was heated to the appropriate temperature I added my steak over direct heat. Make sure you have a probe thermometer on hand to monitor the temperature of the steaks throughout the grilling process.

How To Cook Kansas City Strip On The Grill

Wondering what the best way to cook your Kansas City Strip steak/ New York Strip steak is? We are tried and true to the traditional grilling method! There are two main approaches to grilling Strip steak:

  • Charcoal Grilling

Whether it be Kansas City Strip or New York Strip listed on the label, be sure your steak is completely thawed. We recommend thawing in the refrigerator for at least 24 hours. Once thawed, remove your steak from the refrigerator approximately 3040 minutes before cooking to allow the steak to come to room temperature. Lastly, season your steak as desired. The best KC Strip and NY Strip steaks cooked on the grill are seasoned to taste with Kansas City Steak Original Steak Seasoning.

How Long To Grill Steaks:

How long you should grill a New York Strip Steak depends on a lot of things. The internal temperature of your steak is the most important thing to know to get a perfect steak.

  • The thickness of the steak
  • The cooking temperature
  • The temperature of the steak before you start cooking it.
  • The desired doneness.
  • The length of time will vary, so cooking times are an estimated suggestion. The best way to know when your steak is done is to use a meat thermometer to check the temperature of the meat.

    Check out this chart for cooking the perfect grilled steak medium-rare steak all the way to well done. Medium is my favorite and I dont recommend cooking strip steaks that are thinner than 1 inch because they cook through too quickly.

    There arent many ways that are as simple for grilling steak as this. Its quick and easy, and still gives you a succulent and beautiful cut of beef to enjoy.

    Just like with any prime cut of beef, less really is more when cooking New York strip.

    Well keep seasoning to a minimum, and let the real star of the show do all the work: The meat.

    Well grill it directly over a high heat to lock in all the juices, and prevent it from drying out.

    Theres nothing fancy about grilling this steak, but the great thing is there doesnt need to be.

    How To Get Perfect Crosshatch Grill Marks

    First, make sure you have cleaned the grill well. Place the steaks on the grill on the diagonal, at about a 45 degree angle. Grill for about 4 minutes, pressing on the steak gently with a spatula occasionally. Rotate the steaks a quarter turn so the angle of the steaks on the grill is about 45 degrees in the other direction. You are looking to create a diamond patterns with the grill marks.

    Flip the steaks and grill the steaks the same way, at a 45 degree angle to the grill bars, then after a few minutes turning the steaks another quarter turn so that the grill marks form the same diamond crosshatch pattern on the other side.

    A New York Strip Can Handle Being Grilled In The Medium To Well Done Range Because Of The Fat Content

    When grilling a NY strip steak we will follow all the same basic steps as grilling any higher end cut of beef. While using a slightly lower heat and keeping and eye out for flare ups caused by the melting fat from the edge.

    Step 1: Remove the strip steaks from refrigeration at least 1 hour before grilling and season to taste. For almost any steak we will only season with either salt and pepper or Lawreys seasoning salt. In either case use just a light dusting that covers the entire steak. If you feel like you must cover your meat while out of the fridge, set a paper towel over the top. Over this hour not only will the steak be reaching room temperature it will be breaking down and absorbing your seasoning.

    Step 2: Preheat your grill to a medium high heat, when grilling with charcoal have multiple heat zones available. We use a lower heat then normal here to help slow down the cooking process. If using a gas grill you may preheat to high to get better grill marks, just turn down the heat before the steaks hit your grates.

    Step 3: Grill a NY strip steak directly over the flames for 2 to 4 minutes, depending on thickness. Until they no longer stick the grill grates. If you only used dry seasonings they will release on there own when they are ready. If you are cooking a thin cut strip and it takes more then 3 minutes to release from the grates jump to step 5 and check your temperature.
