File this under Simple Is Best. Though there have been changes and updates here and there, Webers kettle grills have had the same basic design for close to 70 years, and thats because it works. The Premium version of the kettle is a step up from the most basic model and comes with several notable upgrades, like a built-in lid thermometer to monitor temps, a hinged grill grate that makes it easy to add coals to the fire, and an ash catcher to keep sparks off the lawn. Its a Goldilocks situation in terms of size, offering a just-right 363 square inches of cooking area. That is big enough to fit a whole turkey but small enough that the grill is easy to move around. The Weber kettle maintains temperature well, in part thanks to a smooth top damper. Its easy to set up for two-zone cooking as well as for searing on the stainless steel grates. Tips For Grilling The Perfect Steak

  • Season, then chill: I apply the same technique I use for getting crispy chicken and turkey skin to grilling this steak: season, then let it chill in the fridge uncovered for up to 48 hours. This essentially dry brines the steak while also letting it air-dry. This approach allows the surface moisture to evaporate while the seasoning has time to penetrate the meat resulting in deeply flavored steak that sears beautifully and develops a nice crust on the grill.

Upon plugging in, it would take around five to ten minutes to preheat the grill. To our surprise, the Hamilton Beach specimen can sear steak well beyond what we can hope for and expect. Its temperature range is quite diverse, to be honest, going from 200°F to 450°F. Also, theres a light that indicates the temperature youve dialed to has been reached.
