How The Butchers Prepare Ribeye Steak

Cook on high dry heat to medium rare for the most tender, juicy flavor possible. Oh, and once you take your beautiful Butcher Shoppe ribeye off the heat, let it sit for five to ten minutes before servingvery important! In terms of medium, grill, pan fry, and broiling are the most common preparations.

Ribeye likes high heat, so make sure to preheat your grill accordingly. Season both sides of your steak to your liking . Cook each side for about 4-6 minutes. Time to medium rare will depend on the size of your particular cut, so we recommend using a meat thermometer to get it just right. Finally, keep an eye on the grill in case all that juice fatty deliciousness causes flare ups . For extra-marbled ribeye steaks, consider using a cast iron skillet directly on the grill.

Not terribly different from cooking ribeye on the grill. What were looking for here is that beautiful, crusty, sear. Season your ribeye at room temperature with good kosher salt and fresh cracked pepper generously. Set your broiler to high and move the rack to the second or third position for optimal heating. Put your ribeye on the broiler pan and put it into the broiler, cooking each side about five minutes. That should do it!

Supermarket steaks are perfectly fine. Prepared correctly they can be both tender and tasty. Most will have less marbling and will be cut thinner than premium steaks, but all foods have varying levels of quality. That is just a fact of life.

For us, there are two keys. First, all supermarket ribeye steaks are not equal. Choose the thickest one with the best visible marbling. Second, experiment a little to learn the method of preparation that most suits your taste.

This is a skill worth learning as you will cook a lot of ribeyes. Many great videos exist from Alton Brown and Gordon Ramsay to enthusiastic weekend grillers. We really like the reverse sear method with ribeyes. Its definitely worth checking out.

Grilling Ribeye And New York Strip Steaks

Both ribeye and NY strip steaks are excellent when cooked over fire or smoke. The seasoning should be kept simple due to the rich beefy flavor of these steaks. I like grilling high quality beef steaks over charcoal, but you will get great results with gas as well.

Cooking to medium rare at 130°F is really perfect. If you prefer medium well, cook to an internal temperature of 150°F.

There are two methods of grilling premium steaks. One is the two-zone method and the other is the direct grill method. We like the two-zone method for ribeye steaks and direct grilling for NY strip steaks. Well explain both in the recipes.

  • Be sure your steak is completely thawed.
  • Bring the meat to room temperature. Remove your steak from the refrigerator 30-40 minutes before cooking.
  • Resting steak is also important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.
  • We recommend cooking your steak to no more than medium rare.
  • Use a meat thermometer – and remove from heat at 125 degrees.

New York Strip Steak Basics

The New York strip is cut from the same muscle than runs along the rear end of the rib section, commonly referred to as the loin. The meat has a tighter texture and has less fat throughout than the ribeye. There is typically a tough band of fat that rests along one side of the steak.

While this cut is slightly chewier than the ribeye, it is still very tasty. NY strip typically costs between $9.00 and $15.00 per pound for USDA choice. Grass fed and organic portions will run a few dollars more.

The strip is a healthier steak when considering the fat content. That may be the tradeoff for less flavor and moisture. A 3 ounce serving of NY strip has 2.3 grams of saturated fat. There are 160 calories and 25 grams of protein.

Ribeye steaks come from the rib area between the chuck and loin. Rib steaks come from the rib primal area of cattle. A ribeye steak comes from the center best portion of a rib steak.

A good price on average of a ribeye steak will be between $12.99/lb to $14.99/lb. Not too cheap to be good. Always look out for sales and stock your freezer when you find one.

I prefer to buy my meat where there is an actual butcher you could talk with. Sorry Trader Joe’s, you and your pre-packed meat are out. I have never had a steak from Trader Joe’s I thought was any good.

What Are The Primary Grades Of Ribeye Steaks

RIBEYE TASTE TEST. Grass-fed vs Costco: Food while fasting

This can be a little confusing, as there are multiple standards. American, Japanese and Australians all have their own grading standards. There is also an international standard Beef Marbling Score that is used.

For the ribeyes in U.S. supermarkets, they will have one of three USDA grades Prime, Choice or Select. Here is a helpful visual.

Japanese Wagyu cuts grade out much higher than prime. Domestic and Australian Wagyu cross are usually considered Prime plus.
