How to Make a New York Strip Steak

Before starting to cook the steaks, allow them to sit at room temperature for 20-30 minutes. This will lessen the difference in temperature between the hot pan and the steak and allow for juicier, more evenly cooked steaks.

Since the temperature of the steak starting out is higher it means that it will take less time to cook the steak to the internal temperature you desire and that means there is less time for the steak to look moisture during cooking.

This same method applies when cooking steaks on the grill.

How To Grill Strip Steak :

  • Grill for 912 minutes for a 1-inch steak, and 1214 minutes for a 1& frac12 inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
  • Rest your steaks for 5 minutes before serving, covering lightly with foil. The temperature of the meat will continue to rise about 5°F during this time . The final temperature will read 135°F.
  • Resting steak is important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.
  • To check the degree of doneness, use a meat thermometer to measure the internal temperature of your steak.

How Do I Slice New York Strip Steak

There are three rules for slicing NY Strip:

  • Slice the steak after it has rested for 5-10 minutes so it has time to reabsorb the juices that have pushed to the outside of the steak.
  • Use a sharp, smooth knife, not serrated. Sharpen the knife just before slicing to create the cleanest cuts.
  • Slice the steak against the grain into 1/4-inch slices. Steak has muscle fibers that that you can see running through the steak in one direction this is called the grain. It is important to slice the steak across the grain in order to shorten the fibers. This will ensure your steak is melt-in-your mouth tender instead of chewy.

    Temperatures For The Best New York Steak

    The best way to ensure the most succulent, juicy NY Strip Steak every time is to check the temperature with an instant read probe style thermometer so you dont overcook it. I personally like my steak cooked medium-rare to medium. These temperatures create the juiciest steak because the moisture inside the steak cant escape at these low of temperatures. I dont recommend cooking your Strip Steak above 150 degrees, as it will become tough, dry and chewy.

    Use the below temperature chart to gauge your steaks doneness. To check the temperature, insert the probe of an instant read meat thermometer into thickest part of the steak. You want the temperature to register 5°F lower than the desired doneness temperature because the steaks will continue to cook and rise in temperature while resting.

    NOTE: The USDA recommends steaks and roasts be cooked to 145°F and then rested for at least 3 minutes for safety.

    How Do You Tenderize New York Strip Steak With Salt

    Tenderizing is rarely necessary for ribeyes, while it is nearly always necessary for New York strip steaks and sirloins.Using paper towels, blot dry the steak and then liberally sprinkle it with salt until the flesh is barely discernible on both sides.Place on a dish and place in the refrigerator for 1 1/2 hours.

    Our favorite steak to fry in a pan is the New York Strip Steak also know as Strip Steak or Kansas City Strip Steak. A New York Strip Steak is tender but still has some chewy texture, and is boneless with a good amount of marbling without having large pockets of fat.

    Look for a thick New York Strip that is flat and fairly even in size on both ends. It typically costs $12-15 per pound in our area.

    Season the steaks with salt and pepper in an equal layer. Using a large cast-iron pan, cook the ingredients over high heat. Pour the oil into the pan and swirl it around to coat the pan. Cook the steaks for 3 minutes on each side, or until they are browned on both sides.

    Recipe Tips For Perfect Results:

    • Choosing the best steaks: When you buy steaks from major grocery stores and places like Costco, you’ll often get to choose between Choice or Prime Cut. The main difference is that Prime Steaks will have more abundant and consistent marbling, and that yields the most flavor, especially with New York Steaks. If given the choice and you can afford it, you won’t regret going with Prime Cut steaks.
    • Compound butter: Always use a high quality butter. It makes a difference. My favorite is Kerry Gold. You can also vary the types and amount of herbs you use. I chose rosemary and thyme for these NY steaks, but you can also use chives, basil, marjoram, etc.
    • Cookware: You need a pan large enough that the steaks aren’t crowded. You can also make this recipe using two separate pans. I used my favorite 13-inch cast iron skillet, but oven-safe stainless steel cookware also works beautifully.

    Cooking a Kansas City Strip Steak using sous vide will eliminate any fear of over or undercooking and allow each steak to be cooked to perfection while maintaining natural flavors and providing a moist and tender eating experience.

    Note: Steaks cooked under 130°F should not be cooked longer than 2½ hours at a time due to food safety concerns.

    Here are the steps to follow when using the sous vide method:

    Prepare It

    • Preheat your water bath: Fill your sous vide container up with warm water and set the sous vide device to the appropriate temperature for the desired doneness. The sous vide device should be set as follows:
      • Medium-Well: 145°F

  • Preheat your grill. Preheat your preferred grill to High heat, aiming for around 900 degrees F on the grates.
  • Prep the butter. Combine all ingredients for the compound butter in a small bowl and spoon butter directly on the serving platter underneath where the steak will be placed.
  • Grill those strip steaks! Place the steaks directly on the grill grates on a diagonal. For med rare: cook 2-3 minutes then rotate 45 degrees and grill another 2-3 minutes. Flip the steaks and repeat on the other side. Grill for more or less time depending on your preferred doneness.
  • Remove from heat and rest. Remove the steaks from the grill and place them on the buttered serving platter. Allow them to rest for 8-10 minutes.
