First time eating at Capital Grille. I went with co-workers for a dinner meeting. We were appropriately seated in the “Board Room”. The room was nicely appointed and dimly lit making for nice ambience. Our waiter was top notch seeing to our every need and keep our premier cocktails and wine glasses full. For dinner, I started with a Caesar salad, not a bad deal for $10. Followed by my entree, I went with a chef’s suggestions the Bonein Kona Crusted DryAgedNYStrip, not a bad deal for $47. For side dishes we went family style and ordered a mixture including Au Gratin potatoes, Roadted wild mushrooms, Roasted Brussel sprouts, Grilled asparagus and creamed spinach. All and all it was an excellent meal and great first impression. Restaurant was warm, welcoming and richly appointed. Food and service were both great, I’m a fan!

Rightfully taking the number one spot on my list is a place called Cowford Chophouse. What used to be a bank built in 1902 now houses some of the finest cuts of steak money can buy.
Very few places around serve actual A-5 wagyu beef. This delicacy is unlike any other kind of meat in the world and it simply melts in your mouth like butter. They also have countless other cuts to choose from like my personal favorite, the mighty porterhouse.
Check out Cowford Chophouse on the corner of East Bay Street and Ocean street, right inside the same historic building as the 1904 Music Hall and the Florida Theatre.
Terra Gaucha Brazilian Steakhouse is a name that you may recognize from some of my previous lists, so you already know its a great place to eat, but they do steak on another level. Everything is served rodizio style here at Terra Gaucha alongside an amazing salad bar.
All you do is pay a flat fee, sit back, and they will serve you as much steak as you can possibly eat, carved from a massive skewer, hot off the grill, right at your tableside.
Look for Terra Gaucha off of Southside Boulevard in the same plaza as the Cinemark Tinseltown and XD movie theater. Its perfect for dinner and a movie in Jacksonville.

When you walk into Peter Augustuss butchery in New Farm, a craft butcher in Brisbane, Australia, youll see an impressive dry aging cabinet that looks like it belongs in a science lab. This is the original dry aging process, how steaks were stored, says head butcher Aaron.
In fact, dry aging is a process that goes back thousands of years. Before the invention of refrigeration, dry aging was one of the only methods of keeping meat fresh, other than smoking, brining or pickling. It is a time honoured technique that both enhances the flavour and tenderness of meat.
In essence, dry aging is when you take a piece of meat and put it into a controlled open-air environment to go through a flavour transformation. By exposing the meat to air, moisture is pulled out and the natural enzymes in the beef break the muscles down slowly over time, making it more tender. When the surface of the beef dries, it creates a crust over the muscle, but whats inside stays moist and red.
The meat is also subjected to other environmental impacts during the aging process various molds and yeasts that land on it all of which play a role in the final flavour profile of the beef. The longer you age it, the stronger it gets.
We normally dry age our meat for 40 to 50 days. Two months is the maximum well go, says Aaron. After that the flavour can become much too intense.
