How to Marinate a Steak

At the most basic level, a good marinade should contain fat, acid, salt and sugar. The fat helps to add moisture and juiciness to the steak. Since the cuts that benefit the most from a marinade tend to be leaner, its easy to understand why adding some fat to the meat can make a difference. The most popular choice tends to be high quality olive oil. However, you could use any oil that you enjoy or have on hand. Its important to keep in mind that not all oils are healthy, and some have better flavor than others. You can even use fats like coconut milk or yogurt. When using any coconut product, remember that some of the flavor will be left behind on the meat.

How To Grill Sirloin Steaks

Once the steaks are marinated, I highly recommend cooking them on a grill for the best flavor. To grill the perfect sirloin steak, follow these simple steps.

  • Heat a grill over medium high heat, between 350-400 degrees Fahrenheit. Wait until the grill is hot before adding the steaks, to give them perfect sear marks.
  • Remove the steaks from the marinade and discard the marinade. Add the steaks to a hot grill.
  • For a perfect medium rare steak, grill a 1 inch thick steak for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.
  • Quick tip! A steak will rise approximately 5 degrees after you remove it from the grill and let it rest.
  • Remove the steak from the grill and let it rest for 5-10 minutes. This ensures that the juices redistribute throughout the steak, leaving you with the most juicy steak!
  • Sprinkle coarse kosher salt or sea salt flakes over the steak and optionally garnish with fresh chopped parsley before serving.

    • Tomatoes and green beans: This is my favorite combo. Just place in foil, drizzle with olive oil and salt and pepper. Then fold up sides and cook for about 15 minutes.
    • Corn: Grill your corn by wrapping in foil and cook for 10 minutes, turning occasionally. To elevate your corn, try making Mexican street corn or easy corn salad.
    • Asparagus: Coat asparagus with oil and salt and pepper to taste. Grill on high for 2-3 minutes. I like my asparagus a little crunchy, but grill for 1-2 more minutes if you prefer softer.
    • Zucchini: I like to grill my zucchini in spears. Brush with olive oil and salt and pepper then grill until beginning to char, about 3-4 minutes each side.
    • Baked potato: Poke holes into the potato with a fork, then brush olive oil on top. Sprinkle with salt and pepper. Wrap in foil and grill for about an hour, turning the potatoes constantly.

    What Cut Of Steak Is Best For Marinating

    Though this marinade will work on any cut of steak, its true that some are better than others, depending on your personal tastes. I tend to go for a leaner cut of beef, like t-bone, top loin, tenderloin, or ribeye. But, that doesnt mean I dont purchase other cuts of steak.

    Chuck steaks, hanger, skirt, and flank will taste great after 20 minutes in the perfect steak marinade but you can also lean toward leaving it in the bag longer to really seal in that flavor and make your steak as tender as you prefer, up to 24 hours.

We find that steaks from the leg and shoulder areas tend to be ideal for marinating because these are the muscles that work the hardest on a cow.     Everyone loves their steak done to different degrees and using a thermometer is the way to go to make sure you cook it just right. Remember too, when your steak is taken off the heat it will continue to cook for a minute or two, raising the temperature about 2-4 degrees more. I often remove my meat right before it reaches that perfect temp.

    How To Tell When A Steak Is Done

    It comes down to personal preference to know when a steak is done. But remember there is a recommend safe temperature from the USDA of 145 degrees to kill off any harmful bacteria.

    To tell when its done to your liking always use an instant read thermometer and insert the thermometer through the side of the steak horizontally and go to the center of thickest portion. Keep in mind color isnt always the best way to judge doneness as some steaks are just naturally lighter than others to begin with, and you dont want to cut into a steak during cooking or youll lose some of the juices.

    Here is a list of steak doneness by temperature to refer too:

    Rare: 125 130

    Medium rare: 130 135 degrees

    Medium: 135 145 degrees

    Medium well: 145 150 degrees

    Well: 150 160 degrees

    What’s In The Marinade

    The flank steak marinade in this recipe calls for a lovely blend of soy sauce, honey, and garlic. It works wonderfully for this cut of meat.

    • 1/3cupextra virgin olive oil

    • 2clovesgarlic, minced

    • 2tablespoonsred wine vinegar

    • 1/3cupsoy sauce

    • 1/2teaspoonfreshly ground black pepper

  • Marinate the steak:

    Combine the marinade ingredients in a large non-reactive bowl.

    Place steak in the bowl and turn so that it is completely coated with the marinade.

    Chill and marinate for at least 2 hours and up to overnight.

  • Prepare your grill for high, direct heat with one part of the grill for lower, indirect heat:

    The grill is hot enough when you hold your hand about an inch over the hot side and you can only hold it there for about a second.

  • Rest the steak:

    How To Marinate Steak

    I always marinate my steak in ziplock bags which I acknowledge is not environmentally friendly, but it is the most effective way to marinade steak because it keeps the steak evenly coated with a relatively small amount of marinade.

    If you want to use a container instead, use a glass or other non reactive container and I would recommend doubling the marinade.

    How long to marinate steak?

    12 to 24 hours is best. You can also freeze it immediately then it will marinate as it thaws!

    Pan fry or grill it, and marvel at how JUICY and FLAVOURFUL your steak is!!

    The steak marinade injects enough flavour into the steak such that you dont need to serve this with a sauce. But I couldnt resist adding a smidge of garlic butter on top!

    You could also serve it with a Creamy Mushroom Sauce or Creamy Peppercorn Sauce, or even gravy.

    • Whisk marinade ingredients: in a mixing bowl whisk together balsamic vinegar, Worcestershire sauce, soy sauce, olive oil, dijon mustard, honey, garlic, pepper and rosemary until well blended.

    To Make The Steaks In A Skillet

  • Cook it: Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium-well.
  • Top it: Top with butter and garnish with fresh parsley if desired.

    Before grilling, set the steak out for 30 minutes so it can come to room temperature.

    Prepare your grill, I highly suggest a charcoal grill. But, alternatively, you can use a gas grill or grill pan on the stove.

    Sear the steak on both sides until cooked to your liking. About 5 minutes on each side. For medium, pull steak off the grill at an internal temperature of 140°F degrees.

    Remove from heat, add butter, cover with foil and let rest for 10 minutes. Serve with a garnish of parsley, optional.

    • For this marinade, the steaks need a good three hours to soak in all that goodness. So make sure to get these babies prepped well ahead of time.
    • Let the steaks come to room temperature before grilling. Let them sit out for 30 minutes before cooking, this will make sure an even cook on the inside.
    • You do not want to throw cold steaks on a hot grill, they just flat-out wont cook evenly. Plus it will save you a few minutes as well.
    • Make sure the grill is SUPER hot before placing the steaks on. You want to get a nice sear like the photos here, thats the flavor bomb!
    • You need to let the steaks rest for at least 10 minutes before cutting into them. Dont worry, add a pad of butter on each steak , cover with foil and let it rest, it wont get cold!

    Best Steak Marinade Ever

    Besides being the best marinade for all types of beef steaks, the marinade is also awesome with the following:

    Anyhow, this is the way I like my steak done medium, but well done on the edges .

    I never bother to make large batches, as this Marinade takes only minutes to make, and it contains all standard, everyday pantry ingredients.

    This way I can also make a single batch, double or even more, depending on how much meat we want to cook on a specific day.

    I always have to share the recipe with all our family and friends when we have them over for a barbecue or dinner ! Many people refer to this recipe as the best steak marinade for bbq, but it is so much more.

    Using this Marinade turns out the meat , tender and juicy, each and every time.

    Update:

    Over time we have used the Marinade not only with most red meats, but it is also very good with chicken and pork.

    My daughter also marinated a pork roast and they loved it !

    She did however, marinated the roast over night as she had a busy day ahead.

    Every now and then she turned over the marinade container. And then she cooked the roast, using her rotisserie gadget in her oven. Below the roast she had a dish with plain, lightly salted potatoes into which the juices from the roast dripped.

    Hearing about how fantastic her pork roast turned out, I just had to try it, also with the potatoes in a separate dish below the roast. Absolutely amazing !
