How Did The Smoked Ribeye Turn Out

I overshot the internal temperature a little so the steak was slightly overcooked for my preference. This is one of the tricky parts about pulling off the perfect reverse sear as it is easy to overcook when using high heat.

That being said, the steak was tender, had a great crust and a wonderful smoky flavor. It is hard to beat the taste of a juicy ribeye and I really enjoyed wolfing this one down.

I was surprised that the coffee rub, which tastes extremely balanced coming out of the jar, made the steak sweeter than I was expecting. When I repeat this recipe I will probably season the steak with salt and pepper first and then come back with the coffee rub as a secondary flavor level.

Preparing Filet Mignon For The Traeger

We need to start this delicious steak dinner by preparing the meat with a dry brine the day before. Dry brining is salting the meat a day in advance. We do this for three reasons:

  • the salt is able to penetrate deep below the surface of the meat
  • it controls the moisture content and movement throughout the filet
  • drying the outside of the steak makes for a great crust without overcooking the whole steak

Now, you have options when it comes to how to season your filets. You can use salt all by itself. Just season the surface of the steak on every side and place on a sheet pan lined with a wire rack. Leave it in the refrigerator uncovered overnight, or any time from 4-24 hours. Even just 4 hours will make a difference on the seasoning and cook time of the filet.

Another option is to start with a store bought spice rub meant for steak. Anything from montreal steak seasoning to a Trager dry rub is good.

For me, I really enjoy the natural flavors of a good steak so I keep our seasoning fairly simple. I use koshersalt, black pepper, granulated garlic, and paprika. It is so simple, but it is such a good combination for achieving the optimal flavor of the filet.

    You must rely on a really good meat thermometer, this is a MUST! An instant-read digital thermometer is the best and easiest to use. This is the safest way to ensure your internal temperatures are accurate and the meat is safely done for consumption.

    Remember that your meat will continue to cook after you remove it from the grill, so allow for a 3-5 degree raise in temperature while resting. Check, check, check that temp!

    Speaking of resting, always allow your steak to rest for 5 minutes before serving. This allows the juices to tame down and remain in the meat when you start cutting into it.

    The Perfect Traeger Steak
