Selecting The Right Cut

First, a definition. Steaks are basically any piece of meat that falls under the category of “fast-cooking” cutscuts that are low enough in connective tissue that they don’t require the long cooking times that “slow-cooking” cuts require. The difference between a steak and roast essentially comes down to size. Any good roast can be cut into individual steaks .

Cooking Times And First Position

Have everything at hand before you put the steaks on so that the grill has your full attention. Keep the grill closed as much as possible to hold in the heat. Before putting on the steaks, take a good look at them. Decide which side you are going to call the top. You will cook the steaks in four positions, timing each change in position.

Medium Rare:

  • 1-inch thick steak: 1 minute per position
  • Between 1 and 2-inch steak: 1 1/2 minutes per position
  • Less than 3/4-inch steak: 45 seconds per position

Medium Well or Well Done :

  • 1-inch thick steak: 2 minutes per position
  • Between 1 and 2-inch steak: 3 minutes per position
  • Less than 3/4-inch steak: 1 minute per position

For the best results, its important to know your grill. Some grills comfortably hit temperatures over 700 F, while others have trouble mustering 500 F. If your grill runs at a lower temperature, you might need to increase these times by as much as double.

To start, open the grill and position the steaks on the grate farthest from youmeaning the top of the steak is to the back of the grill or at the 12 oclock position.

With the steaks on the grill, close the lid and start counting the time as indicated above.

The Two Best Ways To Grill Steak

The ideal grilled steak has an appetizing browned exterior with tender, still-pink meat inside. The tricky part is making sure that you don’t burn the surface of the meat before the inside gets warm enough to eat, or cooking the inside too much before getting those nice surface grill marks.

There are two ways to go about it.

  • Direct grilling: Cooking the steak over high heat, and flipping occasionally until the meat reaches the desired internal temperature .

  • Reverse searing: Cooking the steak slowly at a low temperature with indirect heat to get the meat 10 to 15 degrees from the final desired internal temperature, then finishing by cooking over high heat to get browning and grill marks.

    People will tell you theres a bit of an art to cooking the perfect steak. But we think its pretty simple just follow these important steps below, for the perfect steak no matter the occasion or the dish.

  • Take the meat out of the fridge 30-40 minutes before cooking. This allows it to come to room temperature and ensures even cooking.
  • Salt your steaks. We recommend using kosher salt since its larger, flaky crystals make it easy to pinch and control how much you use. For the most flavorful and tender results, salt your steaks at least 40 minutes before or even the night before you plan to cook them. This takes a little planning, but dry brining your steaks, will not only season the beef, but help them to retain moisture for a juicy, tender bite.
  • Dry the steaks and leave the fat on. Pat the steaks dry with paper towels for that perfect outer crust. If you want to cut the fat off the steak, do it once its cooked as fat adds flavour and moisture to the meat while its cooking.
  • Dont add oil to the pan. Instead, brush the steaks with oil and season all over with a little salt and pepper.
  • The timing. As a rule of thumb cook 2 minutes each side for rare, 3-4 mins each side for medium-rare and 4-6 mins each side for medium. For well done, cook for 2-4 minutes each side, then turn the heat down and cook for another 4-6 minutes.

    Move To Indirect Heat Area Of Grill

    Once you have properly seared the steak, if it is not finished, move it to the side of the grill where it not directly over the coals. Close the lid and continue cooking the steak until you achieve the temperature you desire. Keep in mind that you do not need to flip the steak during this stage of indirect grilling.

    Setting Up The Gas Grill:

    When using a gas grill it is important to make sure that you preheat it, and clean and season the grill before placing your steak on the grill to cook. Once it is hot, use a grill brush and clean the grates, then use either some beef fat, or a cloth saturated with oil and brush the grill surface before placing your steak on the grill. This helps with getting great grill marks and helps the meat release from the grill.

    Ideally you want your grill near 400F when you place the steak on the grill and once you get the steak grill marked and flipped to the other side, you want to shut off the center burners and turn the outside burners to low. This will help to keep your steak moist and tender.

    The thicker the steak, the longer it takes to cook. So if you are cooking a standard steak cut, which is between 1 and 1.5 inches thick, cooking time is about 20 minutes total.

    While your grill is heating up, take your steak which should be at room temperature, season it on both sides, and take it to the grill. Once the grill is ready, time to start grilling your steak.

    How Do You Grill A Frozen Steak

    Never grill a frozen steak. Frozen steak must be defrosted before cooking.

    Grilling a steak while fully frozen is a health risk because bacteria can form while the steak lingers at low temperatures. Also, the surface of the steak is likely to burn while the inside is raw.

    To defrost frozen steak, put it in a dish in the refrigerator. Most cuts will fully defrost overnight.

    If you need to defrost frozen steak in a hurry, put it under cold running water.

    How To Cook Steak Well

    Well-done steak has gotten a bad rap, with some chefs even refusing to cook the meat to this doneness. It may seem well-done would be the easiest to cook, but in actuality, it is the hardest as cooking until the meat is no longer pink and not drying it out is a challenge. The secret is to do it low and slowthe only way to prevent burning while fully cooking it through the middle.

    This steak should not be burnt on the outside. While there is not the faintest hint of pink in the middle, it should be browned through, not burnt through. This steak will feel solid to the touch.

    For a 1-inch steak, grill over medium heat between 10 and 12 minutes per side. It should reach an internal temperature of 170 F or higher.

    The Best Steaks For Grilling

    There is no one “best” cut for grilled steak — it’s all about personal preference. Good cuts for grilling range from leaner, more tender cuts, to cuts that pack fat and flavor.

    Filet mignon or tenderloin: The most tender cut of steak, it’s ideal for those who prefer their meat rare. A smaller cut so it cooks fast.

    Flank steak: A thin, inexpensive cut. Flank steak doesn’t have as much fat or natural flavor as some of the other cuts, so it should be marinated before cooking to add flavor and tenderize the meat. Because it is thin, it cooks fast over high heat. Learn more in our Flank Steak Cooking Guide.

    Hanger steak: A flat steak, similar to flank steak, but usually with more fat content throughout. Hanger can be marinated before cooking but will also be tasty with a simple salt and pepper seasoning. Cooks fast over direct heat and should not be overcooked.

    New York strip: A leaner cut that is relatively thick and firm like ribeye, but with less fat. Does not need to be marinated. A good candidate for reverse searing.

    Porterhouse: A massive cut that’s actually two steaks in one. A filet mignon and a New York strip. The Porterhouse tends to contain more of the tenderloin than its cousin cut, the T-bone. Porterhouse is usually cut quite thick, so reverse-searing can help you avoid an overcooked exterior and raw middle. There’s no need to marinate before cooking. Salt and pepper is all you need.

    How To Grill Ribeye On A Gas Grill

  • Generously season both sides of ribeye steaks with steak seasoning. Let ribeye sit in the fridge at least 1 hour, up to overnight for seasonings to soak in.
  • Remove from the fridge and bring to room temperature, 30-45 minutes, before cooking.
  • Preheat gas grill to medium-high heat, about 500° F. Place steaks on the grill, close lid and reduce heat to medium. Grill 4-6 minutes until bottoms are seared.
  • Rotate and cook about 5 minutes more, or until internal temp of 135° F for rare to medium rare.

    How To Check Steak Is Cooked

    Use your fingers to prod the cooked steak when rare it will feel soft, medium-rare will be lightly bouncy, and well-done will be much firmer.     To check the internal temp of steak use an instant-read thermometer. Insert it into the thickest part of the steak. Here are the temperature ranges to look for :

    • Medium-Well : 145 155 degrees
    • Well-Done : 160 degrees

  • Prepare your hot coals for the BBQ.
  • Push the coals to the back to create a bit of space for your potatoes.
  • Place the potatoes onto a tray and coat in the oil and salt.

  • Let these cook for around 15 minutes, making sure to turn them regularly. You can test if they are cooked by piercing them with a skewer to make sure they are soft. When they are cooked, remove them from the BBQ. They will have a little soot on them, but thats ok.
  • Leave the potatoes to stand for around 8 minutes, this will allow the inside of the potato to finish cooking/steaming in the middle.

    Dont Use Lighter Fluid Or Charcoal Briquettes If You Can Avoid It

    According to Prentiss, Always avoid lighter fluid if possible, and while convenient, charcoal briquettes can add an unpleasant kerosene flavor to grilled meats and should be avoided. If a wood/natural lump charcoal fire is unavailable or too inconvenient, propane grills will ultimately yield a better steak than charcoal briquettes and lighter fluid.”

    The best way to go, however, is hardwood or hardwood lump charcoal. “Natural solid fuels add the most flavor to steaks, complementing their natural flavors instead of overpowering them,” says Prentiss. “At P+P we seasoned oak logs and a hardwood lump charcoal made from mesquite. This yields a consistent fire with minimal smoke that burns around 800 degrees Fahrenheit.”

    How long steaks take to cook depends on many factors like the cut, thickness, grill temperature and preferred doneness. The best way to see whether or not your steaks are ready is to check the temperature with an instant-read thermometer.     Dont Forget To Let The Steak Rest

    Cooking the steak to ten degrees below your desired temp and then resting it allows for the collagen in the meat to thicken the juices as it cools slightly, says Prentiss. This creates a way juicier steak than just cooking straight to temp.

    Sharp agrees. Let it rest. This is crucial, he says. Just because the steak is out of the pan doesnt mean it stopped cooking. Keep it in a warm placeyou dont want a cold steakand rest it for about as long as you cooked it.

    Chef Carlos recommends allowing the steak to rest for half the cooking time before servingso if your steak takes 10 minutes to cook, youd let it rest for five.

    If youre not able to keep the steak warm while it rests, or you want to eat it quite hot, Prentiss recommends returning the steak to the grill after its rested and bringing it up to the internal temperature of your preference before eating.
