How To Cook Skirt Steak Or Flank Steak
Both skirt steak and flank steak beg for high heat and searing for a short amount of time. Leaving the inside a bit rare will help ensure tenderness and flavor. Thats why broiling or grilling are such great techniques to use for these cuts. Remember skirt steak is thinner than flank steak and will take significantly less time to cook.

Asian Marinated Skirt Steak
While I love traditional steak house cuts of beefNew York Strip, Filet, Ribeye, simply treated and perfectly cooked, I also love making lesser cuts of meat, bathed in sweet and tangy marinades, that are packed with all kinds of additional flavors. Thats exactly the type of recipe, I show you here with an Asian Marinated Skirt Steak. Skirt, is cut of steak, not nearly as tender as some of the aforementioned cuts, but when treated and cut right, it has a great texture, and frankly the natural beef flavor is even better than some of the more traditional cuts. It also makes a great steak for marinating. Here, I use some Asian themed ingredients, like soy sauce and Hoisin to give the steak another layer of flavor, and when cooked, a really nice charred crust. Its one of my all time favorite steak recipes. Hope you enjoy it as much as I do!

- Whole chiles produce better flavor than powdered chiles.
- A variety of umami-enhancing aromatics in the marinade improves the beef flavor.
- Grilling skirt steak over very high heat, and pulling it early, ensures evenly cooked meat with robust char.
We can all agree on a few things here: Great carne asada should taste, first, of the beef. It should be buttery, rich, and juicy, with a nice charred, smoky flavor from the grill or broiler. It should also be tender enough that you can eat it in a taco or burrito, but substantial enough to be served as a steak and eaten with a knife and fork. Finally, the marinade should have a good balance of flavors, with no single ingredient overwhelming any other. Here’s how to make the carne asada of my dreams.
To say “I’m going to develop a recipe for carne asada” is akin to saying “Bartender, get me a beer, please.” The immediate follow-up is likely to be “I’m afraid you’re going to have to be a bit more specific than that.”

I’d had many versions of carne asada in my short life , but when it came to filling in the grilled beefshaped lines etched in my head, El Torito held the largest crayon by far. Their version was a slab of skirt steak marinated in a pasilla chilebased sauce, grilled hard over coals until nearly burnt and crisp around the edges, and served slathered with a salsa that combined fresh citrus and more of that pasilla.

Whats The Difference Between Skirt Steak And Flank Steak
Both skirt steak and flank steak are lean cuts of beef that are often grilled, pan-seared on the stovetop, or stir-fried.
Flank steak comes from the flank primal, the abdominal area right next to the short plate, where the skirt is located. It has a less intense beefy flavor compared to the skirt, and it is noticeably thicker.
A good visual cue is that skirt steak has its grain running across the width of the meat, whereas flank runs lengthwise. With both steaks, you want to cut them across the grain to end up with a tender slice.

What is the best skirt steak?
There are actually two typesthe outside and the inside skirt steak. This is important to know because the texture and tenderness will differ, especially since this cut tends to be quite lean, with some tough muscle fibers. The outside skirt is more desirable, because its tender and less coarse.
Why Marinades Work Magic
- Acidor Enzyme: All great marinades will contain either an acid or an enzyme. In the skirt steak marinade, the lemon juice is our acid. It will weaken the tough fibers of the meat and enhance flavor. Creating tender flavorful meat. Do not over marinate, however, If meat sits in a marinade too long the meat will become mushy, dry, and actually tough.
- Salts: Salt plays an essential role in getting the flavors to penetrate beneath the surface of the meat. Salt is not only add on its own, but the salt found in the soy sauce and Worcestershire sauce helps too. First, the salt draws out the moisture from the meat, then as the water is reabsorbed into the meat flavors from the spices and garlic are carried with it. This allows the flavor to get deep inside the meat while helping to break down muscle fibers helping it to tenderize.
- Oil: Oil is important because it helps carry fat-soluble flavors from the spices and pepper, past the surface of the meat, and into it.
- Put it all together: When you combine acid, salts, oils with seasonings, herbs, and even sugars you allow so much more to happen to meat than just a simple brine ever could. You can tenderize tough meat, add flavor deep within and create moist cuts of meat from normally dry ones. Yup, itâs like magic. And this skirt steak marinade has all those ingredients!

What Air Fryer Is Best
I used the Instant Pot Air Fryer Lid for this recipe, which I like when cooking for 2-3 people because it’s compact and doesn’t require an extra appliance. The only downside is you may need to cut the steak in half and cook in two batches as it needs to lay flat.
If you have a larger family, I recommend getting an air fryer basket that would fit your needs, like the Ninja or Philips brand.
It’s good to note that different air fryers cook at a range of temperatures. Mine is very small so it cooks faster than some of the larger 5 quart+ ones, like Ninja.
What Is Skirt Steak
Skirt steak is a thin, long cut with visible grain. It comes from the short plate or diaphragm area of the steer, just under the rib section.
There are actually two typesthe outside and the inside skirt steak. This is important to know because the texture and tenderness will differ, especially since this cut tends to be quite lean, with some tough muscle fibers.
- The outside skirt is more desirable, because its tender and less coarse. It will be about three to four inches wide, about 1/2- to 1-inch thick, and noticeably longer compared to the inside cut.
- The inside skirt is wider, about five to seven inches, half as thick, and yields a more chewy bite. If only the inside skirt is available, tenderize it with a mallet to 1/4-inch thickness, plus a marinade.
Sometimes its hard to tell if the steak youre looking at is an inside or outside cut, especially since the beef is folded when packed. If the butcher is available, I recommend asking about the location of the cut.

Recently, I found myself driving from the Jersey Shore to a backyard poolside cookout in South Jersey. I needed to pick up quality steaks for my friends grill I was doing the buying, and he was doing the cooking and as I was left with few options , I diverted to the Whole Foods in Marlton. A Whole Foods steak must be a good steak, I assumed.
There, past shelves filled with sacks of quinoa and tins of sustainable tuna, I found the meat department and its piles of bloody Whole Foods steaks and roasts, manned by facial-haired 20-and-30-somethings that looked like they all drank Pabst and played in some band together after hours.
With four adults and four children to feed, I ordered two bone-in rib-eyes and two t-bones for the grownups, and eight ultra-thin-cut bone-in pork chops for the kids.
I didnt pay much attention to the prices until I arrived in front of the cashier, who announced how much money I owed her: a whopping $96 for the four steaks and eight tiny chops.
Now, I dont mind spending big bucks on great food, but in this case, the food turned out not to be great by any stretch of the imagination.
I realize that a lot of what youre paying for at Whole Foods is the ethical treatment of the animal that you wind up shoving down your throat, chased with a big old swig of Bordeaux, but the food should also taste expensive, right?
