Best Cheese For Cheesesteak

The Best Cheesesteak In Philadelphia | Best Of The Best

I highly recommend trying white American cheese on your cheesesteak sandwich. It adds a creamy, melty, and salty quality to the cheesesteak that really completes the sandwich.

Other popular choices include smoked provolone slices or cheese whiz. I suggest using your favorite – it’s your sandwich after all!

If youve been to the city of Philadelphia but havent tried the citys signature Philly cheesesteak, youre missing out, to say the very least. Though there are quite a few differing opinions as to what constitutes the best Philly cheesesteak in Philadelphia, there are a few establishments that have withstood the test of time and produce a reliably delicious sandwich.

The Philly cheesesteak is the most iconic sandwich in Philadelphia. However, before we get to discussing what we think is the best Philly cheesesteak in Philadelphia, we should at least establish what makes up the beloved sandwich!

At its most basic, the sandwich comprises thinly sliced steak , gooey melted cheese, all sandwiched together on a long hoagie roll. The cheese is typically American, though Provolone or melted cheese whiz are pretty standard as well. The sandwich is then either served with or without onions.

There are plenty of variations of the famed Philly cheesesteak around the city all the more reason to stay for a few days and sample as many of them as you can stomach! Of course, when youre looking for a cozy place to call home at the end of the day and potentially to sleep off the food coma you just put yourself in theres nothing better than one of our Philadelphia Bed and Breakfasts.

Double Wrap If Feeding A Crowd

Alas, the cheese does not remain melty for very long when exposed to the elements. A great way to maintain soft bread, hot steak and melty cheese is to wrap your sandwiches. Use a layer of greaseproof or parchment paper, then a layer of foil and wrap em up tight. The greaseproof paper layer helps to keep the bread from getting soggy-fied.

Prepare Your Beef In Advance

Its imperative that your beef be sliced thinly. Particularly if you are using a cheaper cut. Most of us dont have a deli slicer on hand, but theres an easy trick that can help. Place your beef steaks in the freezer for an hour prior to slicing. This will firm them up dramatically without freezing them completely, making it easier to shave off super thin slices.

How To Make Philly Cheesesteaks Like A Pro

Authentic Philly Cheesesteak

Now, lets get to the cooking. Here are a few secrets of the trade the team at US Wellness Meats have learned over the years.

Put your meat in the freezer before slicing.

Cutting the right-sized slices is critical for getting the right texture, and making sure your steak is cold when cutting will make it much easier.

Slice against the grain.

Slicing against the grain makes your meat much more tender, which is the key to a good cheesesteak.

Look for the grains that run in the meat and cut across them. Those grains are protein strands, and cutting them has the effect of cutting a taut rubber band with scissors the protein strands relax and the meat ends up being a lot softer!

Wait to salt until the very end.

As we mentioned, any advice around cheesesteaks is controversial, but you may consider waiting to salt your meat until after its cooked.

The idea is that due to osmosis, salting in advance draws liquid out of the meat this is ideal for traditional steaks because a dryer steak makes it easier to brown and reap the benefits of the maillard reaction, but with cheesesteaks, the idea is to retain as much liquid as possible.

Use Amoroso rolls.

While any french rolls or hoagies that are thick enough to capture the juices will work, if you want to go all the way with your Philly cheesesteaks, go ahead and order some Amoroso rolls online and get them delivered to your house. Nothing will really replace them.

Use the same cast iron skillet or griddle each time.

Sloppy Joes Vs Cheesesteaks

This recipe is for cheesesteak style sloppy joes – the look of a sloppy joe, but with flavors similar to a cheesesteak. Otherwise, the two sandwiches are very different!

If you’ve never had one before, a sloppy joe is a “sandwich consisting of ground beef or pork, onions, tomato sauce or ketchup, Worcestershire sauce, and other seasonings, served on a hamburger bun.”

A traditional cheesesteak consists of thin sliced steak, sometimes onions, with melted cheese, on a hoagie roll. In parts of the world other than Philadelphia, bell peppers and mushrooms are also common ingredients.

What’s The Best Meat To Use In A Philly Cheese Steak

Yelp/ Jennifer C.

The best cheesesteak shops in Philly all use the same cut of beef.

A Philly cheesesteak is a nearly perfect sandwich. It can be as simple as thin-sliced steak topped with cheese, or it can be kicked up with the addition of onions, peppers, mushrooms, and any other topping you can think of. The type of cheese used is also up to you most shops in Philadelphia will let you cheese between American, Cheez Whiz, provolone, and maybe mozzarella, but you can use whatever cheese you like and the results will still be great. The bread should be a large and fresh roll, and the steak, if you can find it, should be thinly sliced ribeye.

Cheesesteak meat is one department where you really shouldnt be cheap. The fat content of the ribeye, plus the fact that its very thinly sliced, makes it ideal in a cheesesteak for several reasons. One: Its an incredibly flavorful cut, so youll definitely taste the beef. Two: Its very tender, and wont toughen up and be impossible to bite once cooked. Three: The fat will melt into the meat as its cooking, basting it and boosting the flavor and tenderness factor.

What Type Of Cheese Is Best For Philly Cheesesteaks

Philadelphians have strong opinions about whether cheesesteaks should be made with Cheez Whiz, American, or provolone cheese. We found that the combination of thinly sliced American and provolone cheeses makes for the best flavor and meltability.

No matter what variety you choose, youll want to simply embrace the mess it creates, and heres why: After the cheese is melted and the steak is sizzling and caramelized in the skillet, youll use a spatula to transfer the filling into the sliced rolls. Its nearly impossible to maintain the neat layers of cheese, peppers, onions, and steak and move the mound in one clean scoop. Instead, allow the filling to mix with the melted cheese as you stuff it into the bread, which, honestly, makes it all the more delicious.

Norine uses cube steak, the first time I made this, I wasnt able to find cube steak so I used round steak and sliced it as thin as possible. However Ive since discovered shaved beef from Trader Joes! Its paper thin, tender and delicious.

PRO TIP |If using cube or round steak, roll and wrap in plastic wrap and freeze for 20 to 30 minutes, then using a sharp knife, slice very thin, trying to chip away at the steak.

    • Quickly cook steak in batches if you need to
    • Add a few shakes of hot sauce
    • Add Worcestershire Sauce, stir and add back onions
    • Melt desired amount of cheese on top

What Kind Of Steak To Use For Cheesesteak

You want to use a nice cut of steak that has some marbled fat on it and is really tender. As the thin steak cooks, the fat melts a bit and makes each piece of steak very tender. Personally, I like to use rib eye for mine . Top round is also a classic cheesesteak option. Do not use tougher meat cuts like flank steak or brisket. They will be really chewy in the final sandwich.

    The Perfect Philly Cheesesteak

Where to Find the Best Philly Cheesesteaks in Philadelphia ...

The Perfect Philly Cheesesteak youll be surprised at how easy it actually is to make your own restaurant quality cheesesteak sandwich these are my favorite way to eat them!

If you asked my husband what his favorite food was, his answer would be a tie between pizza& philly cheesesteak. .

For years, I have tried to make that perfect cheesesteak for him. And for years, I have failed. But, if you first dont succeed try again, right?

Well try again I did. And again, and again, and again. Im kind of embarrassed of how long it took me to come up with the perfect Philly cheesesteak because of how easy it ended up being.

The first secret to the perfect philly is the meat. You need very thinly cut ribeye steak. Im so blessed to have a stand-alone butcher shop in the tiny town that I live in, so I have my butcher cut my ribeye in thin slices with his meat slicer. If you have a butcher who does this, having him cut it for you would be the easiest option. You can do it at home without a meat slicer by partially freezing your ribeye and slicing it as thin as you can get it using a sharp knife.

You are also going to need your cheesesteak fixins sliced onion, bell pepper, & mushrooms. You can saute it all up together in a little bit of butter, or you can do it separately for those who dont like certain toppings.

Transfer each philly stack to the corresponding hoagie roll.

And, heres the second secret in the perfect Philly cheesesteak. Its all in how you roll it.
