Why Is My Steak Tough And Chewy

The muscle fibers in meat have to be broken down and the proteins turned into gelatin in order to make meat tender. This happens very quickly over high heat with tender cuts of steak like filet mignon, but tougher cuts of meat require slow cooking, usually in some sort of liquid to keep them from drying out.

Lets rewind a little bit you probably missed adding an acidic touch to your marinade recipe. Muscle fibers within your steak need to be broken down, as well as the proteins turned into gelatin in order to make your steak tender. Over high heat and with more tender cuts of steak like filet mignon, this happens very easily. But for tougher cuts of meat, you need to grill it slowly and continue to keep it covered in marinade.

Do Steak Marinade Recipes Tenderize Beef

Some famous chefs say steak marinades tenderize beef, but others say they do very little, if anything. Based on our personal experience, we think marinades make a tough cut more flavorful, but they wont turn a tough cut tender. The reason for this is because marinades are based on acids, which can actually toughen the beef if the beef soaks for too long. In addition, marinades only penetrate the outer layer of the beef, not the middle of it.

Why Marinades Work Magic

How to Marinate a Good Steak : Savory Flavors
  • Acidor Enzyme: All great marinades will contain either an acid or an enzyme. In the skirt steak marinade, the lemon juice is our acid. It will weaken the tough fibers of the meat and enhance flavor. Creating tender flavorful meat. Do not over marinate, however, If meat sits in a marinade too long the meat will become mushy, dry, and actually tough.
  • Salts: Salt plays an essential role in getting the flavors to penetrate beneath the surface of the meat. Salt is not only add on its own, but the salt found in the soy sauce and Worcestershire sauce helps too. First, the salt draws out the moisture from the meat, then as the water is reabsorbed into the meat flavors from the spices and garlic are carried with it. This allows the flavor to get deep inside the meat while helping to break down muscle fibers helping it to tenderize.
  • Oil: Oil is important because it helps carry fat-soluble flavors from the spices and pepper, past the surface of the meat, and into it.
  • Put it all together: When you combine acid, salts, oils with seasonings, herbs, and even sugars you allow so much more to happen to meat than just a simple brine ever could. You can tenderize tough meat, add flavor deep within and create moist cuts of meat from normally dry ones. Yup, itâs like magic. And this skirt steak marinade has all those ingredients!

How Long To Marinade

As little as 20 to 30 minutes will transfer lots of taste to your steaks. I like to get a few hours if I have time. Please refrigerate for food safety.

Up to 8 hours is fine, and some recommend up to 24 hours. But due to the lemon juice and Worcestershire sauce with vinegar, it can affect the texture if marinaded for over 8 hours.

How Can I Tell When The Flank Steak Is Done

For a tough cut like flank steak, its best to cook it to rare or medium-rare for maximum tenderness. DO NOT cook it beyond medium.

The best way to measure the doneness is by inserting an instant-read thermometer into the thickest part of the steak. Remove the steak from the heat when its 5°F or 3°C below the target temperature, as the temperature will rise several degrees more while resting. For example, if you target medium-rare, remove the steak from the grill when the thermometer reads 130°F , as the final temperature will reach 135°F during resting.

Let it rest covered with aluminum foil for 5-10 minutes, allowing the juices to flow back in.

How Long Do I Cook Steak On Each Side

When we are grilling steaks at home, I usually grill over medium high heat, using a propane grill.

I allow the steaks to cook for 7 minutes on each side before flipping them over. I recommend only flipping them once. You will end up with the perfect medium-rare steak every time!

Adjust cooking time accordingly based on the doneness you prefer.

How Should I Cook A Marinated Steak

When cooking a marinated steak, you need to remember one vital piece of information: cook using a dry, high heat method that allows air circulation.

What does that mean? It means you should cook marinated steak through grilling or oven-roasting for the best results. Both these methods pave the way for the marinade to drip away on its own while cooking evenly due to air circulation.

If you wonder whether you can cook a marinated steak on your stovetop in a skillet, thoughyes, you can.

However, expect less color and caramelization in your steak, because once you place marinated meat in a skillet, the marinade that has penetrated the meat flesh will resurface and become trapped in the pan. This results in the marinade creating steam in the pan, which prevents the necessary searing of the meat from taking place.

    The Best Steaks To Marinate

When choosing a steak to buy, keep in mind that cuts closer to the hooves and horns tend to be tougher than those further away. We find that steaks from the leg and shoulder areas are ideal for marinating because these are the muscles that work the hardest on a cow. Flank steak, hanger steak, tri-tip, bottom round and eye of round are all great if youre looking for the best steak to grill and marinade.

Keep in mind that even sirloins, New York strips and tenderloins can get a boost from a quick marinade. They may not need much help in the tenderness department, but they can still benefit from the additional flavor learning how to make steak marinade provides.

When Steak Marinade Is A Good Idea

The most common reason people use steak marinades is to tenderize tougher pieces of beef. Generally, cheaper cuts are the ones that can benefit from a good steak marinade. Skirt steak, hanger steak, flank steak, and chuck are a few options that work well with a marinade.

As these steaks soak in the marinade, the acids in the marinade go to work breaking down fibers and tenderizing the meat. The longer the steaks stay in the marinade, the more time they have to tenderize and get more flavor.

Another reason to use marinades is to add extra flavor to steaks that arent as full of beef flavor as others. Again, these are usually the cheaper cuts.

Grilled steak is another excellent option for marinades. The grill tends to leave a char on steak, and some people dont find the char very appetizing. But the flavor of a marinade can create a more pleasant taste that some will find more palatable.

You simply grill. the steak over the direct heat until it reaches the desired temperature, flipping it about every minute. This will ensure that the surface gets nice and golden brown and that the middle wont cook too quickly. Take the steak off of the grill once it reaches the desired temperature and let it rest 5 minutes before serving.
