Best Type Of Salt To Use

10 Spices & Seasonings For Chicken and Steak – Bobby’s Kitchen Basics

There are more types of salt than you can count on your fingers. But which is best for seasoning steak?

As a general rule, you want to use coarse-ground salt, that is, salt with large crystals. You can easily buy salt in this format, or you can grind your own in a salt mill.

Coarse salt is easy to work with you can control the flow of salt, and its simple to pick up with your fingers. Also, it has a lot of surface area, so it imparts more flavor to your steak because of the size and all the points of contact.

Table salt, or iodized salt, is not a good choice for steak, even though you undoubtedly have lots of it in your kitchen already. Its far too easy to pour way more table salt than you need because its so free-flowing. Also, it has a slightly bitter taste that may interfere with the taste of your steak when used in large quantities.

Probably the best-known and most readily available coarse salt is Kosher or Koshering salt. Its inexpensive and works very well on steaks. Thanks, to this combo of attributes, its our top choice for steak seasoning salt.

Sea salt is another good choice for large crystals, and so is Himalayan Pink salt. The only drawback for these salts is the price: both are typically far more expensive than Kosher salt. Also, theres almost no detectable difference in taste, so it isnt easy to justify their use on steak unless youre seasoning in front of your guests and want to impress them.

What Spices Go Well With Lamb Steaks

The key to pairing lamb steaks with spices is to choose a complementary spice for each flavor. For example, if youre looking to pair a mild flavor like cinnamon with a lamb steak, then you should opt for a light spice like cinnamon. Alternatively, if youre looking to pair a more intense flavor like curry with a lamb steak, then you should opt for a stronger spice like curry.

A Cold Steak Is A Tough Steak

The reason we dont want to cook chilled steaks is simple. A cold steak takes longer to cook, whether you use a pan, a grill or the broiler. The key to a perfect steak is cooking it at a high temperature for a short amount of time. The colder the steak is when it hits the grill, the longer it will take to cook it. And the more time it spends over the heat, the tougher it gets.

So just remember that a cold steak equals a tough steak. Taking the meat out of the fridge for a few minutes beforehand helps your steak stay tender and juicy.

Some people recommend leaving the meat out at room temperature for as long as an hour. The problem here is that you start to approach the territory of food safety hazard. Also, you would ideally like the interior of the meat to be a bit cool when it hits the grill. This helps you to achieve that perfect medium rare steak. If you leave the steak out for too long, the whole steak gets warm and you give yourself less margin for error. Its better to undercook a steak than to overcook one.

Steak Sauce Recipe

Yes, you can use a rub or a marinade with steak. If you plan to grill the steak, a rub is the best option for adding flavor. See below for rub recipes.

Steak that has been marinated has more surface moisture which causes it to cook slower over direct heat. You may have a hard time getting decent grill marks and surface browning on a marinated steak compared to one that is dry before cooking.

When To Put Dry Rub On A Steak:

There are two methods that work best:

40 Minutes before you cook the steak: This allows the salt to penetrate through the surface and break down the muscle fibers, which results in a more tender meat. During this time, the liquid that initially surfaces has time to reabsorb, which keeps the meat juicy.

Overnight: You can apply dry rub a day in advance and let it sit overnight in the refrigerator. The surface may appear to be dryer in the morning but you will actually only lose about 5% of moisture which is far less than what youd lose if you were to cook the steak immediately, which is up to 20%.

Peppering Before Grilling Pros And Cons

Applying pepper to your steak before grilling means less time handling your steak when its finished and less time waiting to eat. Plus, youll somewhat get the pepper down into the flesh and experience the flavor beyond the surface.

On the other hand, youre likely to lose a fair portion of pepper to the grate and flames. Additionally, the compound that gives pepper much of its taste and bite, piperine, melts at 266 °F. Since we sear at upwards of 400 °F, youll melt away many of the benefits pepper brings to your steak. Youll still taste pepper notes, but not the full effect you might be hoping for.

Chives A Gentle Garnish To Steak

Chives can work really well with beef when used as a garnish. Add to stews just as you are serving or mix in with sour cream and put a dollop on the side of a juicy rump steak. Chives can be used in cooking but will loose a lot of their allium oomph in the cooking process. Far better to keep the mild onion like flavor for fresh and raw garnish.

Ham refers to cuts of pork meat that comes from the hind leg it can be a whole ham which includes the butt and shank cuts, butt end which is the uppercut of the hind leg, shank end which refers to the lower cut of the hind leg, and center cut ham steak which is sliced from the center of the ham roughly ½ to 1 inch thick. All of these ham cuts can be made even more special when seasonings are combined together for a flavorful smoked ham rub.

If youre using fresh hams and going to cure it yourself, then much better since you can introduce the spices in your brining solution or ham rub. The spices will have more time to gently seep into the very core of your meat. Working with cured hams is not a problem either. Yes, your prepared smoked ham rub will likely just flavor the surface of the meat but it still adds flavor. Envision biting into that crusty flavorful layer along with that wonderfully cured seasoned meat.

Curing your own ham may sound intimidating but its quite easy really. The challenge is more on finding the right spices for ham to use in your brine or dry rub. First off, choose the cut of meat that you want to use. Buy from reliable sources so that you can ensure your meats quality. Now, decide whether youre going to dry-cured it , or wet-cured it using a brine solution .
