How To Cook A Tomahawk Steak

Tomahawk Ribeye Steak – Reverse Seared Tomahawk – Wagyu

When it comes to preparing a Tomahawk Steak, the challenge is its sheer size.

The steak is about 2 inches thick, which means traditional searing methods are going to leave you with either a cold center or a charcoal black surface.

The best methods for cooking your Tomahawk Steak are either using a grill to reverse sear it or using a combination of grill and pan.

Watch the video above to see how its done, check out our reverse sear tomahawk steak recipe, or follow the instructions below for a few general tips to cook your Tomahawk.

What Is A Tomahawk Steak

Lets start out with a simple explanation of what a tomahawk steak is. A tomahawk steak is a ribeye with the rib bone left on. In most cases the bone is frenched too meaning the meat is removed exposing the bone. Some butchers leave 3-4 inches and other leave up to about 10-12 inches of bone. In my opinion a good tomahawk needs a nice, long bone.

The Basics Of Hawk Throwing

Anyone can throw a hawk. However, there are a few important things to know about throwing your hawk. For beginners to hawk throwing, the basic steps are as follows:

1. Measure five to six paces from your target.

2. Assume a throwing position much like a pitcher in baseball with the tomahawk blade facing forward.

3. Hold the handle at or near the base of the tomahawk.

4. Bring the hawk straight back and throw straight forward.

If the hawk doesn’t stick the first time, try again. You will know if you are too far away if the tomahawk over rotates before it hits the target. You will see the top of the tomahawk hitting against your target in this case. If you are too close you will see the bottom of the handle hitting the target. This means you are not allowing the hawk to fully rotate and you need to back up.

Importance Of A Throwing Tomahawk

Tomahawks have the ability to replace numerous tools. You can essentially use it for survival and other tactical needs. It is a compact tool that anyone can easily use in the outdoors or in the wild. It is easy to carry and with the right sheath you can even strap it on your belt or somewhere in your backpack.

Most people who enjoy the outdoor see the importance of owning a good throwing tomahawk. It can be used for recreation and it is a functional tool at the same time. Large axes which can be used in chopping woods are relatively large and are hard to carry around but with the tomahawk this will not be a problem, its compact size makes it an ideal tool for mountaineers.

Natural Non Medicated Beef

The beef we carry are fed a wholesome diet of forages and rolled barley. No hormones, additives, antibiotics, or steroids are ever added. Our suppliers treat the animals with care and compassion. A select group of ranchers register each animal with the Canadian Cattlemen Identification Association and commit to a voluntary third party audit process that monitors every step of their animal care.

Best Wine Pairing With A Tomahawk Ribeye Steak

A full-bodied, moderately robust wine like a Cabernet Sauvignon is recommended for such a highly marbled steak.

We might suggest a young Cabernet Sauvignon, or one that is equally agreeable through its maturity like a wine from Napas Caymus Vineyards. Other suitable brands include a Newtown 2013 Unfiltered Napa Valley, Canvasback 2013 Red Mountain, and J. Lohr Hilltop Paso Robles.

Our award-winning wine list has a wide variety of bold Cabernets available by the bottle or glass, so feel free to ask one of our servers for a particular recommendation – or test your own taste and select a variety yourself.

If you prefer a lighter, more gentle red variety, a Pinot Noir would also be a great fit. Other suitable alternatives to a Cabernet would be a Zinfandel or a nice Malbec from Chile or Argentina.

How Does The Price Of A Tomahawk Steak Compare To A Normal Ribeye

Tomahawk steak in OptiGrill

How much you are paying for your Tomahawk Steaks depends on the quality of the beef you are buying and who you are getting it from.

However, you should expect to pay up to three times more than your normal bone-in Ribeye.

The Chicago Steak Company is selling two USDA Prime dry-aged Tomahawk Ribeyes for $239.95 when you can get four USDA Prime dry-aged Bone-in Ribeyes for $274.95.

DeBragga will sell you a pair of dry-aged Prime Tomahawk steaks for $285.00, which is more than their Culinary Olympics winning 24oz Miyazaki Wagyu Ribeye.

While it might seem like that is a reasonable increase when you are moving from a 24-ounce Ribeye to a 40-ounce Tomahawk, it is essential to bear in mind that a lot of that weight is going to be bone and not meat.

You can expect to spend an average of about $100 on a quality Tomahawk Steak, and the reality is that around $50 to $80 of that is paying for a considerable length of bone and a more Instagram ready steak.

What Is A Tomahawk

The word “tomahawk” was derived from the Algonquian word “otomahuk” meaning “to knock down”. Although a tomahawk is much like an axe or a hatchet, it’s origins are very different. The tomahawk was originally used by Native Americans in North America as a tool and a weapon.

Tomahawks are now more popularly being used for throwing competitions more than self defense. For many years the tomahawk was the universal tool of the mountains. Indians and Mountainmen alike used the tomahawk for hunting, chopping firewood, and protection. Today tomahawks are mainly used for recreational fun. Although the Summer Olympics are not quite ready for it, the art of throwing a tomahawk has not been lost and continues to be a popular sport around the world.

Where To Buy Tomahawk Steaks

Lets start with some truth: Tomahawk steaks are ridiculous and paying that much for a lot of bone is a waste of money. But you know what? There isnt a steak on the planet that will look more impressive on your plate than a tomahawk steak. If you have wanted to try a tomahawk steak or give one for a gift your main problem is probably where to buy tomahawk steaks. Unless you have an epic butcher counter at your local grocery store you are out of luck buying local but luckily there are some great, reputable online retailers where you can buy tomahawk steaks.

Hybrid Grilling Your Tomahawk Steak

Another good option is to follow the steps above for the low and slow section, and then finish the steak off in a hot pan.

This is a good option if youre grill or smoker is set up for low and slow and you dont want to reconfigure it for searing.

  • Set up your grill, as above, using the two-zone grilling method.
  • Once the steak reaches a temperature that is about 15-20 degrees away from your desired level of doneness, remove it from the heat and set it to one side.
  • Heat up a cast-iron skillet until it is smoking hot. If your grill has a side burner, its best to do this outside, so you dont set off all the smoke alarms.
  • Put your steak direct into the pan to get that all-importantMaillard reaction and turn them regularly to avoid scorching the surface.
  • Once your steak is about 5 degrees away from done, remove it from the grill and set it aside to on a wire rack with a plate underneath to rest for around 5-10 minutes.
  • Just before serving, heat up the juices in the pan with those on the plate until smoking hot and then drizzle over the steaks for the extra burst of flavor.
  • Man grill steak!
