The Goal: A Very Hot Pan

Steak Selection – How to Choose the BEST Ribeye Steak

What you’re trying to do is avoid overcrowding the pan, because it needs to be absolutely smoking hot. Dropping too many steaks into a hot pan will instantly cool it off, causing your steaks to sort of steam rather than sear.

Cast iron is specifically recommended because it gets very hot and it holds its temperature for a long time.

The reason this technique works best with a boneless ribeye is that you want to get a nice tight seal between the meat and the pan. Sometimes the bone can get in the way.

Finally, the 4-3-2 technique assumes that your ribeye steak is 1 inch to 1 1/4 inches thick. If it’s thicker, you’ll need to cook it longer. And under no conceivable circumstance should a ribeye steak be thinner than an inch.

Grilling Ribeye Steak: Charcoal Vs Gas Grill

Charcoal Grill

To cook on a charcoal grill, place steaks over the hottest part of the grill, and sear both sides for 12 minutes. Then, move to medium, ash-covered coals and continue to grill for the times listed in the Cooking Times Chart below. Turn about 1 minute prior to the halfway point.

Gas Grill

To cook on a gas grill, preheat on high. Sear both sides for 12 minutes, then, reduce to medium heat and continue to grill for the times listed in the Cooking Times Chart below. Turn about 1 minute prior to the halfway point.

How To Season Ribeye Steak

Plain old salt and pepper is a perfectly good seasoning for a ribeye steak. The cut itself is so flavorful that those two basic flavors of salt and pepper may be all you need.

Of course if you want to add more flavors, there’s nothing wrong with that. Traeger’s garlic and chili pepper Traeger Rub would be a nice option.

The real key to seasoning a ribeye is the timing. The best method is to season the steak liberally and let it sit for 1 to 3 days. Then put it in the fridge, uncovered, until you’re ready to cook. Seasoning early gives the salt time to work its way into the meat. Although not necessary, it gives the steak more flavor.

If you’re buying and cooking on the same day, salt the steak at least 45 minutes before cooking, or right before you put it on the grill. Salt draws moisture out to the surface of the steak, and moisture is the enemy of high-temperature grilling.

When you put a steak on the grill, any moisture on the surface must evaporate before the surface actually starts to cook. Salting well in advance — and patting the steak dry before it goes on the grill — will eliminate that moisture and help your cook go better.

How To Prepare Ribeye Steak For Grilling Or Smoking

    Rastelli

From a good butcher, a ribeye will already be trimmed to perfection either with or without bone and be ready to place straight in the grill or smoker.

You can grill it, but extra care must be taken due to the fat content, which released on to flames can cause some flashback from the fat igniting. So if you arent a fan of burnt steak, keep a close eye when its on the grill.

You need only a good seasoning with salt and pepper in preparation to cook it, though if using pepper add this AFTER searing, because it can burn and turn bitter.

If you intend to smoke the ribeye, a coating of extra virgin olive oil is advised before seasoning as the cooking process takes longer, and this will allow the meat to retain moisture.

Prime Rib Vs Ribeye: Whats The Difference

One of the things that we get asked often is, Is prime rib and ribeye the same thing? or Prime rib vs ribeye which one is best?. Our answers? Prime rib and rib eye are similar, but no, they arent the same, nor is one technically better than the other. Both rib eye and prime rib are excellent steak cut options for different purposes. Theyre both incredibly flavorful, have fantastic marbling, and are both prime beef options with just the right amount of fat to improve taste and texture.

Unlike some of the other steak cuts we prepare, these cuts of steaks come from the same primal cut of beef. A ribeye is the section of the rib roast that is cut before being cooked, but lets dig a little deeper to find out more about each cut and each difference that separates them.

    Thicker Steaks Are Better

Theres nothing worse than cooking a steak that becomes overcooked before achieving that perfect sear on the outside.

Why is sear important? Searing caramelizes the natural sugars in the meat, forming a rich brown crust that amplifies the flavours of the meat. In short, its a critical step in producing a mouth-watering steak!

Have you been in this scenario You place a beautiful cut of meat on the grill only to find its overcooked in no time? If this frequently happens to you , than the thickness of your steak might be to blame.

Thinner steaks make it more difficult to achieve that medium-rare that so many steak-lovers seek to achieve. The reason for this is that the heat has less travel distance to the center of the steak, causing them to overcook quickly.

Turn the temperature down to low to allow the steak to continue cooking inside without browning more on the outside. Melt about 2 tbsp of butter and add it to the pan. While the ribeye cooks, occasionally spoon the butter over the ribeye to keep it moist and warm.

Ribeye steak should be cooked medium rare. Easier said than done, right? Well, it really is that simple, and we’re going to review exactly how to do it.

A favorite technique for cooking a boneless ribeye steak is on a cast iron skillet using the 4-3-2 method:

  • Sear the steak in a dry skillet for 4 minutes.
  • Flip it and sear the other side for 3 minutes.
  • Let it rest for 2 minutes.
  • Note that this technique is best for when you’re cooking one or at most two ribeyes. And you can really only do two if you have an extra-wide skillet.

If you need to do more than two, you’ll need to cook the steak on the grill instead. Or maybe you have multiple cast iron skillets, in which case great.

Its not uncommon to find bone-in ribeye steak marked rib-steak.

While the bone-in steak may be difficult to cook, you will thank it later for the added flavor and moisture. It tastes excellent. However, the meat following the rib takes time to cook. Maybe, for that cause, boneless ribeye steaks get more takers.
