How To Smoke Or Reverse

The best way to smoke a ribeye is on a Traeger grill. A Traeger gives you even temperature and flavor from natural wood pellets, and high heat to give your ribeye the perfect char.

This reverse-sear method maximizes the smoke flavor and still gives you those delicious grill marks. It works to perfection on a Traeger.

Set your Traeger to 225 degrees Fahrenheit and preheat for 15 minutes with the lid closed.

Place your steaks on the grill and smoke until the internal temperature reaches 120 degrees, about 45 minutes.

Remove the steaks and set aside. Increase the temperature to 500 degrees and preheat for 15 minutes with the lid closed.

Return the steaks to the grill and cook until desired doneness , approximately 6 minutes .

How Do You Grill Thin Strip Steaks

Directions

  • Remove the steaks from their package and pat them dry
  • Season both sides with a pinch of salt and pepper to taste. Allow for 30 minutes of resting time.
  • When youre ready, put the steaks over high heat and cook them for three minutes per side.
  • Use an instant-read thermometer to determine whether the food is done.
  • Remove the steaks from the grill when they have reached the appropriate temperature.
  • Common Grilling Steak Times

So, how long do you cook steak on the grill? That answer largely depends on the thickness of the meat youre cooking. You can cook thin or thick cuts on the grill just fine, but youll definitely want to alter your times to cook your desired cuts to the right doneness, which, again, is a matter of preference.

One good tip to keep in mind is to use a meat thermometer for thick cuts of steak and a timer for thin ones. A steak thats ¾ of an inch thick or less may be difficult to get an accurate temperature reading from, so a timer can help. But a meat thermometer can give you a more precise idea of the doneness of your steak to make sure its right.

For a medium-rare doneness, you typically will need to grill your steak between 4 to 6 minutes on each side, depending on thickness. For medium cooks, shoot for closer to 5 to 8 minutes on each side. Its always best, though, to start with the lower grilling steak time and check with your finger to see if it might need a bit more time, instead of allowing it to cook for a couple of extra minutes. You can always cook it a bit longer if required, but you cant get back tenderness you lose from overcooking.

When you touch the center of your steaks, a medium rare cook will spring back slightly, yet still feel squishy. A medium cook will be more springy than squishy. If all else fails, you can always cut a small slit in the center of your steak to check its color, but this should only be used as a last resort.

    Traditional Vs Grass Fed Beef

Ive cooked and eaten many different types of beef, and my preference for marbling, juiciness, and flavor is definitely traditional beef. I usually buy Certified Angus Beef because its consistently high-quality, but generally speaking, you will do great with any piece of Choice. Or Prime, if you can afford it.

If you prefer grass fed steak, you can absolutely use this recipe. Just make sure you keep an eye on doneness, as grass fed beef cooks faster and is less forgiving if you overcook it.

Are Charcoal Grills Better For Grilling Steaks

Many grilling enthusiasts argue that charcoal grills are a better alternative for grilling steaks as opposed to gas or electric grills, but why? When you cook on a charcoal grill, youll enjoy a full smoky flavor, which you just cant get with the other grilling options. Its also much easier to achieve a nice thick crust on the steak. Others feel that gas or electric grills are better choices simply because cleanup is much easier. However, if you know how to clean charcoal grill grates, cleanup and upkeep is actually a breeze. • Rib Eye Steak This recipe is based off of a 2 lb steak. You can choose either bone in or boneless, but either should be 1 thick. Try to get one with good marbling.
    • Montreal Seasoning A mix of 6 different spices, including pepper, garlic, paprika, and dried orange. This coarse rub is perfect for beef and a copycat of the store bought Montreal blend, but with less salt.
    • Compound Butter I use my own herb compound butter to top my grilled ribeye. Its a soft butter filled with dried herbs. You could also try this blue cheese butter, for a much stronger, garlicky flavor. And, of course, you could just use plain butter. If using plain, I recommend adding some additional herbs and seasonings on top as well.

Most cooking details on pre-packed steaks suggest wildly exaggerated cooking times. Provided the steak is at room temperature, the pan is properly heated and the steak is about 2cm or more thick, two to three mins each side and a resting time of at least three mins should produce excellent results.

Its often suggested that steaks should be lightly coated with olive or other oils before cooking but this tends to create unwanted smoke using a heavy, non-stick pan is a better plan but an ordinary pan at high temperature is unlikely to stick. Seasoning is best added after cooking, while the steak is resting, or a long time before in the fridge to lightly dry-brine the steaks, giving a better crust and adding juiciness to the beef. Bring up to room temperature for 30 mins before cooking.

It is very important to keep the cooking temperature high too low a temperature encourages moisture to escape, which means the steak will stew and toughen. Equally important is NOT to turn the steak constantly which makes timing impossible to calculate once is enough. Avoid pressing down on a steak as this expresses moisture.

A reliable traditional test for cooking a medium-rare steak cooked through but with a nicely pink interior is to watch carefully for the first globules of blood to appear on the upper surface. Turn the steak immediately and cook until the same thing happens again remove onto a warm but not hot plate and let rest for three to five minutes before serving.
