You want a nice hot grill thats been preheated to at least 450°F to get the perfect sear and crust on your bone in ribeye steak.

Skillet To Oven Method

  • Preheat the Oven: Preheat the oven to 350 F.
  • Preheat the Skillet: Place a cast iron skillet on the stove and turn a burner to medium-high allowing the skillet to heat as you prepare the steak. About 5 minutes.
  • Prep the Steak: While the skillet and oven heat, season the steak with salt and pepper. If youd like to add any additional seasoning, do so now.
  • Sear: Place the meat on the HOT skillet, searing in all that yummy flavor! Leave for two minutes, then flip and sear the other side for an additional two minutes.
  • Finish Cooking: Flip the steak back to the originally seared side and place the skillet in the oven. Cook in the oven at 350 F until the internal temperature reaches your desired doneness level as measured by a meat thermometer. Remove promptly because the meat will continue to cook for a few minutes once removed.
  • Rest the Meat: Transfer the meat to a plate and rest for 5-7 minutes. Then serve and enjoy!
  • Thick Ribeye Or Thin Ribeye

    If you like your steak on the rare side, it’s much easier to achieve a good cook with a thick ribeye than a thin one. With a thin ribeye you’ll have a hard time getting the surface of the steak properly browned before the inside of the steak cooks to well done. A thick ribeye buys you time. You’re able to get that surface nice and browned before the interior of the steak gets too much heat.

    If you prefer your steak well done, go with a thinner cut. If you choose a thick cut, the surface of the steak may burn before you’re able to get the interior cooked. Most experts prefer their steak cooked medium rare. For this reason, they typically choose a steak that’s about 2 inches thick.

    I put my family through this photo editing process at least once a week. But given that this is 100% my husbands recipe/passion/craving-every-single-week, consulting him on which photo to lead this post was part of the process.

    Definitely the one on the grill, he replied. Really? But its not on a plate. Its not all styled out. Its not my usual style of pic.

    Exactly. Its a big, beautiful ribeye grilled to perfection on a grill. Isnt that what you want to show?

    Yes. Yes it is. Why do I always overthink it?

    This grilled ribeye steak is the epitome of summer. Big. Juicy. And it serves a crowd. Or if youre my husband, serves enough for dinner and leaves some for a breakfast burrito in the morning.

    Hes smart that way.

    Ribeyes are my mans go-to steak. Theyre rich. Theyre buttery. And its all thanks to serious ribbons of marbeling through the beef to create the ultimate decadence of any steak you can slice a knife through.

    My husband moved his killer indoor steak-making-technique outdoors with this ribeye recipe. And there are several factors that come into play.

    How To Grill Ribeye Steak :

    Grilled Rib
    • For the perfect medium-rare degree of doneness, your Ribeye steak grill time should be 912 minutes for a 1-inch steak, and 1215 minutes for a 1& frac12 inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
    • Rest your steaks for 5 minutes before serving, covering lightly with foil. The temperature of the meat will continue to rise about 5°F during this time . The final temperature will read 135°F.
    • Resting steak is important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.
    • To check the degree of doneness, use a meat thermometer to measure the internal temperature of your steak.

    What Cut Of Beef Is Ribeye

    The ribeye comes from the rib primal section of a cow between the shoulder and loin. This section is where youll find the most tender sections of ribs because the area isnt overly exercised. Butchers typically cut the section from the animal from the 6th to 12th ribs before cutting each rib into individual ribeye steaks.

    How To Smoke Or Reverse

    The best way to smoke a ribeye is on a Traeger grill. A Traeger gives you even temperature and flavor from natural wood pellets, and high heat to give your ribeye the perfect char.

    This reverse-sear method maximizes the smoke flavor and still gives you those delicious grill marks. It works to perfection on a Traeger.

    Set your Traeger to 225 degrees Fahrenheit and preheat for 15 minutes with the lid closed.

    Place your steaks on the grill and smoke until the internal temperature reaches 120 degrees, about 45 minutes.

    Remove the steaks and set aside. Increase the temperature to 500 degrees and preheat for 15 minutes with the lid closed.

    Return the steaks to the grill and cook until desired doneness , approximately 6 minutes .

    How To Buy Rib

    As with all meat, the best place to shop is a good butcher. Other places, like Costco or other price clubs, have high quality meat and high turnover, so you will get a consistent, reliable product there. There are now a lot of online meat companies that sell sustainable and humanely raised meat, sometimes direct from the farm to the consumer.

    If you are shopping at a supermarket, if budget allows, try to find and purchase prime rib-eye steaks. Choice is the next best option. And if they have a butcher on premise, ask if you can get steaks cut fresh.

    How to Cook Ribeye Steak on the Grill
    • Steak. It all starts with the steak! I like to purchase 1 ¼ to 1 1/2-inch bone-in rib eye steaks with good marbling for this recipe. The marbling with produce a tender, juicy ribeye steak with lots of flavor. If you do not see them readily available in the meat case of your super market, you can ask the butcher to cut them for you. I generally call ahead if Im planning to serve these for a special occasion.
    • Stone House Seasoning. This is my homemade blend of seasoning that I began making as our house seasoning when we first married. Since our last name is Stone, we just call it Stone House Seasoning. It is a blend of salt, pepper, and garlic that is at just the right proportions to enhance so many dishes! We love it on beef, chicken, fish, pasta, and vegetables! It is our go-to for sure!
    • Rosemary. The fresh rosemary adds so much flavor to these steaks! I generally keep rosemary year round in my herb garden and love that it is usually available in the grocery store. However, if you do not have fresh rosemary, simply leave it out. Your steaks will still be delicious, but I do encourage you to try it next time!
    • Butter. I love to use unsalted butter to cook my skillet steaks. The drizzle over the top for serving makes these homemade steaks restaurant quality for certain!
    • Olive oil. The olive oil adds moisture to your steak as it cooks while helping to ensure a beautiful sear.

    Whats The Best Steak For Grilling

    While not inexpensive, a ribeye steaks flavor is worth the price. Always choose a bone-in steak. The bone adds flavor to the meat, and a thicker steak will always produce a meatier, more tender and flavorful steak. Sometimes hell choose an aged steak, sometimes a prime. Either way, its more about HOW he cooks than WHAT he cooks.

    How Long Should You Cook A Rib Eye Steak

    The cook time for this recipe depends on how thick your steaks are. Most of the time, rib eye steaks are about 1 to 1 1/2 inches thick. A typical boneless rib eye will take about 5-6 minutes per side to cook to medium. A bone in steak will take a bit longer, youll want to add another 2 minutes per side.
