Ruth Fertel was a divorced single mother who needed money to send her teenage sons to college. Ignoring the advice of her banker, lawyer, and friends, Ruth purchased the restaurant in 1965. She used her brother’s restaurant, Sig’s Antique Restaurant in Port Sulphur, Louisiana, along with family recipes to lay the foundation for her restaurant. She initially planned to raise just $18,000 to cover the purchase price, until it was pointed out to her that she would need an additional $4,000 to cover the cost of renovations and food. On her first day, May 24, 1965, she sold 35 steaks at $5 each.

Fertel personally took a hand in every part of the business for many years, Chris Steak House was the only upscale restaurant in New Orleans with an all-female wait staff.

Name change to Ruth’s Chris Steak House, 1976

Expansion and franchising, 19761999

The first franchised restaurant was opened in 1977 by a loyal customer, Thomas J. “T. J.” Moran , in Baton Rouge, who went on to open several more franchised Ruth’s Chris locations, TJ Ribs, and Ruffino’s restaurants through his company T.J. Moran Associates. Fertel noted, “All our franchisees were people who had eaten at one time or another in one of our restaurants. We never looked for franchisees. They came to us”. The chain expanded rapidly over the next two decades, with 66 locations in the U.S. and overseas by mid-1998, and achieving over $200 million in annual revenues.

Why Is It Called Ruths Chris

When a kitchen fire destroyed Chris Steak House in 1976, Ruth was forced to relocate the restaurant to stay in business. But the Chris Steak House name wasn’t allowed to move with it. So, with little time and a mischievous smile, Ruth added her own name to the sign, making it Ruths Chris Steak House. And it workedthat tongue-twister of a name was born.

In 1965, Ruth Fertel, a single mom looking for an opportunity, saw a steak house for sale in the classifieds. She didn’t know much about restaurants or steak, but she took a chance and mortgaged her home to buy Chris Steak House. Ruth mastered all the ins and outs herself, from butchering and broiling steak perfectly to serving guests. From the opening day, the special sizzle she created was a huge local success. Early Life And Teaching

Ruth Ann Udstad was born into a poor family of descent in . Her father was an insurance salesman, and her mother was a kindergarten teacher. In 1932, during the , she and her family relocated to her mother’s birthplace, the community of Homeplace in , which was about 60 miles from New Orleans.

She skipped several grades in elementary school, and graduated at age 15. The family used the money from her brother Sig’s World War Two benefits to send her to in at 15, from where she graduated at age 19 with honors in and .

In 1946, Udstad obtained a job teaching at in . She left after two semesters.

On October 2, 1948, she got married to Rodney Fertel, who lived in Baton Rouge and shared her love of horses, and they had two sons, Jerry and Randy. In 1951, they opened a racing stable in Baton Rouge. Ruth earned a trainer’s license, making her the first female horse trainer in Louisiana. Ruth and Rodney divorced in 1958. Rodney failed in the 1969 mayoral election in New Orleans as “The Gorilla Man”, often wearing a gorilla suit to campaign events, championing the cause of renovating the .

Unable to support herself and her teenage sons on her alimony payments, she initially supplemented her income by making drapes out of her own home. In 1961, she took a job as a lab technician for physician-scientist at the , earning $4,800 a year.

Acquisition By Madison Dearborn 19992005

In 1999, Fertel, then 72, developed lung cancer. She sold a 79.3 percent interest in the chain in August 1999 to investment company Madison Dearborn Partners of Chicago, remaining as a shareholder until her death in 2002.

In that period, the chain expanded to 86 restaurants, including 10 overseas locations. Revenues fell to $167.8 million in 2003, before rising again to $192.2 million in 2004.

On August 9, 2005, under President & CEO Craig Miller, Ruth’s Chris Steak House became a public company following a successful IPO valuing the company at $235 million and an increase of 15 percent in first-day trading.

Relocation to Florida, 2005

In late August 2005 Hurricane Katrina devastated Greater New Orleans , and the chain moved its corporate headquarters to Heathrow, Florida. Like most businesses in the city, two of the chain’s locations in the New Orleans area were forced to close because of the storm. The Metairie location has since reopened. Members of the Fertel family, particularly Ruth’s son Randy, were bitterly opposed to the move. Amid much criticism by local officials and media, and on the heels of the announcement by Morton’s that it would reopen its own New Orleans branch, the corporate offices announced that, due to extensive damage, the old flagship location on Broad Street would be permanently closed and donated to charity.Tulane University was the recipient of the gift, remodeling and reopening the site in 2012 as the Ruth U. Fertel/Tulane Community Health Center. In May 2008, Ruth’s Chris reopened in New Orleans and is centrally located downtown in Harrah’s Hotel at 525 Fulton Street.

In 2011, the corporate headquarters was relocated to its current location in Winter Park, Florida.

In 1972, Henry Swanson, an agricultural agent and “resident layman expert on Central Florida water,” wrote a letter to the editor warning Orange County mayors of the sinkhole danger that could be posed by overdevelopment and excessive groundwater use. Swanson predicted that the west Winter Park area would be especially at risk. In May 1981, during a period of record-low water levels in Florida’s , a massive opened near the corner of Denning Drive and Fairbanks Avenue.

The sinkhole first appeared on the evening of May 8, 1981, near the house of Winter Park resident Mae Rose Williams. Within a few hours, a 40-year-old near her house had fallen into the sinkhole. The next morning, the hole expanded to nearly 40 feet wide. In a story in the Orlando Sentinel, she said that as the sun rose, she heard a noise “like giant beavers chewing” as the hole began to devour more of her land. The hole was collapsing rapidly. By noon, as she realized that her home was slipping into the expanding hole, she and the family evacuated and removed their belongings. That afternoon her house fell into the sinkhole, and within a few hours the house was irrevocably on its way into the sinkhole’s center, headed to unknown depths.

The Original Chris Steak House

Chris Steak House was founded on February 27, 1927 by New Orleans entrepreneur Chris Matulich. It was located at 1100 North Broad Street near the Fair Grounds Race Course, seated 60 people, and had no parking lot. During Matulich’s 38-year management, the business was sold six times, failing each time, and enabling him to buy the restaurant back cheaply from the purchasers. The building has recently been the focus of a historic preservation dispute under its new owner, who demolished the iconic wraparound terracotta-tile awning in April 2022 without the proper permits.

The Langford Hotel served as a gateway to “Old Florida” attractions in Central Florida and a community social hub for decades.
