Fill the Traeger hopper with as wood pellets as needed to create a full load. You can use any wood pellet flavor like oak, hickory, or maple, its your preference. You could use oak or hickory for more of a smoky flavor. Hickory is a type of wood that creates a lot of smoke. This would be especially true during the short cooking time needed for this recipe.

Now preheat the Traeger to 225 with the lid closed for 15 minutes. and You can prepare side dishes alongside. When the Traeger reaches the desired temperature, take the steaks out of the fridge and let them rest at room temperature for about 30 minutes.

While the smoker is heating, I grab my steaks and rub them with a light drizzle of olive oil.

How Long Do You Smoke Tuna At 250 Degrees

To ensure that your tuna is cooked through, we recommend smoking it at 250 degrees for 60-90 minutes. This will give the tuna a nice, firm texture with a slightly pink center. If you prefer your tuna cooked through with no pink remaining, you can smoke it at a higher temperature for a shorter period of time.

After it has been heated to 200 degrees, place the wood chips in the smoker. Grill the tuna steaks until they are cooked to 140 degrees, closing the lid and cooking them directly on the grates. As soon as the tuna is removed, serve it. Smoking tuna at 175-225 degrees Fahrenheit ensures that it is smoke-free. MEDIUM: a common request. It seems to please most as it isnt seeping with blood, nor is it super dry. The center remains slightly pink and is slightly warm. Internal temperature = 135oF 145oF. Cooking time ~4.5 min. per side.

MEDIUM-WELL: this steak is almost cooked right throughleaving just a sliver of pink in the middle. The center is just barely pink and definitely warm. Internal temperature = 145oF 155oF. Cooking time ~5.5-6 min. per side.

WELL: you will get the oddball that requests this but we certainly dont recommend it. This steak is definitely cooked right through. It is most likely tough with minimal flavor. The center is brown. Internal temperature = 155oF 165oF +. Cooking time ~7 min. + per side. A steak off of your Traeger, when well executed, will flavor the socks off of any other steak out there. Follow the tips below for the most delicious steaks of your life.

Tip 1: Meat Freshness. When cooking a steak, freshness is top priority. Buy your steaks early on the same day you plan to cook them.

Tip 2: Marbling. Look for steaks that are well marbled with fat. Those thin streams of fat will dissolve in the heat of your grill and moisten the meat from the inside while cooking.

Tip 3: Preparation. Before grilling, allow your steaks 4-6 hours to come to room temperature. Having your steaks start out at a slightly warmer temperature means more even cooking.

Tip 4: Season. How you season your meat matters. Whether you use a rub, like Traeger’s Beef Shake, or simple salt and pepper, the key is in the application. Apply liberally, and always just a little more than you think you will need. Top sirloin steaks normally have less fat so the smoke should be much quicker.

In this recipe, I reverse sear the Traeger sirloin steaks. Reverse sear means you give the steaks some high heat AFTER smoking/grilling them.

Because we reverse sear, you will want to pull your steaks off of the smoker 10 degrees below your final cook temp desire. I included your final temp suggestions below:

My Broil King Regal S590 can get really hot, fast and sear steak amazingly. It is my go to.

    Charcoal grills can create the searing heat needed for steaks if you have the right tools. I use a charcoal Vortex to get searing temps on my Weber Kettle. You simply put the charcoal into the Vortex and the heat will be focused at the center of the grill grates. This creates high searing heat and works perfect for steak.
