How Do I Cook A New York Strip Steak
There are two basic things you want to remember when cooking steak on the stovetop: dry steak, hot pan. First, dry off the strip steaks with paper towels, then season with salt. I prefer to not season the steaks with pepper before cooking, as the pepper tends to burn in the hot pan.
Next, put the steaks in a very, very hot pan . Immediately turn down the heat to medium and cook, flipping the steaks every 2 minutes to develop a crust on both sides, until the steaks register around 120ºF for medium-rare. This will take anywhere from 9 to 14 minutes total time depending on the thickness of the steaks. Let the steaks rest for a few minutes so the juices redistribute, and season with some pepper if youd like.
How To Cook A New York Strip Steak From Stovetop To Oven
Although steaks can be marinated, this recipe doesn’t focus on that. This is a simple recipe focusing on the meat. NY strip steaks are not the tenderest or leanest cut , but they are a tender cut.
Strip steaks should not be tough or chewy. Pick uniform steaks that have a little fat marbling and not any tough looking collagen or silver skin. If you’re not sure, ask the butcher to show you a beautiful New York Strip .
Letting meat acclimate to room temperature for at least 20-30 minutes before cooking will ensure more even cooking. Don’t skip this step.
Salt and pepper the meat. Be liberal with the salt. A lot of it will cook into the butter sauce later. The salt is going to promote a crusty sear and give it a ton of flavor. Obviously, if you’re sensitive to salt then you will need to play with the amount of salt.
This strip steak recipe is basic because I love the taste of meat and this recipe focus is on that. Having said that, dry rubs are also amazing on steaks too so knock out your favorite seasonings if you want at this point: paprika, cumin, garlic salt, onion powder, rosemary, etc…
This is a general cooking time ratio for cooking steak in a cast iron skillet. Play with it. My stove and oven is generally 2 ½ minutes one side, 2 minutes the other side, then 2 minutes in the oven. Other peoples stove/oven may be different and therefore so is the cooking ratio -i.e. – maybe 3 minutes, 1 ½ minutes, 3 minutes. Learn your oven and remember your ratio.
How To Reheat Ny Strip:
Ever since I discovered this reheating method for reverse sear steak, I actually use it for all my steaks, including this New York strip recipe:
- Preheat the oven to a low temperature, such as 250 or 300 degrees F.
- Place the steaks in a baking dish and add a little broth to the bottom . Seal the top with foil.
- Heat in the oven for about 10 minutes, or until warm.

New York strip steak is also known as a top loin or boneless strip steak. Because its cut from the short loin, an area where muscles arent heavily used, the meat is tender and juicy and mild in flavor. Make sure to buy steaks that are at least 1 1/4-inches thick, as steaks that are too thin will overcook by the time you get a nice crust on the outside. If the pre-packaged ones dont look great, ask for steaks that are cut-to-order at the meat counter instead.

- Get your grill hot, hot, hot! Turn on your grill as high as itll go, and make sure to allow the grill to fully preheat before cooking your steaks. A nice, hot grill is key to ensuring these steaks cook perfectly and remain nice and juicy.

How Make The Best Easy New York Steak:
Pat steaks dry and set on a plate. Evenly drizzle red wine vinegar and Worcestershire sauce on both sides of steaks. Rub steaks on all sides evenly with salt, pepper, garlic powder and onion powder. Cover and transfer steaks to the fridge for at least 2 hours up to 24 hours.
Pull steaks out of the fridge 30 minutes before cooking.
Preheat oven to 325 degrees.
