Combine all of the ingredients together in a small bowl or jar.

Store in a mason jar or airtight container, in the pantry, for up to 6 months. While the seasoning mix will stay good in the pantry for much longer than 6 months, after 6 months, the spices will begin to lose their flavor.

Thats why I recommend labeling the steak seasoning with a date and trying to use up the seasoning mix within 6 months. In my house, we double this recipe and its easily gone in a month, so I dont think youll have a problem using it all up!

Are All Seasonings Gluten

Montreal steak seasoning may contain ingredients like garlic powder, onion powder, and paprika extract, which typically do not contain any traces of gluten. However, some brands might include maltodextrin as one of their main ingredients, which is extremely similar to gluten.

Maltodextrin is a processed food additive that has been derived from starch, and its typically added to foods as an inexpensive thickening agent or bulking agent. This ingredient may contain small amounts of wheat, but consumers would have to ingest large amounts of maltodextrin every day to experience any gluten-related symptoms.

Choosing The Right Cut Of Meat

The best sirloin tips are only as good as the beef they started off as meaning, its important that you choose the best cut of meat at the market.

Steak tips are made from the sirloin, which is cut from the rump. This type of cut is typically on the lean side and muscular. When shopping for your sirloin tips, look for strips of meat that have a decent amount of fat marbling. You want the fat in there so your steak will be more tender and flavorful!

Whats In Montreal Steak Seasoning

McCormick® Grill Mates® Smoky Montreal Steak Seasoning

My Montreal steak seasoning recipe combines peppercorns and salt with basic pickling spices in their seed form . Additional herbs and spices add even more flavor.

The secret to a vibrant, fresh recipe is whole spices. I recommend toasting most spices in this recipe before grinding them.

As soon as a spice is ground, it starts to lose potency. Who knows when commercial coriander was ground before it hit the shelf?

There is a clear difference in taste and aroma between pre-ground and freshly ground spice.

So back to what Montreal steak seasoning is made of here are the ingredients:

  • Whole Peppercorns: I recommend a peppercorn blend consisting of black, white, green, and red peppercorns.

World Market sells them in a packet that is easy to open and grind. You may find other brands in grocery stores. Beware of the containers with sealed lids where the only way to get the pepper out of the jar is to hand grind it.

If you purchase these peppercorns, you will have to grind them in the jar. This is time consuming and inefficient. Plus, you cant toast them before you grind them.

Can you use just black peppercorns? Of course. Black peppercorns are the most widely available peppercorns. However, for a more complex flavor, use a combination of peppercorns. Even a black and white pepper combination is better than using only black peppercorns.

Toast the peppercorns before grinding.

Lightly toast the coriander seeds before grinding.

Toast them first before grinding them.

Ways To Enhance Flavor In Steaks

Seasoning can take the form of a marinade, dry or wet rub, brine, or collection of spices. Seasoning has become so instrumental in preparing beef and other meats that many rubs and spice collections have names.

  • Brine Another method used for tougher cuts, brine has a saltwater base. An alternative is a deep seasoning whereby you salt the steak and refrigerate uncovered for three days.
  • Seasonings/Dry Rubs Dry rubs can add surface texture or a flavorful crust to steaks. Crumbled spices highlight flavors that are naturally present in various foods. Apply both rubs or homemade seasonings to your steaks before grilling.
  • Sauces Whether sweet, tangy, or spicy, you want to apply sauces lightly in the last five minutes of grilling or after cooking.

Pro Tip:

The difference between dry rubs and seasonings is subtle. Seasonings are finer in texture and applied more sparingly than dry rubs. Many use the terms interchangeably.

    Montreal Steak Spice Origin

Over 70 years ago, Morris Sherman, a skinny man nicknamed The Shadow, created a sensation by accident.

Sherman worked as a grill man at Schwartzs, a smoked meat deli in Montreal, Canada. A Jewish immigrant from Romania by the name of Reuben Schwartz owned the deli.

Schwartz allowed his employees to eat liver steak for free. Sherman The Shadow wanted to make his meat more appetizing, so he seasoned it with a concoction of spices. He had Jewish pickling and pastrami spices, salt, and pepper at his disposal.

As legend goes, Sherman unassumingly added Schwartzs Jewish pickling spices to the liver steaks as he grilled them.

Since he was grilling right in front of the customers, people noticed what he was doing. They requested the same seasoning on their food too. And with that, Montreal steak seasoning was born.

The seasoning became so popular in the community that Schwartzs deli began selling the seasoning mix to its customers.

Soon other Montreal delis and steakhouses began duplicating the recipe for their customers.

At first Montreal steak seasoning was only sold locally. But that changed when the flavor experts from McCormick Canada visited Montreal in the late 1980s.

They fell in love with the seasoning and decided to bottle and sell it. Originally, they intended to sell the spice blend to restaurants only.

But even after distributing samples to chefs in restaurants, no orders came.

    Ingredients Needed For This Dish

With this Better Belly Steak recipe, I use a cast-iron pan. It really does make a difference, especially if you cant cook on the grill. I highly recommend getting one, even if its the small one. You can find them on .

As for other ingredients, I used McCormick Grill Mates 25% Less Sodium Montreal Steak Seasoning. This has amazing flavor and its gluten-free! It also comes in regular sodium and 25% less sodium. Delicious!

I also use Kirklands Frozen Organic Green Beans. Love these things. They come pre-washed. And for my other side I simply visit the frozen veggie section at the grocery and pick up Green Giant Simply Steam, Riced Cauliflower Italian Style. This is actually my new go-to when Im running low on time.

The Best Way To Grill A Steak

  • Start by taking the meat out of the refrigerator and allowing it to come to room temperature. For a steak, about 20 minutes.
  • High heat on the grill, heat it up!
  • Of course your steak is already oil and seasoned with Montreal Steak Seasoning, but if not brush it lightly with olive oil and season well.
  • Grill to your degree of doneness, get that steak charred and golden brown because that is what will give it big flavor.
  • After removing from the grill, allow it to rest on a platter, loosely covered with foil. This gives the juices time to redistribute into the meat. It makes your steak that much more flavorful, juicy and tender!

    Smoky Montreal Steak Seasoning

Every time Im grilling, I like to add a little smoke wherever possible. I know not everybody owns a smoker, so I introduced smoked paprika to my Montreal seasoning recipe to bring some of that open wood fired flavor. This ingredient is optional, but I absolutely love the hint of smoke in the blend! Luckily, it is pretty easy to find on any grocery store shelf!

What Is Mccormick Smoked Meat Seasoning Mix

Originally, this spice blend was inspired by the dry rub that is used to make Montreal smoked meat, a cured and smoked beef brisket that is popular in the United States. It gained popularity in Montreal after someone began putting it on steaks and ribs, and later, spice manufacturer McCormick began selling the blend in delis and steakhouses throughout the province.
