Sirloin steak is one of my favorite cuts of meat. Its relatively inexpensive, flavorful, tender and readily available at most grocery stores. My favorite way to enjoy this cut of meat is with a simple pan sear, and a dollop of garlic butter on top.

Tips For Cooking Sirloin Steak

  • One of the biggest myths in cooking steak is that you should never start out with cold meat. We have been told for years to set steaks out for a least an hour before cooking. That is simply not true. If youre wanting a steak that is nice and seared on the outside, but pink and juicy on the inside, you should cook your steak straight out of the fridge.
  • Allow for residual cooking. When cooking steak, whether it is one the grill, in the oven or stove top, you want to remove it from the heat when it is about 5 degrees less than the desired temp on an instant-read thermometer. The temperature will continue to rise while the meat rests.
  • Always allow steaks to rest: Steaks, just like most any meat needs to rest for about 10 minutes after it has finished cooking. This allows all those yummy juices to redistribute through the steak.
  • For really juicy steaks, you want to look for ones that have a good bit of marbling that is well distributed through the steak.

How Do You Cook Sirloin Steak

Start by patting your steaks dry with a paper towel. Removing the moisture from the exterior of the meat will allow for a nice brown crust to develop. Season the meat generously with salt and pepper, then cook it over medium high heat in a heavy skillet. Cook the meat to the desired level of doneness, then let the steak rest for at least 5 minutes. Place a scoop of garlic and herb butter over the steak, then slice it and serve.

How to Cook Petite Sirloin Steak Inside

There is a certain level of confusion regarding the use of the term sirloin when it comes to beef steak.

Despite the fact that they share a name, top sirloin steak and sirloin tip steak are two very different cuts. The reason is that they come from two anatomically different parts of the animal one that does less work and one that is heavily used for support and movement.

  • Top Sirloin Steak cut from the sirloin primal cut tender and lean relatively expensive also known as cap off or simply sirloin steak

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

  • 1Cut the steak into serving sized portions. Use a plastic cutting surface to avoid contaminating a wooden cutting board.
  • 2Prepare the grill. Brush the grill with cooking oil, and preheat it to a medium high temperature. Allow the grill to get thoroughly heated.
  • Take care not to let the grill get too hot, or you’ll end up with charred steak that’s raw on the inside.
  • 3Place the steaks on the grill surface. Cook it for approximately 4 minutes on the first side. Use tongs to flip them over after the first side has grill marks and has formed a brown crust. Grill the other side for an additional 4 minutes.

  • Pat dry use paper towels to pat the steaks dry to get a perfect sear and reduce oil splatter.
  • Season generously just before cooking steaks, sprinkle both sides liberally with salt and pepper.
  • Preheat the pan on medium and brush with oil. Using just 1/2 Tbsp oil reduces splatter.
  • Sear steaks add steaks and sear each side 3-4 minutes until a brown crust has formed then use tongs to turn steaks on their sides and sear edges .

Then, add the steaks to a cast-iron pan over high heat for 1-2 minutes, flip then put the skillet into the oven for 10 minutes or less depending on how thick the sirloin is. Again, let the steaks rest for 5 minutes before slicing into.

    How to Cook Petite Sirloin Steak Inside

    Prep & marinate.Be sure to use a meat tenderizer mallet if the steak was not already blade tenderized. Mix a marinade and coat the sirloin tip well. Marinate covered and refrigerated for at least 6 hours and up to 24. This cut of beef really benefits from a prolonged marination.

    Quick sear. Bring the steak to room temperature before you cook it. Discard the marinade and lightly season with salt and pepper. Heat a grilling pan or cast iron skillet over medium-high for 2-3 minutes and once hot sear the sirloin tip for about 1 to 2 mins per side. Alternatively, heat your outdoor grill to medium-hot and cook for 1 to 2 mins per side.

    Rest & slice. A couple of minutes of rest will suffice because this is a thin cut. Slice against the grain as a final way to create a more tender and easier to chew bite of steak.

    Easy Grilled Sirloin Steak With Garlic

    Ingredients:

    • 2 8 ounce top sirloin steaks
    • 2 TBS extra virgin olive oil
    • 1 or 2 cloves of garlic, minced or pressed
    • 1/2 tsp course sea salt or Kosher salt
    • 1/2 tsp freshly ground black pepper

    1. Preheat your George Foreman grill for 5 minutes with the top closed.

    2. In a small bowl, mix together the EVOO, garlic, salt, and pepper. Place the steaks on a large plate and coat them on both sides with this seasoned mixture, pressing it into the meat with your hands.

    3. Place the steaks on the grill and close the top. Cook for 4 minutes and check the internal temperature with a digital meat thermometer. You are looking for 125°F for medium rare and up to 155°F for medium well. Continue grilling until you achieve the desired doneness. Keep in mind that the steaks will continue to cook while resting, so take them off just shy of the desired temperature.

    4. Remove the steaks to a clean cutting board and allow them to rest for 5 minutes before serving or slicing. Dont skip this step as it will help to keep the steaks moist.
