Season Both Sides Of The Steak With Salt And Pepper
The best way to cook a steak is with some salt and pepper. Toss the meat on both sides until its coated, then place it into an oven heated up at 350 degrees Fahrenheit for 15 minutes or so before turning down heat slightly .
A great rule of thumb when preparing any type of meat such as beef: always season early do not wait until the last minute! This will ensure maximum flavor absorption which can lead to your dish being announced rather than concealed by spices as many people do nowadays due in large part because were all running around doing it.
How To Do A Reverse Sear On A Pellet Grill
1) For this method you turn the burners down to 150F and place your food over indirect heat. Cover the grill and let it cook slowly.
2) After around 30 minutes you can start checking for doneness with your remote thermometer probe .
For 1 thick steak, medium rare will be somewhere between 138F 145F. Adjust the temp accordingly if you want to change that range.
Youll know its done when the internal temperature of the meat reaches about 130F , or 135F .
3) When close to target temperature, place steaks over direct heat over high flame for about 90 seconds per side or until nicely charred on both sides. Flip them frequently to avoid flare-ups.
4) Remove steaks from grill, cover loosely with foil and let rest for 10 minutes before serving.
How Do You Know When To Flip A Steak
I actually determine that by the internal temperature. If the internal temperature of the meat is 50 degrees when I put it on the grill, and I want to cook it to 125 degrees. I need to raise the internal temperature by 75 degrees, so that means halfway would be when the meat has come up 37 degrees or reached an internal temperature of 87 degrees. It has come halfway up to the desired temperature. I hope that helps.

Reverse-sear refers to steaks and other meats brought to the desired doneness through a low and slow cooking method like roasting or smoke cooking. After this, the meat is seared at high temperature. Tips And Tricks For Heat Searing On A Pellet Grill
When you are preheating your pellet grill, make sure you set your grill to the smoke setting. Keep the lid open and monitor the flame. Once smoke forms, you can shut the lid, wait about 10 minutes and you are ready for searing.
Under this method, it is recommended that cast iron is used against steak for even cooking and searing. Poke into your steak to see the center. This method results in rare centers, but make sure the meat is cooked the entire way through.
What Spices Go Well With Steak
When cooking beef, opt for spices and herbs that have a strong flavor on their own, and will complement the strong flavor of beef.
Every cut of steak is different, but many of the herbs that go well with steak are:

Lets get started. Im going to show you how to set up your grill and cook a tasty steak, and share some of my favorite tips for getting perfect steak sears on a pellet grill!
STEP 1: PREP YOUR STEAK
The secret to cooking the best steaks is in the prep work before it even hits the grill. A good quality cut of meat is always important, but it starts with making sure you choose the right size and thickness based on how you like them cooked.
I prefer using ribeyes that are either bone-in or just over an inch thick, see this excellent article from AmazingRibs.com for more details on choosing a steak. Choosing quality steak will help you make sure a delicious pellet grill steaks.
You can use other cuts of meat for this, like strip steaks and filets mignon, but Im going to focus on ribeyes in this post.
Once youve got the steak ready, well need to prep it before we cook using a couple of steps that improve the flavor and bring out the juices.
First up is dry brining. This process takes time , but I find it gives better results than wet brining because it allows more time for salt penetration which helps with flavors.

Next up is dry searing your steak by cooking at a high heat directly over the flame. This sears the outside and seals in all that flavor and juice, while leaving a nice crust on the steak. To do this:

You Need A Meat Thermometer
If you dont have one, invest in a meat thermometer. Now Ive seen cooking shows where Gordon Ramsey touches the outside of a piece of meat and he just knows if it is rare, or overcooked. Let me tell you, Im no Gordon!
But a meat thermometer will let you cook a steak to the perfect temperature, just like any well-seasoned chef.
We cook our steaks to medium rare. Once your steaks reach between 125 to 135, take them off the grill . Let them rest!
The hard sear on the outside will finish cooking the steaks once they are taken off the heat, while they are resting, and will prevent your steak from being overdone.
Key To Success #2 Preheat The Grill Using Fruit Or Nut Wood
The first step to grilling on a Traeger is preheating the grill.
It may take your Traeger 15-20 minutes to get up to grilling temperature so keep this in mind when you are planning your meal.
Were preheating the grill to 375 degrees F for these sirloin steaks.
I recommend using any fruit or nut wood when grilling steaks. You can use apple, cherry, pecan, or a combination of these.
If you like more of a smoky flavor, you could use oak or hickory or another hardwood.
Hickory in particular creates more smoke so it would add more smoky flavor during this relatively short cooking time.
Some of the Traeger models have electronics that will allow you to monitor the internal grill temperature remotely from your smartphone.
Make sure the grill reaches 375 degrees F before adding your meat.
I highly recommend putting down a non-stick mat on your grates when your grill has preheated.
If you notice the grid pattern instead of grill marks on my steaks, this is from the non-stick mat.
The mats help your grill and grates stay cleaner during cooking and will prevent smaller foods from falling through the cracks.

Remove Your Steaks From Your Pellet Grill While You Preheat It
After smoking, you want to take your steaks off the grill while you preheat it to the highest heat setting possible, around 450-600 °F. Let your grill preheat for 10-15 minutes before reintroducing the steaks. Then, cook your steaks to your desired doneness.
Whether you like it rare, well done, or somewhere in the middle, your pellet grill steaks wont disappoint if youve followed all the tips up to this point.
Doneness Use One Of These Methods:
Cut into the steak in the center. Rare meat will be red medium rare will have a little red in the center turning to pink medium will have some pink in the center medium well will have a mostly gray or brown color.
Use the touch test. Rare will feel soft and only a little springy, with very little resistance. Medium rare will feel firm and springy, with some resistance against your finger. Medium/medium well will be firm and will snap back when pressed.
Use your meat probe. The USDA recommends that you cook steaks to a minimum interior temperature of 145°F . If you do so, your meat will be gray to brown and about as tender as a bicycle tire. The reality is that you risk getting sick from steaks cooked to lower interior temperatures. I enjoy rare steak enough to risk it, but you may not.

How To Season Kansas City Steak
Anything more than salt and pepper on a steak makes me a little skeptical. Before you season the steak, pat the steak with a paper towel to remove any excess moisture from it. We don’t want to steam the steak and it will be harder to get a clean sear if there is any moisture.
Once the steak is dry, sprinkle the steak with some coarse kosher salt and rub it into the meat on both sides and the edges. Then apply freshly cracked pepper to both sides. If you do want to apply any other seasoning or fresh herbs, you could apply that now. When I use a nice cut of meat, I really want the steak to be the hero of the flavor profile, not an overload of other seasonings.
How To Grill Ribeye Steak
For the best and most evenly cooked steak, youll want to take your steaks out of the refrigerator and allow to reach room temperature for about 30 minutes before you plan on grilling them. This allows the steak to cook more evenly.
Theres no need to pre-season your steaks at this point, but you will want to make sure that the surface is dry before putting them on your grill. So give them a shake of salt and pepper right before they hit the grill but after you pat them dry with a paper towel.
The key to a good sear is high temperature. So get it hot and let the grill do its thing if you are doing a traditional grilled steak.
Im including instructions here for both a traditional grilled steak and a reverse seared steak also. I prefer the reverse sear, but it takes about 3x as long as a regularly grilled steak so if you are pinched for time, either option is totally awesome.

Three Heat Up The Grill Grates For Searing
Pellet Grills work great for smoking large cuts of meat like brisket, pork butt, and ribs, and maintaining a near perfect consistent air temperature, much like the best competition smokers promise to do.
The downside is their ability to sear at high heat like you would over direct coals or a propane gas burner.
In order to get the best of both worlds, we recommend coupling some Grill Grates with your pellet grill.
Grill Grates are specialtywellgrates that sit right over the existing grates on your pellet grill that help capture and direct all that ambient heat and give you a nice searing station in the corner of your pellet grill.
They claim to get temperatures up to 200°F HIGHER than the temperature you set your pellet grill, meaning even if your nice Traeger only goes up to 400°F on the control panel, you can still sear some steaks, pork chops, or chicken at 600°F at the beginning or end of the cook to give them a nice sear.
Make sure to measure the size of your current grilling area.
While you absolutely CAN cover your entire pellet grill with Grill Grates, like if you were doing a batch of burgers for a big party, in our case we only want to cover PART of the pellet grill, maybe 1/3 to 1/2 of the cooking area for our pellet grill steaks.
