If theres one thing any steak fan knows, its that there are many different cuts in a cow that can be used to make a steak. Are You Choosing The Best Cut Of Beef For Your Steak

The Spruce Eats / Ellen Lindner

The first step in cooking a perfect steak is choosing the right cut of beef. You want one that’s tender and has plenty of marbling. In general, the best cuts of beef for steak come from the rib, short loin or tenderloin primal cuts. Examples:

Tenderloin steaks can also be taken from the butt or back end of the tenderloin where a small seam of connective tissue may run through the steak, making it less desirable than the filet mignon. Chateaubriand comes from the center cut of the tenderloin.

Did I Answer Everything You Want To Know About Purchasing Steak At The Grocery Store

Top 10 Steak Buying Tips

In this article, we went over all the things you need to know about purchasing steak at the grocery store.

We went over what makes a great steak.

Then we talked about what supermarkets have the best quality meat and how to pick a steak at the grocery store. We also went over USDA meat grades and the differences between grass-fed and grain-fed beef.

Of course, we also talked about what makes one steak better than another.

Then we looked at which supermarkets have the best quality meat and how to pick a steak at the grocery store. We answered all the top questions too, about things like USDA meat grades and grass-fed versus grain-fed organic beef.

Ultimately we answered the question of which grocery store has the best steaks?

My pick for quality, consistency, price, and availability is Whole Foods Market. After all, they operate over 400 stores in multiple countries. While some place like Wegmans on the East Coast also has great steaks, I cant give them the win since they dont operate in most parts of the country.

Small butcher shops, of course, could be well worth checking out too if you have one. But anywhere you can find USDA Prime or at least Choice beef, ideally organically grown and grass-fed, get it! Youll have a great steak!

I would steer clear of buying meat from places that only sell USDA Select beef and also steer clear of places that dont have butchers on staff who cut their meat fresh. Trader Joes and Aldi come to mind there.

Which Supermarket Has The Best Quality Meat

There are tons of supermarkets out there, so this article is going to focus on a handful of well-known supermarkets.

When shopping for meat, you should look for good marbling and nice red color with no brown spots.

Another factor in the quality of meat is whether the cow is given growth hormones or antibiotics. Animals fed right and treated humanely are not just for marketing. They make for better tasting, healthier meat. As a bonus, you can feel good that the cow lived its best life before it landed on your plate.

Cut Above The Rest Five Best Cuts Of Steak

Im sure youve shopped in a butcher for a cut of steak and had a dose of sticker shock. How much does the price tag say? One of the first things you learn about steak is that it is well worth the price to get a good quality and tender meat. Theres nothing worse than an overcooked, leathery cut of steak that has a texture of a gumboot. No thanks.

What are the best cuts of steak? Hint, its not chuck or shank. Mind you, theres nothing as comforting as a warm stew or slow-cooked shanks. These cuts certainly have their place.

What are the five best cuts of steak and why are some cuts so expensive? Without giving you a lesson in cow anatomy, the basic idea is that the muscles that get the most work out will be the least tender. The legs get a fair bit of work while the back of the cattle uses little muscle

Sirloin

Sirloin steak is often a steak lovers favourite cut. This premium cut comes from the hindquarter of the animal and is extremely tender. It is perfectly suited to be sauteed, grilled or pan fried. Firm in texture, with a rich flavour, it has a juicy and melt-in-your mouth taste. Just dont overcook it. Known as different names including Porterhouse, New York Steak or New York Strip. As sirloin can tolerate high temperatures, it can be grilled, pan fried, BBQed or sautéed.

How To Buy A Steak

Its steak night at your house. Youve got the grill ready to go. You just need the steak. There are a lot of choices and if you dont buy steak every day the decision about which cut to buy can be confusing. Well get to the meat of the matter, with butcher, Bruce Atkins, from The Butcher Block in Franklin, Tennessee.

Notice the interior marbling of the meat, not the exterior fat. Atkins says the marbling is where all the flavor and tenderness live.

Prime grade beef is the best you can buy, but its not normally what youll find at the grocery store. Look for Choice grade steaks, which is the next best category. Avoid Select grade beef, the lowest grade.

Vacio Or Bavette Steak

How to Buy a Great Steak | Top Tips

One of the steaks you might not have heard of is the vacio steak, an extremely popular steak in Argentina . The vacio is a primal cut of the flank, but it’s actually quite different from a flank steak. In the cow, the vacio hangs beneath the loin and is bolstered by the cow’s belly, which encases the meat in layers of fat. When butchered, the vacio steak has an unusual diamond shape, weighs between four and five pounds, and can feed a good-size party of hungry Argentines . It’s always slow-grilled whole, then sliced, and the well-marbled meat is tender and very flavorful. The crispy belly fat is almost as cherished as the steak itself.

In France, the vacio steak is called the bavette d’aloyau. It’s the exact same cut, but as you might expect, it’s cooked in the French way. The bavette is cut into individual steaks and is either marinated and grilled or pan-fried in butter and served with a shallot sauce and French fries. So, the next time you’re sipping wine in a bistro on the Champs-Élysées, and see steak-frites on the menu, order it, and enjoy a steak that’s loved on two continents.

Choose Well Aged Meat

The process of aging meat is an important one, often overlooked by supermarkets in the rush to cut down on processing time and costs, as meat being hung in storage costs time and money. As meat is hung, the enzymes present start to slowly break down the structure, which creates a much more tender texture, and enhances the beef flavour too. The meat is succulent without drips of blood, and with a deep dark red colour, and an unmistakeable aroma. The longer that meat is hung for, the more these attributes develop, which is why all Dorset Meat Company steaks are aged for at least 28 days in our dedicated drying room.

Getting Started With Buying Your Steak

The first step to buying a great steak is to look at the components we discussed in Part I of this guide, in order to determine your preferred cutwhether that be a ribeye, a tenderloin, a New York Strip, a sirloin, or a t-bone or porterhouse.

Assortment of Steak Cuts at the butcher

Second, you look at the flavor profile. Is it grass-fed is it grain-fed or maybe grain fed with grass finish? Of course the size and the thickness of the steak are also very important. Most grocery-store steaks are usually cut very thin, while most chefs prefer a 1- to 2-inch thickness. At the end of the day, you should choose something that youre comfortable cooking, because both can be over- and under-cooked. In our experience, we recommend slightly thicker cut steaks, as they preserve a bit of that nice pink area inside when prepared medium-rare.

If You’re In A Grilling Rut It’s Time To Switch Things Up Check Out Our Favorite Steaks To Toss On The Grill

I dont know about you, but I often find myself in a grilling rut. Week after week, Im grilling up the same top sirloin steak, a round of burgers and vegetable skewers. Well, its time to break out of that routine! Theres a whole world of meats you didnt know you could ask for at the butcher counter. But sometimes its hard to make changeshow do you know which is the best steak for grilling and which should be saved for other cooking methods? As a former restaurant chef, I know all about the different cuts of beef. There are many steaks well-marbled and tender enough to simply toss on the grill, and there are a few that benefit from some marinade. And then, there are a few cuts Id avoid completely when it comes to the grill. Lets take a peek at which steaks fall into which category.

The Perfect Steak For You

Steaks fall into two categories. They either have great flavour or they have tenderness it is rare for both qualities to go together. The golden rule for cooking steak in general is to sear over a really high heat, then cook to your liking and rest for four or five minutes to let the muscles relax and flavours enhance. And, remember, anything from the front or rear of the animal needs to cook for longer than cuts from the middle, which is much more tender. Read on to find out what steak suits you best.

Feather blade

The inquisitive foodies’ steak. This is not a well-known cut. It comes from the shoulder blade, so there are only two in every cow, and is small, but packs lots of sweet flavour and should only ever be cooked rare or else it will toughen. It is not at all expensive.

Sirloin

The City boy or snob’s steak. From the middle back, this has a good size and is well marbled with tasty fat, but lacks true depth of flavour. It is eaten more than it used to be because modern butchers hang it to add beefy flavour. Expensive, tender and juicy, it is beginning to be sold on the bone a little more, which also adds flavour. As always, flash fry or griddle sadly grills at home aren’t hot enough these days for cooking steaks, only restaurant salamanders will do the trick.

Is Organic Beef Grass

Organic beef does not necessarily mean it was grass-fed.

Organic means that the animal was not given added hormones or antibiotics or pesticides in the food. The feed can be grass, corn or soy .

Grass-fed meat means that the animal was pasture-raised and was not fed corn or soy. Grass-fed meat is often organic, but organic does not necessarily mean grass-fed.

Because cattle that are fed grain are inherently less healthy, organic does not necessarily mean better. Studies show that grain-fed cattle have unhealthy omega 6 to omega 3 fats. They have higher saturated fat and tend to be pro-inflammatory.

Grass-fed cattle have a much healthier omega 6 to omega 3 fat ratio.

They also tend to contain more vitamins, are less likely to have E. coli, less saturated fat, and fewer calories than commercial grain-fed meat.

So, if you are looking to purchase the healthiest steak, look for organic grass-fed beef with a USDA rating of at least Choice.
