One of the most convenient ways to cook a tri-tip steak is in a cast-iron skillet or carbon-steel pan. Youll want to be sure the pan is large enough to hold the steaks without overcrowding, which can cause the steak to steam instead of getting a nice sear.
Preheat a large skillet over medium-high heat and add a splash of neutral oil until its shimmering and almost smoking. Add the steak, reducing the heat to medium. Cook for five to six minutes per side for one-inch-thick steaks. If the steaks become too charred on the outside before they reach a medium-rare temperature, transfer the pan to a 350° oven. Continue cooking until the steaks reach an internal temperature of 135°.

Sirloin Tip Steak Cooking Methods
Sirloin tip either has to be cooked low and slow for a prolonged time or briefly at a high temperature which works only if it has been sliced thin.
The first method aims at slowly dissolving the plentiful connective tissue responsible for the toughness of the cut until the meat is tender.
The second method has as its objective to quickly sear the surface and bring the meat to temperature without drying it out. Therefore for stove top cooking or grilling try to purchase thin cut tip steak that has been blade tenderized. If it has not, use a meat tenderizer to pound it thin and break up some of the connective tissue in this manner.
TIP: Blade tenderized means that the steak has been mechanically treated by passing it through a machine equipped with sharp blades or needles. These puncture the surface and break down the muscle and connective tissue rendering the meat a bit more tender.

Even though the tri tip is steak-like, its muscle fibers are long and stringy, so handling it correctly can make it chewy. Is A Sirloin Tip Steak Tender
Sirloin tip is found at the top of the short loin the same section as the round cuts. T
his section is lean and low in fat, which means its not the most tender.
It is, however, located at the tip, which is the fattiest part, making it the most tender among round steaks.
That said, while the sirloin tip isnt as tender and juicy as prime beef cuts, its still pretty okay Id say moderately tender.
If you want maximum meat tenderness, marinating the steak for 2 to 4 hours will do the trick!
Also, youll want to be sure you dont overcook the meat. Overdone sirloin tip is tough, dry, and rubbery!
So heres a tip: never cook sirloin tip steak beyond medium.
Also, use a meat thermometer to test for doneness. Its the easiest way to check!

Top sirloin steak, on the other hand, is cut from the largest muscle of the sirloin, which is an extension of the short loin.
Its located at the top of the sirloin, hence its name.
Its more tender and juicier, making it one of the best and most expensive cuts of beef.

How To Cook Steak Tips
To get started I get a heavy skillet nice and hot. You will want to turn on your vent hood or a fan because this is going to get smoky.
I cook the steak bites with avocado oil because it can withstand high heat better than olive oil. I actually do not recommend olive oil for cooking above 350Fespecially if you only buy the extra virgin variety.
Now we just take our marinated steak tips and cook it in batches. I usually do 3 batches so I dont crowd the pan.
A few minutes on each side is all you need to get the steak tips perfectly cooked.
