What Is Steak And What Part Of The Cow Do They Come From

Steak is not just any piece of meat. Steak is generally defined as a cut of meat that is sliced across the muscle fibers.

There are many different kinds of steak, each coming from different areas of the cow. Each type of steak has different characteristics.

Ribeyes come from the rib area. T-bones, porterhouse, filet mignon, and strip steaks come from the loin.

Some steaks, like skirt steak and flank steak, are cut with the muscle fibers. They come from the short plate and the flank. They also tend to be tougher than other steaks.

Arguably, one of the hardest things about cooking steak at home is picking and purchasing steak at the supermarket. Its not surprising, either. There are a ton of choices!

Grass Fed Isnt Always 100% Grass Fed

Portland, Oregon, butcher Camas Davis told HuffPost that she commonly sees beef advertised as grass fed in the supermarket, when she knows its grain finished.

I know because I always ask, Davis said. She is the founder of The Good Meat Project, offering butcher and slaughter workshops to help people learn how meat gets to their tables. If theyre not saying its 100% grass fed, I almost always assume that its grain finished, she said.

Davis doesnt think the labels are intentionally misleading, but rather that theres a lot of misunderstanding. I think a lot of times the grass fed label is thought of by producers and consumers to mean animals just roaming around in grass, she said.

How prevalent is beef mislabeling in the grass fed world? Its hard to say for sure, said Balkcom of the American Grassfed Association. The group has obtained reports of misleading labels from the U.S. Department of Agriculture, and Balkcom said it appears a very large number of grass fed claims are deceptive.

The grass fed label is ill-defined and open to abuse, says a 2017 report by Stone Barns Center for Food and Agriculture, a nonprofit that promotes sustainable agriculture. The report points out that some cattle that spend only half their lives on pasture can qualify as grass fed, as do cattle that live on pasture full time and are fed grains during finishing. It cites the egregious example of a grass fed claim for feedlot cattle that were fed grass pellets.

What Makes One Type Of Steak Better Than Another

We all have our own idea of what makes a steak good.

The same applies when we talk about better steaks. For this article, were going to assume that the better steak is super flavorful yet tender. Were also going to assume that cost is not a factor.

Filet Mignon comes from the tenderloin portion of the cow.

It contains very little fat and comes from a non-weight-bearing muscle. This, along with it not containing much connective tissue makes it the most tender cut of meat. However, the lack of fat does not make it the most flavorful.

This is why it is usually served with some sort of sauce or wrapped in bacon.

Strip steaks, like the NY Strip, is a good balance of flavor and tenderness. Its got some fat in it, making it more flavorful than the filet mignon. Its also a well-worked muscle, making it less tender.

The Ribeye is the most flavorful cust of meat. Look for high marbling. This is the white swirling youll see in the steak. The more marbling, the more flavorful the steak. If cooked with care, it can also be very tender.

So, what makes one steak better than another steak? A good amount of fat and cut from an area that doesnt do much work .

What Grass Fed Really Means And Why

Genuine, grass fed beef comes from animals that lived on pasture, foraging on nothing but grasses, from birth to harvest. According to the strict standards of the American Grassfed Association, which offers a certification program for producers, thats the main requirement.

Simple, right? But the beef supply system gets complicated. You see, almost every animal raised for beef is grass fed for most of its life. But its the last few months, the phase called finishing, that makes a difference.

Nearly all beef cattle in the U.S. 95% are finished on rations that include food waste, silage and grains in feedlots known as concentrated animal feeding operations. The remaining 5% of grass fed cattle remain on pasture eating fresh or stored grasses. The American Grassfed Association discounts hard numbers about the size and value of the grass fed market because no one tracks authentic all-grass fed all the time versus beef labeled grass fed, according to executive director Carrie Balkcom.

Trouble is, there is no federal government standard or enforcement for any grass fed label. On top of that, most of the grass fed beef sold at Walmart and other major chains is imported from Australia, Uruguay or other countries, but may still be labeled product of the USA. Its hard to know what youre getting.

All you need to do is cook and enjoy. If youre in a hurry, we sell meat thats already marinated and seasoned.

Is Organic Beef Grass

Organic beef does not necessarily mean it was grass-fed.

Organic means that the animal was not given added hormones or antibiotics or pesticides in the food. The feed can be grass, corn or soy .

Grass-fed meat means that the animal was pasture-raised and was not fed corn or soy. Grass-fed meat is often organic, but organic does not necessarily mean grass-fed.

Because cattle that are fed grain are inherently less healthy, organic does not necessarily mean better. Studies show that grain-fed cattle have unhealthy omega 6 to omega 3 fats. They have higher saturated fat and tend to be pro-inflammatory.

Grass-fed cattle have a much healthier omega 6 to omega 3 fat ratio.

They also tend to contain more vitamins, are less likely to have E. coli, less saturated fat, and fewer calories than commercial grain-fed meat.

So, if you are looking to purchase the healthiest steak, look for organic grass-fed beef with a USDA rating of at least Choice.
