  • Pick up some bison sirloin steaks. Bison can be found more readily these days with the rise in popularity of bison farming. Check with farmers markets, co-ops, and high-end grocery stores. Or go online and see if you can find a bison ranch near you, or one that ships.
  • Season the bison sirloin steaks. With a good cut of meat like this, I recommend seasoning it simply with sea salt and black pepper. If you really wanted to, you could hit it with a little fresh garlic or lemon juice, but it really doesnt need it
  • Grill the bison sirloins over high heat. Heat up the grill to high for a few minutes beforehand, and clean the grates really well. Then wipe them with a little vegetable oil just before you grill the steaks. Grill them for a couple minutes, then rotate them 45 degrees to make the diamond grill marks.
  • Grill the other side and let them rest. Flip the steaks over after five minutes on the first side. Let them grill for a couple more minutes, and then check the internal temperature with a digital thermometer. Rare 120125 degrees F, medium rare 130140, medium 140150, medium well 150160. Once done, let them rest uncovered for ten minutes. Serve with a little butter if you think you can handle it.

  • Take the ribeye steaks out of the cooler. Meat cooks best from at or near room temperature. If you take the steaks out of the fridge for an hour before you plan to cook them, they should be at a good temperature for cooking. The steaks shouldnt need any trimming, and dont worry about fat. That can be easily cut away after cooking, if its preferred. Some people, like myself, like to eat the fat, especially if its all caramelized and delicious.
  • Season the ribeye steaks simply. As I always recommend for steak, season them as simply and plainly as possible. Let the flavor of the meat be the reason you eat steak. If you start adding a bunch of herbs and spices, the flavor of the meat gets lost in the chaos. For these steaks I used some sea salt, some fine ground white pepper, and some coarsely ground black pepper. Make sure you season the sides too. Let the steaks sit for a minute and then rub on some vegetable oil.
  • Let the broiler get really hot before putting the bison ribeyes under it. The broiler will take at least 10 minutes to get up to heat. Move the top rack down a rung to the second shelf location. You will not need to oil your broiling pan if you oil your steaks. In fact, oiling the broiling pan will only create smoke. When the broiler is up to heat, put the steaks on the pan and underneath the broiler. Close the door and let them be for 34 minutes.

    So how do you tell the difference between buffalo and bison? Bison have large humps at their shoulders and bigger heads than buffalo.
