Porterhouse Steak The King Of The Bison T

There is just a small difference between a T-bone and a Porterhouse steak. They are both cut from the short loin section and therefore are superior cuts of meat. This cut comes from the rear end of the short loin and contains a larger portion of filet. While the T-bone is cut from the front end of the short loin which is the smaller filet.

A porterhouse must be at least 1 1/4 thick and the filet on the T-Bone must be 1.2 thick. Any filet over 11/4 thick is a porterhouse.

How Long To Cook A Bison Ribeye Steak

Cook time for a bison steak will vary depending on your preferred doneness. Heres a general time guide for how long it will take to cook this steak with your grill preheated to High .

  • Rare : 4 minutes
  • Medium : 6 1/2 minutes
  • Medium-Well : 8 minutes

I do not recommend cooking bison past medium. Bison meat is very lean, so it should not be overcooked. If you stick to pulling the meat when the internal temp reaches 145 degrees F, youll be set to enjoy a beautiful bison ribeye.

Tips For Making Bison Steaks

Smoked Bison Ribeye Steak on Pellet Grill | Reverse-Seared Bison Ribeye

Here are some tips to making the most flavorful, perfectly cooked bison steaks every time.

  • Consistency is key. Look for rib eye steaks that are consistent in thickness. I prefer them to be closer to 1 inch thick for this method. The repetitive flipping and high temperatures are well suited to steaks that arent super thick.
  • Get creative! Mix up the flavors in the resting butter. This version is heavy on herbs and horseradish. If you dont love those ingredients, check out my Steak Resting Butter for another option and ideas for new flavors.
  • Add some smoke. If you want to add a little smoke to your steak cook, add a handful of hickory chips to your charcoal right before putting the steaks on or make a wood chip foil pouch if you want to smoke on a gas grill Final thoughts.

The Secret Is Using The 4

Ribeye steak should be cooked medium rare. Easier said than done, right? Well, it really is that simple, and we’re going to review exactly how to do it.

A favorite technique for cooking a boneless ribeye steak is on a cast iron skillet using the 4-3-2 method:

  • Sear the steak in a dry skillet for 4 minutes.
  • Flip it and sear the other side for 3 minutes.
  • Let it rest for 2 minutes.
  • Note that this technique is best for when you’re cooking one or at most two ribeyes. And you can really only do two if you have an extra-wide skillet.

If you need to do more than two, you’ll need to cook the steak on the grill instead. Or maybe you have multiple cast iron skillets, in which case great.

How To Cook Bison In A Sous Vide

Here is a breakdown and some tips for the recipe but make sure to scroll down to the printable recipe card for all the details.

  • Preheat the sous vide to the temperature that you want your steak cooked. See the temperature chart below.
  • Season the steaks with salt and pepper then place them in a sealable bag.
  • Add the olive oil and herbs to the bag then remove the air from the bag and seal it.
  • Place the bag in the pre-heated water and let it cook to your desired doneness. See the chart below for the minimum cooking times.
  • Remove the steaks from the bag and dry them with a paper towel.
  • Get a skillet smoking hot and heat some oil that has a high smoke point. Sear the steaks on each side for 1 minute or until it has a brown crust
  • Make the peppercorn sauce in the same pan that you sear the steaks in.

Is It Better To Cook A Steak In The Oven Or Stove

As opposed to finishing the steaks on the stove top, transferring them to the oven stops the searing at the ideal point, allowing the interior of the steak to continue cooking without burning the exterior. Depending on the thickness of your steaks, they should take no more than 7 minutes for medium-rare doneness.

Grilled Bison Sirloin Steak: Seasoned With Sea Salt And Black Pepper Then Grilled Quickly And Buttered

  • Pick up some bison sirloin steaks. Bison can be found more readily these days with the rise in popularity of bison farming. Check with farmers markets, co-ops, and high-end grocery stores. Or go online and see if you can find a bison ranch near you, or one that ships.
  • Season the bison sirloin steaks. With a good cut of meat like this, I recommend seasoning it simply with sea salt and black pepper. If you really wanted to, you could hit it with a little fresh garlic or lemon juice, but it really doesnt need it
  • Grill the bison sirloins over high heat. Heat up the grill to high for a few minutes beforehand, and clean the grates really well. Then wipe them with a little vegetable oil just before you grill the steaks. Grill them for a couple minutes, then rotate them 45 degrees to make the diamond grill marks.
  • Grill the other side and let them rest. Flip the steaks over after five minutes on the first side. Let them grill for a couple more minutes, and then check the internal temperature with a digital thermometer. Rare 120125 degrees F, medium rare 130140, medium 140150, medium well 150160. Once done, let them rest uncovered for ten minutes. Serve with a little butter if you think you can handle it.

More About The Charred Bison Ribeye Recipe

Bison is one of the most delicious red meats that you can buy. Not only does it have less fat, as I said above, but that means you have a leaner & more healthy piece of meat to cook over fire. My Charred Bison Ribeye recipe helps make sure that you can cook this for keto or even paleo based diets. Add some brussel sprouts on to the grill and you are ready to meal prep for the whole week. Whatever you do, just know that this Charred Bison Ribeye is absolutely packed full of flavor!

Broiled Bison Ribeye With Sea Salt And Pepper And Topped With A Knob Of Butter

Bison(Buffalo) Rib Eye Steaks on the Weber Kettle
  • Take the ribeye steaks out of the cooler. Meat cooks best from at or near room temperature. If you take the steaks out of the fridge for an hour before you plan to cook them, they should be at a good temperature for cooking. The steaks shouldnt need any trimming, and dont worry about fat. That can be easily cut away after cooking, if its preferred. Some people, like myself, like to eat the fat, especially if its all caramelized and delicious.
  • Season the ribeye steaks simply. As I always recommend for steak, season them as simply and plainly as possible. Let the flavor of the meat be the reason you eat steak. If you start adding a bunch of herbs and spices, the flavor of the meat gets lost in the chaos. For these steaks I used some sea salt, some fine ground white pepper, and some coarsely ground black pepper. Make sure you season the sides too. Let the steaks sit for a minute and then rub on some vegetable oil.
  • Let the broiler get really hot before putting the bison ribeyes under it. The broiler will take at least 10 minutes to get up to heat. Move the top rack down a rung to the second shelf location. You will not need to oil your broiling pan if you oil your steaks. In fact, oiling the broiling pan will only create smoke. When the broiler is up to heat, put the steaks on the pan and underneath the broiler. Close the door and let them be for 34 minutes.

What Is Difference Between A Bison And A Buffalo

So how do you tell the difference between buffalo and bison? Bison have large humps at their shoulders and bigger heads than buffalo. They also have beards, as well as thick coats which they shed in the spring and early summer. Another simple way to tell a buffalo from a bison is to look at its horns.

The Goal: A Very Hot Pan

What you’re trying to do is avoid overcrowding the pan, because it needs to be absolutely smoking hot. Dropping too many steaks into a hot pan will instantly cool it off, causing your steaks to sort of steam rather than sear.

Cast iron is specifically recommended because it gets very hot and it holds its temperature for a long time.

The reason this technique works best with a boneless ribeye is that you want to get a nice tight seal between the meat and the pan. Sometimes the bone can get in the way.

Finally, the 4-3-2 technique assumes that your ribeye steak is 1 inch to 1 1/4 inches thick. If it’s thicker, you’ll need to cook it longer. And under no conceivable circumstance should a ribeye steak be thinner than an inch.
