Though this marinade will work on any cut of steak, its true that some are better than others, depending on your personal tastes. I tend to go for a leaner cut of beef, like t-bone, top loin, tenderloin, or ribeye. But, that doesnt mean I dont purchase other cuts of steak.

Allow for 15-20 minutes of resting time on the counter. It will not harm the meat if you cook it for a longer period of time, but it will not make it any more tender.

Sadly, there are some downsides to marinating steak that you should be aware of.
This cant be considered a comprehensive list because everything has its pros and cons, but here are some major disadvantages of marinating steak.
- Adds extra step to cooking that not everyone wants to take
- Requires planning ahead as the meat needs time to absorb flavors
- Can generally only apply to tougher cuts since they would require more tenderizing
When you marinate, the flavors of your spices will penetrate into the meat.
This means that if you plan on grilling your steaks and adding seasoning after they are cooked, it wont work so well because the marinade flavor has already been added.
If you want to add traditional seasonings to your grilled steak, you should add them beforehand.
This is because over time some of the flavorful juices will be drained from the meat while it absorbs all that new flavor.
So, if you plan on marinating some steaks overnight you are going to want to keep them in the fridge while they catch up on their beauty sleep.
Luckily, marinating steak for a shorter amount of time isnt necessarily bad because it still allows enough time for the flavors to seep through without making your meat too soft.

4 Techniques for Tenderizing Steak
Best Steak Marinade In Existence
- cup fresh lemon juice
- ¼ cup Worcestershire sauce
- 1½ tablespoons garlic powder
- 3 tablespoons dried basil
- 1½ tablespoons dried parsley flakes
- 1 teaspoon ground white pepper
- ¼ teaspoon hot pepper sauce
- 1 teaspoon dried minced garlic
- Step 1
Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.

Whisk All Ingredients Together
Start by whisking all the marinade ingredients together. I used a 9×13 baking dish because it had a tight fitting lid, but any large ziploc bag would be fine. Just be sure to set the bag into another container incase the bag springs a leak.
Add in your meat and stir to coat. I cut my ribeye into cubes to create more surface area. More surface area means more space for the flavor of the marinade to penetrate. No need to cut up a flank or skirt steak because it already has a lot of surface area being a long and skinny piece of meat.
How To Marinate Steak
I always marinate my steak in ziplock bags which I acknowledge is not environmentally friendly, but it is the most effective way to marinade steak because it keeps the steak evenly coated with a relatively small amount of marinade.
If you want to use a container instead, use a glass or other non reactive container and I would recommend doubling the marinade.
How long to marinate steak?
12 to 24 hours is best. You can also freeze it immediately then it will marinate as it thaws!

Easy Substitutions For Steak Marinade
All of the ingredients in this marinade are important for different reasons. Try not to skip any if possible. Dont forget increments and specific directions are listed in the recipe card at the bottom of this post. Ive listed some substitutions if youre in a pinch.
Other Beef Cuts Other cuts of beef are totally acceptable with this marinade. Other good choices would be tri-tip, flank, skirt or sirloin. Honestly, any cut of beef that youd grill would be a great candidate for this steak marinade.
Root Beer, Dr. Pepper or Sprite- You use soda pop in a meat marinade simply for its delicious flavor and all that liquid sugar. It is able to penetrate the meat so deliciously! If you find yourself in a pinch, you can use Root Beer, Dr. Pepper or even Sprite in place of Coca Cola. Steer clear of diet sodas- they dont taste the same after being grilled. Im talking about you, weird after taste.
Lime Juice or White Distilled Vinegar You can substitute lime juice if you dont have lemon juice on hand. You can use it as a one-to-one replacement.
Vegetable Oil- If you dont have canola oil, vegetable oil or any light colored oil with a higher smoke point will work just as well.
Why Marinades Work Magic
- Acidor Enzyme: All great marinades will contain either an acid or an enzyme. In the skirt steak marinade, the lemon juice is our acid. It will weaken the tough fibers of the meat and enhance flavor. Creating tender flavorful meat. Do not over marinate, however, If meat sits in a marinade too long the meat will become mushy, dry, and actually tough.
- Salts: Salt plays an essential role in getting the flavors to penetrate beneath the surface of the meat. Salt is not only add on its own, but the salt found in the soy sauce and Worcestershire sauce helps too. First, the salt draws out the moisture from the meat, then as the water is reabsorbed into the meat flavors from the spices and garlic are carried with it. This allows the flavor to get deep inside the meat while helping to break down muscle fibers helping it to tenderize.

- Put it all together: When you combine acid, salts, oils with seasonings, herbs, and even sugars you allow so much more to happen to meat than just a simple brine ever could.
