Sometimes it is intimidating to me to buy steak. It is a temperamental piece of meat that needs vigilant watching while cooking. It also isnt cheap! We dont buy steak often, but when we do, there is no way I will waste it by improper cooking!

Its hard to imagine anything Gordon Ramsay does ever being second rate, and that is no exception when it comes to a little steak tutorial he has had on YouTube for several years.

Its pretty full proof, and Ive been excited to share the recipe with all of you!

Gordon Says: If you follow these simple rules, its going to be easy. Let the pan get nice and hot. If theres no heat inside the pan, theres no color. If theres no color, theres no flavor. Make sure the steak is relaxed, meaning its at room temperature. A relaxed steak will cook quicker, and wont be stone cold inside the center.

Ways To Serve A Sirloin Steak

  • 1. Hearty sirloin steak is a great choice for steak frites. Try topping your steak with sauce béarnaise, a creamy mushroom sauce, garlic butter, or a quick pan sauce, all of which double as excellent dips for the french fries!
  • 2. To make a quick pan sauce while your steak is resting, deglaze the pan with equal amounts of beef stock and red wine, scraping up all the brown bits .
  • 3. To add garlic flavor to sirloin steak without burning, try rubbing the raw steak with a cut garlic clove before cooking adding an unpeeled clove of garlic to the pan during the last few minutes of pan-searing or marinating with halved cloves of garlic or garlic powder.
  • 4. If pan-searing sirloin steak, try adding a sprig of fresh rosemary or thyme to the pan.
  • 5. Sirloin is a great option for bò lúc lc . Cube sirloin steak and marinate in garlic, sugar, salt, and soy sauce, then stir-fry until medium-rare and serve on a bed of lettuce, tomato, and sautéed onion and bell pepper. Serve with rice, french fries, or baguette.
  • 6. When it comes to wine, try pairing lean sirloin steak with a lighter red, such as Beaujoulais, or a more full-bodied rosé, like Rosato.

Oven Temperature And Time

I suggest a 400° oven. For a final internal temperature of about 145°, it usually takes 7-8 minutes. However, you can use a little lower or higher oven temperature, with or without convection, and get about the same resultsremember, you are cooking to a final temperature, not by time.

For rare, it may be almost no time in the oven if you did a strong sear with a rest to room temperature or if you steaks are thinner.

If your steak is thicker or was not rested to room temperature, or you want it more in the well-done range, it may take 12-15 minutes.

There are several variables that will determine the cooking time. The initial temperature of the steak, the thickness of the steak, the temperature of the oven, the length of the sear, and your desired finish level.

A final word to the wise, NEVER COOK BY TIME ALONE, cook to your target internal temperature.

How To Cook A Steak In A Cast Iron Skillet With Butter In Oven

Step 1. Heat a 10-to-12-inch skillet and place the skillet in a 500°F oven. Remove the ribeye from the refrigerator, and bring it to room temperature.

Step 2. Once the oven reaches 500 °F, remove the skillet from the oven and place it on the stove over medium-high heat for 5 minutes. Lightly coat the steak with oil and season both sides with a large kosher salt and ground black pepper pinch.

Step 3. Instantly lay the rib eye in the center of the hot skillet. Sear for 30 seconds dont move the ribeye. Turn the ribeye over, and cook for an additional 2 minutes. Turn over the steak with tongs and sear for an additional 30 seconds, then place the skillet straight forward into the oven for 2 minutes.

Step 4. Place a pat of herb butter on top of the ribeye, take the steak out of the skillet, cover loosely with foil, and rest for 2 minutes as the butter melts.

Where’s The Twist In This Steak Recipe

Here’s the step we changed and the twist that makes this recipe truly unique. You’ll want to start the steak with the sous vide cooking method. To begin, pour water into your pot. Set the sous vide machine time and temperature, then place it in the water. This should be pretty clear, based on the instructions that came with your particular machine.

Next, put the bag in the water for an hour and 30 minutes. For rare steak, cook it to 123 degrees Fahrenheit. For medium-rare you’ll want to hit 131 degrees and 158 degrees for well done. Be sure to submerge the bag in the water entirely to make sure that your steak is evenly cooked.

When the timer goes off, simply remove the bag from the water. Take the steak out of the bag and dry it with a paper towel if needed.

Flat-Iron Steak

Cut from the same area as the top blade but without the gristle. Its name comes from its shape, which looks like the business end of a clothes iron. This cut is inexpensive, flavorful, and tender but is not usually sold at a supermarket. You can grill, pan-sear, or slice then and stir-fry.

Primal cut: Chuck/Shoulder

Shoulder Steak

Other names include London Broil or chuck steak. This is a great 1 1/2 to 2 lb boneless steak for cost-conscious cooks because it is relatively lean with a moderately beefy flavor. It can be tough, so it needs to be cut thinly on the bias after cooking. Best grilled or pan-roasted.

Top Blade Steak

The top blade or simply blade comes from the shoulder cut and is an all-purpose steak. Although tender and richly flavored, there is a line of gristle that runs through the center of the meat, making it hard to serve the whole. You can remove the gristle and slice thin for some yummy stir-fries or cut into cubes for kebabs or stews.

Rib-Eye Steak

Cut from the rib area below the shoulder, the ribeye is basically a boneless piece of prime rib. It is a pricy and fat-streaked steak that is very tender, juicy, and pronounced beefy. In the west, sometimes these are called Spencer steaks, and in the east, Delmonico steaks. You can grill, pan-sear, or broil.

What Is The Best Steak Cut To Grill

I used filet mignon for the video below however, top sirloin and rib eyes are my ‘everyday’ go-to. )

  • Filet Mignon: The most lean, tender muscle for a soft, buttery texture, and most pricey. Best for date night or special occasions.
  • Rib Eye: Is boneless with a fatty, rib bone still attached on the side that becomes crispy when grilling. More of an intense, beefy flavor and chewier than filets.
  • New York Strip: The jack-of-all-trades as it has a bit of a chew and a little less marbling .
  • Porterhouse: It’s simply a New York Strip and Filet Mignon separated by a T-shaped bone. This is BEST grilled/broiled, and not cooked in a cast iron skillet since the meat will shrink as it cooks, but the bone will not.
  • Hanger: Taken from the front of the cow’s belly, this steak is a bargain with it’s savory flavor and relative tenderness. It’s soft texture makes it a great steak to marinate, but can be tricky when cooking. Too far = unpleasantly toothsome. Too overdone = dry to chew.
  • Flank: A relatively tough chew from the hardworking muscle fivers in this steak cut but excellent in feeding a crowd without breaking the bank! I’d recommend cooking medium rare, then slicing the meat thinly against its grain. It’s best with fajitas!

Our family loves this simple and flavorful method to make Gordon Ramsay’s Perfect Steak! It’s perfect for a special dinner at home or entertaining. Although these steaks are made in a frying pan, you could easily adjust this recipe for cooking on the grill.

  • Ribeye
  • Large grain sea salt
  • Remove steaks from fridge and let sit room temperature for 20 minutes
  • Put a pan over medium-high heat on the stovetop
  • Season thawed steaks generously with salt and pepper and rub the bottom of the steaks into excess salt and pepper on table
  • When pan begins to show any signs of smoke, place olive oil in pan and make sure pan is coated and well covered
  • Lay steaks away from you and flip every minute including rendering the fatback side
  • Add the crushed garlic, fresh thyme, and another Tbsp of olive oil in the pan around the cooking steaks
  • Add the butter and baste the steaks while continually flipping steaks on the minute
  • Remove the steaks when they reach your desired tenderness and let rest for 5-10 minutes.
  • I enjoy my steaks medium and it took 10 total minutes for the steaks to be ready as pictured!

    How To Tell If Steak Is Ready With Or Without Thermometer

    A meat instant-read thermometer is the most reliable way to test meat, but you can also measure beef by color and texture. The finger test below, collectively with how the meat looks, helps you decide when the steak is ready for your desire.

    RARE: Cook for about 2 1/2 minutes on each side until the internal temperature reaches 135° F . A rare steak feels like the base of the thumb when the thumb and index finger touch. Steak has a juicy texture while muscle fibers have firmed and the color is pinker, much moisture persists.
