Have you ever thought about why Ribeye and Filet Mignon are so expensive? This is because they are stunningly marbled or extremely tender, which is highly favored by people. Everybody loves steak cuts with these features, and the price remains elevated due to the high demand.

However, these steaks are scarce which only occupy around 8% of a cow. What about the other 92%? In order to maximize the profit, some skillful butchers try to find the relatively tender cuts within the remaining 92%. So you can find more and more new names that you have never seen before in the market, for example, Flat Iron Steak and Denver Steak.

For the beef butchers, they cut the large piece of cheap meat into smaller pieces of steak with a higher price. For us, we can enjoy tender steaks at a lower price and have more choices. Thats win-win!

  • How To Cook Chuck Eye Steak On A Grill Or Stove Top

    Lets talk for a second about how to get the BEST flavor out of these tender cuts of meat.

    First, you need to season it really well. Dont be afraid of the salt and pepper. You want to be able to see a thick coat of seasoning on each side.

    I usually season mine and place them in the refrigerator for one to two hours uncovered. This forms a nice crust on the steak.

    Alternatively, you can marinate your chuck eye steaks with balsamic steak marinade.

    Second, you can either grill them on the grill OR in a grill pan on the stove. I personally always choose the grill whenever possible. Brush the grates with a bit of coconut oil or avocado oil before placing the steak down so they dont stick.

    Third, youll also want to make a quick herb butter to top the grilled chuck steak with. I usually do this right when I season the steaks, so the butter can have a few hours to develop its flavors as well.

    You can really do whatever you want here. I just use what I have on hand. Parsley, cilantro, chives, rosemary, chiles, garlic, and different seasonings all work well.

    TIP: Use about 1 tablespoon of herbs per 2 tablespoons of butter and then whatever other seasonings you want.

    The chuck eye steak comes from the upper shoulder of the cow, the region butchers refer to as the chuck primal. Known for flavorful roasts, chuck cuts generally benefit from low-and-slow cooking methods. But because the chuck eye includes a few inches of the tender longissimus dorsi muscle, the main component of a rib-eye, it can handle the high-heat cooking methods more appropriate for steak.

    Keep packaged chuck eye steak in the coldest portion of your refrigerator for three to five days after you bring it home from the store. You can freeze raw steaks individually wrapped in plastic for three months or longer for best results and longer storage time, use a vacuum sealer.

    I had never considered the idea of grinding my own beef until I saw an episode of Americas Test Kitchen where they showed how to do it with a food processor . After I saw this technique on Americas Test Kitchen, I found that similar techniques were discussed all over the Internet. Basically, you take a whole cut of beef cut it into 1 cubes, partially freeze them, and grind in a food processor. Partially freezing helps to ensure a more consistent grind when adding to a food processor. I had made the recipe on Americas Test Kitchen previously with a leaner cut of beef on the gas grill and they turned out pretty good but I didnt get a good crust on the outside. To get a better crust I decided I would cook over charcoal using the bottom portion of my Weber Smokey Mountain.

    No, chuck eye steak and ribeye steak are not the same, but they are close. Rib eyes are from the 6th to the 12th rib of the cow and the chuck eye is from the 5th rib. Because they are located so close to each other, they do have some of the same flavor and tenderness as the ribeye.

    On account of the low amount of fat, searing over high heat with butter is the magic code for Sirloin Steak. Preheat the cast iron pan and quickly pan-sear the steak until brown. After that, reduce heat to medium, then add butter, herbs and garlic and cook to desired doneness. Butter would add an extra grease aroma to Sirloin which is exactly what it lacks.

    Its recommended to cook medium rare as this cut is lean. It will be tough and dry out if cooked too long.

    How To Cook Chuck Eye Steak On A Grill Or Smoker

    The Chuck steak can be cooked high and dry or using the reverse sear method.

    The former of these cooking methods is our favorite way to cook the Chuck Eye due to it being ever so slightly too thin to make reverse sear the preferred way.

    Heres how you grill it:

  • Remove your awesome Chuck Eye steak from the fridge and allow it to reach room temperature. Approximately 30 minutes or so.
  • Choose your weapon of choice for the seasoning, either a simple dry rub or liberal salt and pepper would be our recommendation.
  • Preheat your grill to anything from 450 F to 600 F, but set it up as a dual-zone cooker so you can move the steak away from direct heat if necessary. Oil your grates with a kitchen towel.
  • Sear your steak on the grill directly over the coals, turning it every couple of minutes.
  • Using a meat thermometer, monitor your steak until it hits an internal temperature of 125F for medium-rare.
  • Remove from the heat, tent in foil and rest for 15 minutes.
  • Remove from the foil and devour.

    You know how when you cook a steak you sometimes only get a small amount of red or pink in the center? Well with this method you get pink or red throughout. The only part that isn’t is the outer crust. How is that for perfect!
