Years ago, when The Engineer and I were just dating, we used to eat this mouth-watering concoction called a cheesesteak Stromboli. A little restaurant there in our college town made and delivered these golden crusted wonders. And I bet we ate about a hundred of them all dipped in a little cup of Ranch sauce while studying, on dates, after football games and for any myriad of other reasons we could dream up in between. But alas, the day did come when we graduated, got married and moved away.

As time went on, every now and then we would look at each other ask, Do you remember those Cheesesteak Stromboli we used to eat? Yes, all the time. Whats a girl to do when her man is needing some nourishment? Whip up her own recipe, I tell ya. And thats what I did. I starting making own pizza version of the sainted Stromboli.

Come game days, I would throw together my very own Philly Cheesesteak pizzas using a pre-baked pizza crust, a sauce made from a Ranch seasoning mix, and all the Philly Cheesesteak toppings I could manage to pile on.

Ribeye is the steak of choice for Philly Cheesesteak sandwiches. It is well-marbled and tender when cooked. Another cut that we have used with great results is flank steak which is lean but very tender when cut against the grain. You will need a little extra oil on your cooking surface if using flank steak.

While your crust is rising, you can cut your peppers, onion, and mushrooms. I recommend using a julienne slicer. If you dont have one, thats ok too. Simply cut the peppers and onions into long thin slices. Chop up the mushrooms any way you like.

  • Place American white cheese around the out surface of pizza crust and then the fill in the rest of the crust with provolone cheese. Add the beef mixture on top of the cheese and spread out evenly. Top with shredded mozzarella and Montreal steak seasoning.

    • Step 4. Divide the meat into 4 equal piles, place cheese slices on top to melt. Then put a bun over the meat and flip over.

    Serve with the cheese sauce and sautéed veggies.

    Yeah, once you try this Philly cheesesteak recipe, with or without the cheese sauce, youll understand why its such a staple in our family! And quite honestly, its a great casual dinner for a company too.

    If youre not up for making the cheese sauce, you can simply omit that. Also, feel free to use American cheese in place of Provolone cheese. Again, flexibility is the best part of this recipe!
