Easy Pepper Steak Recipe | How to Make Pepper Steak

See recipe card below this post for ingredient quantities and full instructions.

Tenderize the steak with a meat mallet and cut into thin strips. Pat dry and sprinkle with seasoning, toss to coat.

Heat olive oil and sear the meat in batches for 3-4 minutes. Remove and let it rest. Deglaze the pan with white wine and let it reduce by half. Add the onions and peppers and let them soften for 4 minutes.

Add the sauce. Bring it to a gentle boil and let it simmer for 2-3 minutes. Stir in the cornstarch slurry. Reduce to low once desired thickness is obtained.

Add the steak back. Stir to combine and heat through, then serve with rice.

Tips For Tender Steak:

  • Use a sharp knife. Sharpen your knife before slicing the steak to ensure buttery clean cuts.
  • Freeze steak. Place your steak in the freezer 60 minutes before cutting. This will help it not wiggle beneath your knife so its much easier to slice thinly and cleanly.
  • Slice steak into thirds. I recommend slicing your steak into thirds before you freeze it so you can work with one third at a time while the rest of the steak stays frozen.
  • Slice steak across the grain. You want to cut perpendicular to the muscle fibers running through the steak in one direction so they become as short as possible and virtually undiscernible. If you cut with the grain, the fibers are left long which results in chewy, rubbery steak.
  • Slice steak thinly. This goes with slicing your steak across the grain by slicing your steak thinly , you are shortening the muscle fibers which results in more tender steak.
  • Use a hot skillet. Make sure your skillet is smoking hot before adding your steak so it will sear on the outside and remain tender on the inside.
  • Dont overlap steak. Add steak to the skillet in a single layer to sear otherwise it will steam.
  • Cook steak in batches. You will need to cook your steak in 2-3 batches so there is enough room for it to sear in a single layer.
  • Dont overcook steak. Overcooked steak means tough steak. Dont cook your steak completely when searing because it will continue to cook when you will add it back to the skillet with the stir fry sauce

How Spicy Is Pepper Steak

Pepper Steak really isnt too spicy, but youll find that its incredibly flavorful and savory.

The obvious assumption when you hear about Pepper Steak is that the pepper part refers to black pepper, but thats not the case! It actually refers to the green and red bell peppers that give this dish that incredible color and flavor.

But that being said, this recipe and dish are versatile, and you can make it spicier if youd like to. Add more black pepper to the recipe to add heat without taking away from the umami flavor of the sauce.

What Type Of Meat Is Pepper Steak Made With

Pepper Steak Recipe – How to Make Pepper Steak

Pepper steak is typically made with flank steak, flat iron steak or sirloin steak. For this dish, I incorporated jalepeño peppers, which typically aren’t in everyday pepper steak recipes, but y’all know meI love them. I also used a pepper called “Aloha” pepper.

I adore finding new thingsespecially if they turn out to be good. I found these peppers at Publix and you should try to get your hands on some if you can, but don’t sweat it if you can’t. Aloha peppers are not spicy hot they are very similar to bell peppers. Their taste is similar, but a touch sweeter, and their color is a little more vibrant.

Can’t find Alohas? You can most definitely use yellow, green or red bell peppers, or all three!

The cheese in the grits offsets some of the heat in the peppers, but you can also control the heat by the amount or use of jalapeño peppers you use versus Aloha or bell peppers.

The kick of the peppers and the richness of the steak combined with the cheesy grits is such a beautiful combination.

What Can I Use Instead Of A Wok

You can definitely make this dish in a frying pan. Woks are a great tool in the kitchen for stir fry style dishes and for cooking mixed vegetables. If you dont have one, dont skip the meal, but consider trying a wok some timeyou will probably love it!

PRO TIP: Woks need to be seasoned just like a cast iron pan needs seasoning. It should come with a set of instructions on how to do so. It should go something like first, boil water in the wok. Rinse it off and coat it in oil then heat it up. Repeat the oil and heat several times. You also dont wash it with soap. Let salt and heat do all the germ killing.

How To Cut The Steak Against The Grain

There is another way to enjoy a tender cut of steak, and its by cutting the Steak against the grain. The grains in the meat are the muscle fibers you will find thin lines running across the beef when you look closely.

If you cut the meat parallel to those thin lines, you will end up with a very chewy piece of meat. You must cut against the muscle fibers, and you do this if you are cutting raw or cooked Steak in both cases cutting against the grain will give you a tender slice.

To make cutting a raw steak easy and fast, you should use a sharp knife. Another tip to make the slicing of a raw steak easy is by freezing the Steak for 30 minutes and then cutting it into thin slices.

Ingredients For Pepper Steak Sauce

Soy sauce: If possible, use low sodium to control the amount of salt in the pepper steak recipe.

Cornstarch: I prefer cornstarch to thicken the sauce, but you can also use flour. When using flour, keep the ratio the same as when using cornstarch.

Sugar: Brown sugar will enhance the flavor, but you can substitute it with white sugar or honey.

Water: This helps the sauce reach the right consistency.

Onion, garlic, and ginger powder: These spices add a beautiful layer of flavor to the sauce and make this dish what it truly is.

What Does Pepper Steak Taste Like

Pepper Steak Recipe – Slow Cooked Pepper Steak

Pepper Steak is rich with an incredible layering of flavors. It has a little salty flavor from the soy sauce, a slightly sweet flavor from the sugar, and an incredible blend of flavors from the garlic, ginger, and onion powder.

Its rich enough to enjoy, but not so much that itll be overwhelming. The simplicity of the flavors and pantry-staple ingredients make it the perfect weeknight dinner recipe.

If you prefer your Pepper Steak a little less salty due to dietary restrictions, you can use low-sodium soy sauce instead but it’ll still give the best flavor ever!

How Do You Make Pepper Steak

  • Thinly slice beef. You will want to slice your beef into ¼ slices no thicker. It is much easier to thinly slice your steak if you freeze it for 60 minutes or so however long it takes so it doesnt slide when cutting. The frozen beef defrosts quickly, so I will slice the beef in thirds and work with one third at a time while the rest of the beef stays in the freezer. The beef will continue to completely defrost in the marinade.
  • Slice your beef ACROSS the grain. You can marinate your steak and slice it thinly, but if you slice it the wrong way, your meat will be chewy. When you look at your steak, you can see the muscle fibers grain running through the meat in one direction. You want to cut perpendicular to the muscle fibers so they become as short as possible, as opposed to parallel which will result in long muscle fibers and chewy, rubbery meat.
  • . A marinade is crucial when using less expensive cuts of beef such as flank steak in order to break down the muscle fibers and tenderize the steak Our marinade will be thick and not your typical runny marinade. Let the steak sit at room temperature 30-60 minutes or even better, marinate in the refrigerator for up to 8 hours. If you do refrigerate your steak, make sure to let it come to room temperature, about 30 minutes before cooking. This will ensure it cooks evenly.

How To Make Pepper Steak From Scratch

Making Jamaican pepper steak from scratch is much easier than you may think. The hardest part of cooking this dish is waiting for it to finish.

After washing and cleaning the meat, cut into strips and season.

  • Cut into strips: Cut the meat into even strips, 3 inches long and about ½ to 1 inch thick.
  • Add the marinade to the meat: Add everything to the meat except the cornstarch, beef broth and bell pepper. Coat the meat well with the marinade and leave to marinate
  • Leave to: Honestly, you dont have to marinate for long. I let it marinate for like half an hour are so.
  • : Now comes the tedious task of separating the marinade from the meat. Dont try to perfect here because you wont get all the garlic, ginger or scallion off the beef, and thats not a problem. You dont have to use a separate plate to place the meat on. Place the meat straight into the pan to brown. I only use the plate for the photo.
  • Quick brown: Add the strips of meat to hot oil in a pan and brown on all side, which wont take long because the beef change colour as soon as it touches the hot oil. Stir it so that all the strips are brown. You will notice that the meat starts to release water into the pan.
  • That marinade again: As soon as all the strips are brown, stir in the marinade from earlier. Let it cook for about 3-4 minutes.
  • Let the sauce thicken: Cook for another 5 minutes until the gravy thickens, then serve!
