Tri-tip has a rich beef flavor. It has a fair amount of fat marbling, which gives it a juicy and tender taste, even though it is a lean piece of meat and does not have a fat cap. The rich flavor you get with tri-tip is similar to what you get with other pricier cuts, but tri-tip is more affordable.

It needs to be cooked properly. Otherwise, it can turn out to be quite tough and chewy. Another advantage is that it is easy to marinate, and as such, it quickly soaks up the flavors you need it to.

Other Names For Tri Tip

Although tri tip is the most popular name for this cut, there are many other names for tri tip. The tri tip cut used to be available on the West Coast only, but it has grown in popularity over the past few years and can be found in many membership stores across the United States. Tri tip can be called by different names if you have a hard time locating it, ask your butcher to hook you up .

How To Prepare Tri

To prepare tri-tip for smoking, first:

  • Trim off any excess fat from the steak. This includes any chunks of fat and the silver skin on the beef. You can do this by carefully running your knife under the membrane to cut it away and remove it.
  • Season with salt, pepper, and granulated garlic in that order. Cover the entire steak front and back. Be generous with your seasoning! If you need more to cover the whole steak, use more.

    Ive been a huge fan of the Tri Tip ever since I started cutting meat in the late 70s. It may not be the most tender steak in the case, but proper cooking and thin slicing cures that. Its flavor is fabulous, especially when marinated and grilled and since its a fraction of the price of most other steaks, it has always fit nicely into my budget!

    For years, the Tri Tip found itself as part of the bone-insirloin steak, hanging off the end as an odd shaped strip that usually got cutoff and made into kabob meat or cube steaks.With a mere 4-5 LBS or so per animal, nobody really missed it.

    Tri tip is part of the bottom sirloin cut of beef that is triangular in shape, hence the name. It’s a flavorful cut of meat from a good level of marbling, though usually not as expensive at the more popular ribeye cut. It is hugely popular in California, where it is called the Santa Maria steak, traditionally seasoned and grilled.

    I’ve enjoyed tri tip steak many times over the years, cooked in many different ways. I often grill mine, but I greatly enjoy cooking the tri tip in the oven because it’s just so easy. When I cook it this way, I prefer to use a marinade to build in extra flavor and juiciness, making it even more tender.

    This cut of beef is more on the lean side, so it benefits from cooking at high heat. We’ll give it a quick sear a few minutes per side before finishing it up in the oven at a fairly high temperature, but not too high.

    This is one of my favorite ways to make tri tip. I hope you enjoy it, too.

    Grilled Portobello Mushrooms & Balsamic Glaze

    Ingredients

    • 2 TBS tamari or soy sauce
    • 2 tsps maple syrup or honey

    Total time: 15 minPrep time: 10 min Cook time: 5 min Serves: 4 people

    Directions

    1. Scrape out the black gills from inside the mushrooms with a spoon and discard. Coat the mushrooms all over generously with EVOO, salt, and pepper.

    2. Place them crown side down on the hot grill for 5 minutes with the top closed. The natural juices will fill the bowl of the mushrooms. You can add this liquid to the glaze for more flavor.

    3. Place a small saucepan on a medium-high burner. Carefully remove the mushrooms with tongs and pour the natural juices into the pan. Add the balsamic, soy sauce, and maple syrup. Simmer until the sauce thickens slightly.

    4. Slice the rested steaks into 1/4 inch thick pieces. Slice the mushrooms into 1/4 inch thick pieces. Place the steak on a platter. Top with the mushroom slices. Pour the glaze over the top and enjoy with an arugula salad or grilled asparagus.

    How To Serve Tri

    Tri-tip steak takes on seasonings, rubs and marinades exceptionally well, so you have your choice when serving it. It tastes incredible when seasoned simply with salt and pepper and served with your favorite steakhouse side dishes. You can also fancy it up by using Southwest spices, slicing the cooked steak into long strips and serving it on a bed of lettuce with corn, tomatoes and avocado for a filling salad. You cant go wrong by marinating it in beer and lime juice, either, using the medium-rare steak to make grilled onion and steak tacos.

    One of our favorite ways to enjoy tri-tip steak is to turn it into sandwiches. The lean, flavor-forward beef tastes fantastic on a crusty ciabatta roll with mushrooms, peppers and onions.

    How To Cook Beef Tri Tip Steak

  • Remember to remove your beef tri tip steaks out of the packaging, pat dry and bring to room temperature

  • Pre heat your griddle or heavy based frying pan until it sizzles when you add a drop of oil

  • Season the meat just prior to cooking

  • Dont overcrowd the cooking base, a couple of medium sized steaks per pan

  • Place the steaks on the fat to render before searing on the flat sides

  • Cook over high heat turning the steak only once after a rich, golden crust has formed, reduce heat to medium when reach this stage

  • Cook 5 to 6 minutes each side for medium rare

  • Finish by adding a large knob of butter when frying or on the griddle

  • Leave to rest in a warm place at least 5 minutes before carving

  • The meat will become more firm as it cooks, gently press with your thumb, the more spring back you get the hotter the protein cells have expand which means the more well done your meat is, for a medium rare steak it should have a soft feel with a little spring back

    Why Steak Is So Expensive

    The more tender the meat of your preferred cut of steak, the more it is going to cost. The reason the meat is more tender is its location on the cow. These tender cuts of meat come from a part of the cow that gets little exercise because of their location on the cow. They are higher up on the cow and used less.

    How To Marinate And Cook Tri Tip In The Oven

    FOR THE TRI TIP MARINADE

    Whisk the Marinade Ingredients. Whisk all of the tri tip marinade ingredients together in a large bowl.

    Place the tri tip roast into a large baggie and pour in the marinade.

    Alternatively, you can use a large bowl. Massage the marinade into the meat and seal . Refrigerate and marinate the tri tip for at least 8 hours, or overnight.

    COOKING TRI TIP IN THE OVEN

    Bring the Roast to Room Temperature. Remove the tri tip from the fridge and bring to room temperature, about 30 minutes.

    Brown the Meat. Preheat oven to 425 degrees F. Heat 2 tablespoons olive oil in a large cast iron skillet or pan to medium-high heat. Remove the tri tip from the marinade. Keep the marinade for a sauce later, or discard it. Sear the tri tip roast 4-5 minutes per side to achieve a nice crust. Transfer the tri tip to a rack covered baking sheet, or use a roasting pan with a rack.

    Roast the Tri Tip in the Oven. Move the tri tip to the oven and bake for 20-30 minutes to your preferred doneness. You’ll want 125-130 degrees F internal temperature when measured with a meat thermometer for rare, or 130-140 degrees F for medium-rare.

    Rest the Meat. Rest for 10 minutes to redistribute the juices, covered, then slice against the grain into thin slices and serve.

    Boom! Done! Your oven roasted tri tip is ready to serve. Looks so good, doesn’t it? Nice and juicy, wonderfully tender, amazing flavor. I love a good tri tip, one of my favorite cuts of beef.

    How Many Calories Are In Tri

    The tri-tip beef cut is medium in calories because it consists of more lean meat than fat and there are fewer calories per gram of protein than per gram of fat.

    Where To Buy Tri

    Unfortunately, in many areas across the country, the tri-tip steak is not available. This is because this part of the cow is typically cut differently by regional butchers. If you cannot find tri-tip in the meat section, talk with your butchersome may have it, but know it by another name. Any good butcher should be able to cut tri-tip steaks for you, and if they dont do that kind of cutting, you need to find a different butcher.

    Should: Flat Iron Steak

    Flat iron steaks are what you get when a butcher has removed the sinew from the top blade steak . The result is a well-marbled steak with enough flavor to have your mouth watering in anticipation. The extra steps involved in butchering a flat iron steak make them harder to find and a little more expensive, but they’re still affordable and delicious.

    The lack of central sinew means that the flat iron steak is perfect for cooking on a hot grill or in a pan. It’s also very versatile and can be sliced into thin strips and used to bring a hit of beefy flavor to any number of dishes.

    The shape of this cut means that it’s a much tastier option for recipes that suggest using a skirt or flank steak. At the time of this writing, you can pick up a flat iron steak at Kroger for the affordable price of $5.99 per pound.

It is quite a bit more expensive than most other tri tips but it is quite evident why it costs more. High quality Tri Tip Steak should be a rich red colour that is consistent throughout, it should not be dark or have a metallic shine to it as this may indicate a higher PH level, it will also have a much shorter shelf life.

    Good Beef Tri Tip with a with the correct PH level has a better flavour, texture & smell when cooking, & more importantly it will eat so much better.
