How Do You Apply A Marinade For Steak

How to Make the Best Steak Marinade | Allrecipes.com

First, choose and make a marinade recipe . We recommend making ¼ to ½ cup of marinade for each one to two pounds of beef.

Then, place the marinade and meat in a sealed plastic bag or glass container so that the beef can sit in the liquid. We like to use 1 gallon Ziploc bags since it makes it easy to periodically flip the beef so that the marinade works in evenly. We dont recommend using a metal container since the acidic ingredients can react with metal.

Lastly, make sure to place the container in the refrigerator as the beef marinates. Never marinate beef at room temperature.

As a side note, contrary to popular believe, beef doesnt absorb the marinade flavor throughout the cut of beef. Rather, the flavor stays on the surface of the meat and thats the punch of flavor that you taste with your tongue.

Is It Possible To Freeze Marinated Steak

Place the steak in a big, sealed freezer bag and set it aside. Pour your preferred marinade over the steak, whether its bottled or homemade. After freezing the steaks, double bag them in another freezer bag to prevent any leaks from occurring during the cooking process. Place the package of marinated steak in the freezer and store it there for up to three months, if necessary.

What Ingredients Go Into Steak Marinade

  • Balsamic vinegar I dont recommend substitutes here. Balsamic vinegar will add the best flavor. And use dark balsamic, white isnt as strong.
  • Worcestershire sauce another key ingredient. This is one of the best ingredients for steak marinade.
  • Soy sauce keep in mind the longer the steak marinades the more sodium it will absorb from the soy sauce, so if you only marinate 1 hour you may still need a little salt added to the steaks.
  • Olive oil dont use extra virgin olive oil because it has a low smoke point, just regular refined olive oil.
  • Dijon mustard this adds a little extra flavor. Dont use regular mustard.
  • Honey just a light amount helps tone down acidity of the vinegar it also helps the exterior of steaks brown better.
  • Garlic as always only use fresh. It makes a big difference.
  • Freshly ground black pepper if you havent made the jump to fresh ground pepper now is the time! It really is a lot better.
  • Dried rosemary of course fresh will work great too, use 1 Tbsp chopped if using fresh.
  • Steak this makes enough marinade for about 2 pounds of steak.

    Why Marinate A Steak

    • Tenderize: Marinades contain acidic ingredients like wine, vinegar, lemon juice, or any combination of them. The acids change the consistency of the meat, making it tender.
    • Flavor: Marinades usually contain salt, herbs, aromatics, & bold flavors which in turn flavor the meat.
    • Caramelize: Marinades help with caramelization to give that nice brown crust we love so much.

What To Serve With This Easy Steak Marinade

You can serve the steak whole or serve or thinly sliced. We enjoy ours with a dab of butter and a sprinkle of fresh chopped parsley. Though those additions are optional, they elevate and complement the other flavors of the dish.

Steak pairs so well with many sides, like a baked sweet potato or sweet potato fries, a regular baked potato, and a simple side salad for a complete meal.

Use only kosher salt and freshly ground black pepper when using expensive cuts of steak like rib-eye steak, sirloin steak, t-bone, or filet mignon. These cuts of meat have enough marbling therefore, they taste good and are tender.

Tougher cuts of meat like rump steak, skirt, or flank steak are perfect for marinating. The marinade will make the meat tender.

    • balsamic vinegar one of my favorite marinade ingredients, balsamic vinegar adds incredible depth to this marinade and goes so well with steak. Gives your steak a restaurant quality.
    • soy sauce I opt for low sodium otherwise I find the steak is too salty.
    • Worcestershire sauce adds savory, complex flavor.
    • pineapple juice this will help tenderize even the leanest cuts of steak.
    • brown sugar subtle sweetness and molasses flavor that isnt overwhelming. Honey is a good alternative.
    • Dijon mustard rounds out the flavors and pulls the marinade together.
    • ground black pepper for seasoning.
    • garlic powder fresh garlic will burn easily on a grill so I like to use garlic powder instead. Not enough to overpower the flavor of the steak, just enough to enhance it.

    Tips For Grilling Steak

While this marinade is full of vibrant and savory flavors, you also have to remember grilling your steak properly is equally important. The reason being is if you overcook your steak it will end up dry and chewy.

    • Preheat Grill | Always preheat your grill, this will help get the grates hot and when you put the steak on the grill it will offer that sear sound which means success.
    • Steak Tip | I always sit my steaks out for at least 15-20 minutes before I plan to place them on the grill. I watched this tip on the Food Network channel years ago, and have done it ever since. This always sets you up for the success of a juicy steak that is cooked nicely.
    • Dont Cut Steak | When checking the done-ness of your steak dont slice into the steak to see how red or done it is. Use a meat thermometer and check it that way. If you cut the steak it will leak the juice and dry out.
    • Rest the Steak | Once your steak is done, lay it on a plate and put aluminum foil over the top. Let it sit for five minutes to allow it to soak in all those juices for a juicy and flavorful steak.

What Steak Cut Is Best For Marinating

What cuts of beef to use a marinade on is a matter of personal preference and the recipe youre making.

Generally, marinades should be used on tougher cuts of beef from hard-working muscle groups, like flank, hanger and skirt steak.

If youre cooking a high-quality, flavorful cut of beef like a ribeye steak, we recommend not marinating it so that the beefs natural flavor can shine. However, if you want to use a marinade on a ribeye or filet, you can. Its entirely up to you.

How Do You Know Your Steak Is Done

Everyone loves their steak done to different degrees and using a thermometer is the way to go to make sure you cook it just right. Remember too, when your steak is taken off the heat it will continue to cook for a minute or two, raising the temperature about 2-4 degrees more. I often remove my meat right before it reaches that perfect temp.

Lets rewind a little bit you probably missed adding an acidic touch to your marinade recipe. Muscle fibers within your steak need to be broken down, as well as the proteins turned into gelatin in order to make your steak tender. Over high heat and with more tender cuts of steak like filet mignon, this happens very easily. But for tougher cuts of meat, you need to grill it slowly and continue to keep it covered in marinade.

The Benefits Of Marinating Steak In Alcohol

    The Best Steak Marinade ð¥©

Can you recall when your mom would make you your favorite steak dinner and serve it with a side of garlic mashed potatoes? The steak was cooked to a perfect temperature, and the potatoes were fluffy and buttery. The same buttery flavor can be achieved if you use alcohol in your marinade. Meat is much more tender when it is marinated in alcohol because it breaks down the protein collagen. It is also an excellent way to add flavor to your food. If you want to make your steak extra delicious, marinating it overnight can help. To make the marinade, make sure it is free of acidic, alcohol, or salt.

Tips For How To Marinate Steak

Okay, so while its simple, there are still some quick tips Id like to share that will help you marinate and cook your steak like a pro. Here are some helpful tips on how to marinate steak to have the best results.

    • Use a sealable plastic bag, large bowl with plastic wrap, or an air-tight container. You want to seal in the juices and flavors as much as possible. As a general rule, I use a 1 quart sized bag when Im marinating less than a pound of steak, and its perfect.
    • Keep marinating meat away from other foods in your fridge to avoid unsafe contamination of the raw meat.
    • Use a combination of an acid, oil, and spices in your marinade.
    • Make sure to discard the unused marinade once its time to cook the meat and dont use it as a sauce unless you cook it first because it will contain raw steak juices.
    • For the best results, try to marinate the steak the night before you cook it for the maximum flavor.
    • If you cant get to cooking your marinated steak within two days, you can also freeze the meat in the marinade to be used later. Thats a benefit of using the freezer-safe bags you can just toss them right into the freezer for later. Then, when its time to cook, thaw the meat and cook.
    • For most marinades, use about 1/2 cup of the marinade for every 2 pounds of beef.
    • After removing the beef from the marinade, pat all sides of the steak dry with paper towels to prevent steaming and encourage browning.
