When choosing a steak to buy, keep in mind that cuts closer to the hooves and horns tend to be tougher than those further away. We find that steaks from the leg and shoulder areas are ideal for marinating because these are the muscles that work the hardest on a cow. Flank steak, hanger steak, tri-tip, bottom round and eye of round are all great if youre looking for the best steak to grill and marinade.

Keep in mind that even sirloins, New York strips and tenderloins can get a boost from a quick marinade. They may not need much help in the tenderness department, but they can still benefit from the additional flavor learning how to make steak marinade provides.

Sides For Steak Dinner

  • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
  • Place beef in a ziplock bag with Marinade and marinade overnight .
  • Remove from the fridge 30 minutes before cooking to bring to room temperature – key for even cooking of steaks. Shake off excess marinade.
  • Brush BBQ Grills with oil, then heat on high heat until is really hot – you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil – it will heat almost instantly.
  • Add steaks. For 2cm / 3/4″ thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes .
  • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
  • Serve! I couldn’t resist garlic butter – see recipe in notes.

  • Bring steak to room temperature. Take the meat out of the fridge and leave it to rest at room temperature. Itll help the steak to cook evenly
  • Remove connective tissue. Im using a skirt steak that has connective tissue. This tissue is hard to chew therefore, its best if you remove it
  • Pat steak dry. Using a paper towel, remove moisture from the exterior of the meat. When steaks surface is dry, itll form a nice crust when seared on a pan
  • Preheat the oven. Preheat the oven to 375° Fahrenheit for about 10 minutes before cooking.
  • Preheat the pan. Put a cast-iron skillet or any other heavy pan over high heat until it starts to smoke
  • Pan-fry the steak. Pour a few tablespoons of olive oil into the pan and coat the cooking surface. Put a steak into the scorching hot pan and sear the meat for one and a half minutes on each side before transferring to the oven. If your pan is oven-proof transfer steak to the oven with the pan. If not transfer steak onto a wire rack onto a baking sheet and put the baking sheet on a wire rack in the oven
  • Slice. If using a tough cut of meat like I am slice the steak into thin slices, at an angle, across the grain. Itll make the meat more tender.
  • Acid Makes Tougher Cuts Perfectly Tender

    The Best Steak Marinade

The acid component of the marinade is what helps to soften and break down tougher cuts of meat. It tenderizes muscular connective tissue and can completely transform steaks that would be chewy into something that melts in your mouth. Vinegar is a great choice and you can select the perfect flavor based on your preferences and the other ingredients in the marinade. Balsamic, red wine, apple cider or rice vinegar can all be great options depending on what youre cooking. You can also use the acid from citrus fruits like lemon, lime or orange for this part of the marinade.

You can place your steak in a bag with the marinade. Then every little bit you can go and grab the bag and massage the meat to really help infuse the marinade into the steak more to give your steak the best chance of those rich flavors soaking in. Or if you want you can use an airtight container.

For anyone curious, I massage my steak about once an hour when I am marinading it.

Can A Steak Be Over Marinated

YES! If you use an acidic based marinade, you can make your steaks TOUGHER! A good rule of thumb is to leave out major acids when you are marinating a good quality steak overnight because the acids can make it tough instead of breaking down the meat fibres like its supposed to. If you are marinating for 2-4 hours, you can use lemon juice or another acid in your marinade. I dont use lemon juice or acids because I prefer to buy good quality steaks, like the T-Bone Steaks in the photos.

How Long Should I Marinate Meat

    Easy Steak Marinade

Based on the type of marinade you’re using and the kind of meat, your food could marinate for 30 minutes or overnight. Beef and lamb are always up for a long, leisurely soak, but delicate meats like seafood and skinless chicken only need a minimal soak. Be careful not to over-marinate your food since the acid in the marinade can cause the food to become too tough or too mushy.

    • Seafood – 15 to 30 minutes
    • Boneless chicken breasts – 2 hours
    • Pork loin – 4 hours
    • Lamb – 4 to 8 hours
    • Beef– 24 hours or more

Remember, the goal is flavor. So even if your meat might get the most from several hours in a marinade, it will still get flavor benefits from a shorter soak. Marinating for 12 hours or more does cut cooking time by about 1/3, so keep an eye on the grill.
