As steaks grill over high heat, they lose moisture. Fat and juices are literally pushed out of the meat. Thats the price we pay for making the steaks easier to digest.

Perhaps the most important part of grilling a steak is taking it off the heat before it has lost too much moisture. There is a short window of time, usually just a minute or two, when steaks go from medium rare to medium, or from medium to medium well.

Catching that window requires vigilance. Dont walk away from a steak on the grill. And remember, its always better to take it off when its underdone and then return it to the grill than it is to let a steak overcook.

Best Boneless Cuts For Grilling: Ribeye Top Loin Or Top Sirloin

For a boneless cut, look for ribeye, top loin, or top sirloin.

  • Ribeye is cut from the center portion of the rib, same as a prime rib. These steaks are well marbled, very juicy, and have a full beef flavor.
  • Top loin is cut from behind the ribs and is also known as strip steak, Kansas City steak, or New York strip. Its full-flavored and very tender.
  • Top sirloin steak is cut from the hip of the cow and is also called London Broil. Top sirloin steaks vary in tenderness and marbling and are leaner than the other two boneless options.

How To Cook Medium

This is the recommended level of doneness for a good steak ask any chef how they like their steak prepared and they will almost all say medium-rare. A medium-rare steak should be warm through the middle with most of the center pink in color with a hint of red. The sides should be well browned, the top and bottom caramelized to a dark brown color with good grill marks. This steakâs firm surface should give a bit toward the middle .

For a 1-inch steak, place steak on a hot grill for 5 minutes. Turn and continue grilling for another 4 minutes to an internal temperature of 130 to 135 F .

What is a New York Strip Steak?

New York Strip Steak is a cut from the longissimus dorsi muscle which starts from the rib primal to the round primal. And the Strip Steak is the section in loin primal. The part of the muscle moves quite frequently and so it is firm and tight.

However, the NY Strip Steak is fairly tender although it is firm thanks to the great amount of marbling. The level of marbling of the Strip is between Ribeye Steak and Filet Mignon, it is evenly distributed and gives the steak a bold beefy flavor.

The name New York Strip was created by Delmonicos, a legendary Manhattan restaurant, since the 1830s. Typically, New York Strip refers to boneless strip steaks, whereas the bone-in strip steaks are called Kansas City Strip Steaks.

There are cuts of beef that work great for grilling and some that are better pressure cooked or even smoked. Brisket is a great example of a cut of beef that really needs a long cooking time. My favorite way to cook it is in a smoker, low and slow. However, a combination of pressure cooking and air crisping also works great! I did a cranberry brisket this way and it turned out amazing!

Cooking anything is all about heat transfer. You apply heat for a certain period of time and your food cooks. Its fairly straightforward and simple, or is it?

It is, as long as you keep in mind some differences in the various cuts of beef that you are cooking and adjust your temperatures as needed.

Some cuts of beef, like a filet, do great with high grilling temperatures. Others, such as a ribeye, do better with a slightly lower grilling temperature. Why? Its all about the fat.

If you have a fattier cut of beef, like a ribeye, and have your grill temperature too high, you will get a lot of smoking from the fat AND your steak will cook before the fat has a chance to render and get crispy.

This is especially important when grilling on an indoor grill! If you throw that ribeye on the Ninja Foodi Indoor Grill on the MAX GRILL setting, be prepared for the smoke detector to go off.

    You Pick The Wrong Skillet

Heat it over high heat for about 10 minutes or until the skillet starts to smoke. The intense heat is key to a creating a nice crust on your steak.

    Always Set Up For Two

    Depending on your steaks thickness, the time it takes to cook it through can vary tremendously.

    Now, for any steak you grill, youll want to create a beautiful, dark crust by searing it hot and fast. All that dark brown coloring is extra amazing flavor created by the Maillard reaction.

    If you dont get a good, dark sear, you are missing out on bundles of flavor. So you MUST sear your steak with a screaming hot grill.

    However, if you cook anything but the thinnest of steaks all the way through hot and fast, you will severely burn the outside and ruin it before the inside has even cooked.

    So you need to grill your steak in 2 stages:

    • Hot and fast searing over direct radiant heat to get a good Maillard crust for added flavor.
    • Slowly over indirect heat to slowly cook it through to the center, without burning the outside.

    So you need to set up your grill as a two-zone cooker.

    You want to bank all your charcoal to one side of your grill, so you have a very high heat direct radiant side for searing.

    Then you want the remaining half of your grill set up with no coals so that you can place your steak away from the heat source.

    This indirect cool zone will cook the steak far slower until perfectly done throughout while removing the chance of burning

    If you have a gas grill, have a burner on for the high heat zone and a burner off for the cooler side same thing.

    Heat The Grill To High

    Some say to cook a steak at no more than 500F. I disagree. I like the grill to be screaming hot. If your steak is more than 1.5 inches thick, you can finish the cooking on medium heat for a few minutes after you char it on both sides.

    • Tip: It will take 10-15 minutes to heat up your grill. Dont start until the grill is heated.
    • Tip: Clean and spray the grill with oil before you heat it up. Or oil the grill with a paper towel dipped in oil.
