HOW to GRILL a STEAK by Master Chef Robert Del Grande

Once you have a good grill sear over high heat, you can move your steaks to a lower temperature to make sure they dont dry out quickly. This is known as indirect grilling. To do this, sear both sides over high heat for a couple of minutes on each side, and then move to low heat. Only turn your steaks once the full time for one side has been reached. Flipping too often on the grill can ruin the cooking process and dry out your steaks faster.

Also, always allow your steaks to rest. You should plan to rest your steak for 5 to 10 minutes to allow the juices to move back through the meat for ultimate flavor and tenderness.

If you do use a digital meat thermometer to better gauge your time for steaks on the grill, make sure you remove your steaks when its internal temperature reaches about five degrees below your desired temperature, since it will continue to cook a bit after you remove it from the grill. If you want your steak to cook to 135 degrees, then remove it when it hits about 130 degrees.

How To Grill A Thin Steak

When grilling steak that is 1 ½ inches in thickness or less, the best way to get the perfect char on the outside and desired doneness in the center is to sear over direct heat. You simply grill. the steak over the direct heat until it reaches the desired temperature, flipping it about every minute. This will ensure that the surface gets nice and golden brown and that the middle wont cook too quickly. Take the steak off of the grill once it reaches the desired temperature and let it rest 5 minutes before serving.

Fourth Position And Testing For Doneness

As you prepare to turn the steak for the last time, it’s time to start checking for doneness. The steak should show no red around the side and the top side should have a rich brown color. As you pick the steak up to rotate it 45 degrees , feel the density of the steak. A medium-rare steak should be firm but still have a good amount of give. Close the lid of the barbecue and continue grilling.

After this last position, turn down the heat on your grill and, if needed, test the temperature of the steak. The internal temperatures for different levels of doneness are:

  • Rare: 120 to 130 F
  • Medium Rare: 130 to 135 F
  • Medium: 140 to 150 F
  • Medium Well: 155 to 165 F
  • Well: 170 F or higher

If your steak needs more cook time, leave it where it is and continue grilling on medium heat until done.

Perhaps the most important tip that I can give you is to allow the steak to rest after grilling it. Allowing the steak to rest brings a lot of magic to the steak.

After you have cooked the steak, letting it rest will bring back the juices into the meat. I always do this for at least 8 minutes and can even sometimes go for 15 minutes.

This depends on the thickness of the steak as well. The thicker the steak, the longer the resting period so that the juices settle properly into the meat.

Every time I do this, the steak runs juicy with a clear liquid once I cut through it. It is a satisfying look and you will instantly know that the steak is cooked to perfection.

Perfect Steaks In Cast Iron

If the weather prohibits outdoor cooking, or you’d just prefer to be in your kitchen, a cast-iron skillet is a fabulous alternative to the grill. Many of the principles of cooking a steak on the grill also apply to cast iron however, there are some additional opportunities for flavor in your trusty skillet.

Much like cooking a steak on the grill, youll need to bring your meat to room temperature before cooking. If you fancy a filet mignon, tie a piece of butchers twine around the center of the steak. This keeps a uniform shape throughout the cooking process, leading to more consistent doneness.

Liberally season the meat with kosher salt and freshly ground black pepper while heating your skillet. Youll want to take this step right before cooking because salt draws the water-soluble proteins to the surface of the meat and creates a damp surface the enemy of good browning. While youre at it, make sure to set the oven to 450 degrees.

Heat the skillet over high heat until it begins to lightly smoke. Add a few tablespoons of vegetable oil and evenly space the steaks inside the pan. Do not move them around, as keeping the steaks stationary helps a crust form on the surface. Once the bottom of the meat has a mahogany color, flip the steaks over.

Add more cold butter and baste the steak as the butter melts. The garlic and thyme-flavored butter adds additional flavor and keeps the meat juicy. Finally, remove the steaks from the pan and allow them to rest before slicing.

Starting With The Steak

You need to know what kind of steak you are cooking to cook it perfectly.

There are different cuts of meat that you can get and there are some specific features to look for.

Understanding the different cuts of steak will help you set the temperature, timer, and accessories you need to cook it.

Research a bit before you head to the supermarket to buy.

So lets talk about steaks.

My favorite and perhaps the most common cut of steak you will find in butcher shops and supermarkets is the filet mignon, also known as the tenderloin.

It is the most tender cut that you will find in any cut of meat on the market. It is soft so when you cook it, it requires the most delicacy from you so it does not stick to the grill or come out overcooked.

The next common type of steak you will find is the top sirloin steak.

It is also known as the New York strip or the Kansas City strip which contains a beefy flavor and is slightly tender.

It is not as tender as the tenderloin but it is up there.

When you get a New York strip, the advantage you get is the flavor as it does not have too much marbling and is full of meaty flavors.

The T-bone steak or the porterhouse steak is one of the largest cuts of steak.

It comes from the upper rib which also means that it has decent marbling and is softer when cooked.

Ribeye is also one of the more common cuts of steak and it is up there when it comes to my favorites. Flank steaks and skirt steaks are also there for my fajitas and meat fillings.

How Do You Cook A Filet Mignon On An Electric Grill

Cooking a filet mignon on an electric grill is definitely possible, even if it might be a challenge because of the thickness of the cut. Youll want to start by seasoning and marinating your steak. After two to four hours, youll take the steak out of the refrigerator and pre-heat your grill to about four seventy-five.     Generally, the temperature of a steak will continue to rise a bit even after you take it off the grill.

    • Rare Remove from the grill at 130° so it reaches 135-140°
    • Medium rare Remove at 140° so it reaches 145°
    • Medium Remove at 155° so it reaches 160°
    • Medium well Remove at 165° so it reaches 170°

    You can use an instant read thermometer inserted in the center of the steak to make sure its cooked through correctly.

    But the more often you cook them, the better youll get at telling how long they need just by looking at their thickness.

    Charcoal Or Gas Grill For Steak

    Charcoal or wood-fired grills are always the best choice for grilling steaks because of the additional flavor and charring they provide. If you have a charcoal grill, you also can add different kinds of wood to the fire to contribute smokiness and enhance the overall flavor of the meat.

    Common Grilling Steak Times

    So, how long do you cook steak on the grill? That answer largely depends on the thickness of the meat youre cooking. You can cook thin or thick cuts on the grill just fine, but youll definitely want to alter your times to cook your desired cuts to the right doneness, which, again, is a matter of preference.

    One good tip to keep in mind is to use a meat thermometer for thick cuts of steak and a timer for thin ones. A steak thats ¾ of an inch thick or less may be difficult to get an accurate temperature reading from, so a timer can help. But a meat thermometer can give you a more precise idea of the doneness of your steak to make sure its right.

    For a medium-rare doneness, you typically will need to grill your steak between 4 to 6 minutes on each side, depending on thickness. For medium cooks, shoot for closer to 5 to 8 minutes on each side. Its always best, though, to start with the lower grilling steak time and check with your finger to see if it might need a bit more time, instead of allowing it to cook for a couple of extra minutes. You can always cook it a bit longer if required, but you cant get back tenderness you lose from overcooking.

    When you touch the center of your steaks, a medium rare cook will spring back slightly, yet still feel squishy. A medium cook will be more springy than squishy. If all else fails, you can always cut a small slit in the center of your steak to check its color, but this should only be used as a last resort.
