The Masterbuilt electric smoker is not a high smoke unit. Electric smokers main appeal is their ease of operation over charcoal or propane smokers. We can do a few things to help. There are even ways to improvise that will improve your smokers output.

First, before we modify anything always double-check that the wood chip tray is clean each time you use your smoker. Fill the wood chip tray halfway with chips and wait for it to start smoking prior to beginning the normal chip loading process.

Crush a few pieces of charcoal into four chunks, and put a few chunks into the tray before you start. Then add one chunk of charcoal each time you load chips into your smoker. By adding charcoal, the burning temperature will increase and add a nice charcoal flavor.

Run your smoker above 200 degrees, because the thermostat will turn the heating element off when it reaches the temperature setting. At this point, your chips will stop burning. Due to how the thermostat works this smoker would be a very poor choice for cold smoking, but we can fix that.

There are many ways to add smoke to your unit. A factory smoke generator, an Amazin smoke tray, or even an external burner tray modification. The Masterbuilt smoke generator is by far the easiest way to go and will provide the best experience.

Best Smoking Wood Choices For Ribeye Steaks

Like weve done previously with smoked lamb chops, since you are only smoking these ribeye steaks for a shorter period of time relative to something like a ham or leg of lamb, you can get away with using some stronger flavored smoking woods.

We prefer the mid range smokey flavor of hickory wood on our smoked ribeyes, but if you want an even bolder flavor you can try using mesquite.

If you DO want to try mesquite, we would only recommend applying smoke for the first 30 minutes and no longer.

Otherwise, your ribeyes can get TOO smokey and the mesquite will overpwer them.

If you are looking for a milder wood to smoke them with, you can try oak, apple, or cherry instead.

Vacuum Seal For 2 Weeks Before Serving

Next comes the hardest part about smoking cheesethe waiting.

After you have let your cheese breathe for 24-48 hours in the refrigerator you need to let it mellow.

You will need to place it in an airtight container such as a zip lock bag, or better yet, a vacuum sealed bag and put it back in the refrigerator for at least2 WEEKS.

We know, its hard to wait and you want to try it now, but trust us, it will be sooooo much better in a couple weeks.

This will give the smoke flavors that accumulated on the outside of the cheese time to permeate into the rest of the cheese and also mellow out in flavor.

How To Choose The Right Cheese For Cold Smoking

Even though youll be using a cold smoker, you still need to choose a cheese that has a higher melting point than the rest.

Solid milk fat in cheese traditionally begins to melt at 90 degrees Fahrenheit, so choosing a cheese that has a melting point lower than this will make the task even harder.

Cheddar, halloumi, gouda, and mozzarella are all great cheeses to choose from due to their higher melting points.

Additionally, dont feel as though you need to buy premium cheese for smoking. Even inexpensive supermarket cheese will work fine and becomes delicious after being smoked.

Vertical Or Offset Charcoal Smoker

The entry level Char-Broil Offset Barrel Smoker.

Fill your firebox or lower charcoal basin with a few handfuls of unlit charcoal and create a small hollowed out depression in the center where you can add your lit briquets.

If your smoker comes with a water pan, like the Weber Smokey Mountain, fill the water pan as well to help stabilize the temperature and add moisture to the cooking chamber.

Light a charcoal chimney about 1/4 way with charcoal and wait about 15 minutes for it to fully ignite.

Fill your water pan first, then add the lit briquets to the center depression you created.

Keep the dampers about 1/2 way to 3/4 open until the temperature is to about 180 deg F. Then slowly close them down until they are just barely open and you are maintaining a temperature of 225 deg F.

Place 1 chunk of smoking wood on top of your lit charcoal once the smoker is up to temperature and put your ribeye steaks on.

Meanwhile prepare a skillet or separate grill to reverse sear the steaks when they are ready to be taken off.

The Classic Masterbuilt Electric Smoker

For Propane: Open your gas valve and light the bottom burner. Adjust it to keep the temperature constant at 225°F

For Electric: Plug your electric smoker in and turn the temperature to 225 deg F.

While it comes up to temperature, add smoking wood chips, not pellets, to the smoking wood tray.

Fill the water tray if there is one.

Place your ribeye steaks on the rack and close the door.

What Should The Internal Temperature Of Steak Be

The best way to check when the kabobs are done is to check the internal temperature of the steak with an Instant Read Meat Thermometer.

Each person will have a different preference on what the internal temperature should be, but listed below is a guide.

We prefer ours in the 120-140 degree F range.

  • Medium Rare: 130 degrees F

At What Temperature Do Wood Chips Smoke

It takes around 20 minutes for the wood chips to start smoking. Wood chips will begin to smoke at a temperature between 570 and 750 degrees Fahrenheit .

All smoke chips will start smoking at these temperatures, but the rate of smoldering will vary. Fruity wood chips such as apple and peach, will burn much faster than nut wood chips like pecan or hardwoods like hickory.

If the wood chips you use have a lower temperature than 570 degrees F, then they will not smolder properly, and your food will not be infused with a smoky flavor.
