The Equipment Youll Require
Were sure youre wondering if the products you need are hard to come by, but guess what? They arent. The majority of the items are standard. In addition, not everything will be used to clean all of the smokers components, as some are easier to clean than others.
Youll need a metal container, a soft brush, a cleaning cloth, a spray bottle, and sponges for the most part. To avoid scratching your smoke, we recommend using a soft bristle brush rather than a metal brush.
Additionally, we recommend using diluted apple cider vinegar in a spray bottle if possible to clean your smoker. Use half and half water and apple cider vinegar to make the perfect acidic natural cleaning solution. Apple cider vinegar eliminates bacteria, but to get rid of the vinegar odor, youll need to re-season your smoker after cleaning.
What Is Reverse Sear Cooking
Let me explain. When you google perfectly cooked steak, what you will typically see is the more traditional restaurant method, which is where the meat is seared hot and then finished in the oven to finish cooking. But what I want to share is something that adds incredible flavor and allows you to finish with that beautiful crusted texture. The reverse sear. And better yet, the SMOKED reverse sear.
And here you thought you couldnt achieve a perfectly cooked steak on a smoker?!
The idea is, instead of sear first then finish in the oven, you smoke it first at a low temperature to get the smoky flavor, and then finish it by searing for the beautiful and flavorful crust. But first, lets talk about

My Masterbuilt Electric Smoker Is Not Smoking
The Masterbuilt electric smoker is not a high smoke unit. Electric smokers main appeal is their ease of operation over charcoal or propane smokers. We can do a few things to help. There are even ways to improvise that will improve your smokers output.
First, before we modify anything always double-check that the wood chip tray is clean each time you use your smoker. Fill the wood chip tray halfway with chips and wait for it to start smoking prior to beginning the normal chip loading process.
Crush a few pieces of charcoal into four chunks, and put a few chunks into the tray before you start. Then add one chunk of charcoal each time you load chips into your smoker. By adding charcoal, the burning temperature will increase and add a nice charcoal flavor.
Run your smoker above 200 degrees, because the thermostat will turn the heating element off when it reaches the temperature setting. At this point, your chips will stop burning. Due to how the thermostat works this smoker would be a very poor choice for cold smoking, but we can fix that.
There are many ways to add smoke to your unit. A factory smoke generator, an Amazin smoke tray, or even an external burner tray modification. The Masterbuilt smoke generator is by far the easiest way to go and will provide the best experience.
My favorite device for all-around ease of use is tray Amazinsmoke tray. You load the tray with pellets of your choice, light the cornerwith a torch, and put it on the bottom tray of your smoker.
Best Electric Smokers For The Money
There are good reasons why the electric smoker is a viable niche in the equipment market. Our view is also that they are especially good as an introduction to smoking meats, and that is how we are approaching this project. The market keeps growing with alternatives to get that smoking goodness applied to meats, veggies, cheese, and more. Is there really a place for all the categories? Of course, the answer is yes and no.
The cheapest way to smoke is with a metal container for the heat and a tube to another container to capture the smoke surrounding the food. Dead fridge, old file cabinet, a sturdy wood crate, DIY it together with metal ducting and youre there. Light a fire, add wood as needed, and repeat. An insulated box, an electric element and a thermostat steps the game right into the niche for electric smokers.

Why Wont My Wood Chips Smoke
It is not uncommon to think that your wood chips are not creating enough smoke.
The most common reason for wood chips not to smoke is the wood is too dry, which can happen as a result of over-seasoning. The second reason is that the wood chips are not at their ideal smoking temperature. If they are below 570 degrees F, then they will not begin to smoke at all.
Having a temperature too high can also cause the wood chips to burn too quickly, so there is a lack of smoke and flavor.
How To Operate A Masterbuilt Electric Smoker

Best Smoking Wood Choices For Ribeye Steaks
Like weve done previously with smoked lamb chops, since you are only smoking these ribeye steaks for a shorter period of time relative to something like a ham or leg of lamb, you can get away with using some stronger flavored smoking woods.
We prefer the mid range smokey flavor of hickory wood on our smoked ribeyes, but if you want an even bolder flavor you can try using mesquite.
If you DO want to try mesquite, we would only recommend applying smoke for the first 30 minutes and no longer.
Otherwise, your ribeyes can get TOO smokey and the mesquite will overpwer them.
If you are looking for a milder wood to smoke them with, you can try oak, apple, or cherry instead.

Vacuum Seal For 2 Weeks Before Serving
Next comes the hardest part about smoking cheesethe waiting.
After you have let your cheese breathe for 24-48 hours in the refrigerator you need to let it mellow.
You will need to place it in an airtight container such as a zip lock bag, or better yet, a vacuum sealed bag and put it back in the refrigerator for at least2 WEEKS.
We know, its hard to wait and you want to try it now, but trust us, it will be sooooo much better in a couple weeks.
This will give the smoke flavors that accumulated on the outside of the cheese time to permeate into the rest of the cheese and also mellow out in flavor.
How To Choose The Right Cheese For Cold Smoking
Even though youll be using a cold smoker, you still need to choose a cheese that has a higher melting point than the rest.
Solid milk fat in cheese traditionally begins to melt at 90 degrees Fahrenheit, so choosing a cheese that has a melting point lower than this will make the task even harder.
Cheddar, halloumi, gouda, and mozzarella are all great cheeses to choose from due to their higher melting points.
Additionally, dont feel as though you need to buy premium cheese for smoking. Even inexpensive supermarket cheese will work fine and becomes delicious after being smoked.

Vertical Or Offset Charcoal Smoker
The entry level Char-Broil Offset Barrel Smoker.
Fill your firebox or lower charcoal basin with a few handfuls of unlit charcoal and create a small hollowed out depression in the center where you can add your lit briquets.
If your smoker comes with a water pan, like the Weber Smokey Mountain, fill the water pan as well to help stabilize the temperature and add moisture to the cooking chamber.
Light a charcoal chimney about 1/4 way with charcoal and wait about 15 minutes for it to fully ignite.
Fill your water pan first, then add the lit briquets to the center depression you created.
Keep the dampers about 1/2 way to 3/4 open until the temperature is to about 180 deg F. Then slowly close them down until they are just barely open and you are maintaining a temperature of 225 deg F.
Place 1 chunk of smoking wood on top of your lit charcoal once the smoker is up to temperature and put your ribeye steaks on.
Meanwhile prepare a skillet or separate grill to reverse sear the steaks when they are ready to be taken off.
The Classic Masterbuilt Electric Smoker
For Propane: Open your gas valve and light the bottom burner. Adjust it to keep the temperature constant at 225°F
For Electric: Plug your electric smoker in and turn the temperature to 225 deg F.
While it comes up to temperature, add smoking wood chips, not pellets, to the smoking wood tray.
Fill the water tray if there is one.
Place your ribeye steaks on the rack and close the door.
What Should The Internal Temperature Of Steak Be
The best way to check when the kabobs are done is to check the internal temperature of the steak with an Instant Read Meat Thermometer.
Each person will have a different preference on what the internal temperature should be, but listed below is a guide.
We prefer ours in the 120-140 degree F range.
- Rare: 120 degrees F
- Medium Rare: 130 degrees F
- Medium: 145 degrees F

At What Temperature Do Wood Chips Smoke
It takes around 20 minutes for the wood chips to start smoking. Wood chips will begin to smoke at a temperature between 570 and 750 degrees Fahrenheit .
All smoke chips will start smoking at these temperatures, but the rate of smoldering will vary. Fruity wood chips such as apple and peach, will burn much faster than nut wood chips like pecan or hardwoods like hickory.
If the wood chips you use have a lower temperature than 570 degrees F, then they will not smolder properly, and your food will not be infused with a smoky flavor.
Clean The Individual Parts
The portions listed below are some of the most critical parts of most Masterbuilt models that must be cleaned after use.
- The Racks
During the seasoning process of a smoker, such as the Masterbuilt MES 140s Digital Electric Smoker, it is necessary to oil the racks. It prevents food from adhering to the racks and rusting them. However, leftovers of cooking liquid can build during basting, prompting cleanup.
The first step is to remove any leftovers with a brush and a cleaning cloth. Scrub it with apple cider vinegar after that, but soapy water will suffice.
This helps to get rid of all the grease on the racks. Scrubbing them with hot water is recommended since it is more effective at eliminating grease.
After a pre-clean, many people will throw food racks and drip trays in the dishwasher. For best results, use a high heat setting and a minimal amount of dishwasher soap.
- The Ashtray
When wood chips are used, ashes collect in the ashtray. You should wipe the ashtray before using it again to avoid it being overcrowded. Youll need a metal container, apple cider vinegar, and hot water to clean it.
Begin by collecting all of the ashes in a metal can and cleaning the tray with a water-apple cider vinegar combination. After youve sprayed the liquid on the tray and let it dry, finish it up with a brush or cleaning cloth. Always remember to clean the ashtray since if it is left out for too long, the soot will blacken it.
- Water Pan
- Clean the exterior

Add More Wood Chips And Refill The Smokers Water Pan:
When the first batch of wood chips has stopped making smoke, add more to the tray. Make sure you add just half a cup at a time. Using too many wood chips can alter the flavor of the food giving it an overwhelming smoky taste.
Based on the instruction manual, follow the steps, and refill the water pan whenever it empties. The water in the pan turns to steam and this keeps the meat tender and juicy as it gets smoked.
Accessories You Can Use With A Masterbuilt Electric Smoker
For cooking equipment thats often out in the open, getting a custom-fit electric smoker cover is a no-brainer. Itll safeguard your kitchen tool from the changing weather conditions and help it last for a long time.
On top of that, buying a smoke generator to aid your Masterbuilt smoker is a marvelous idea. Given that its an electric smoker, its smoke production isnt over-the-top. So if you want more smoke, this is the device you should get.
