How To Make The Best Steak Seasoning Recipe

ONE: Mix all the ingredients together and store in a glass jar in a cool, dry place until ready to use.

I started making my own steak seasoning so it is free of non-caking additives, and other such abominations, and I could control the amount of each spice added to it.

I can be picky and I like mine spicier than they make it so that means my home version contains more red pepper flakes than is humanly necessary!

This recipe for all-purpose steak seasoning makes a good amount so make sure that you store it in a cool, dry place until you have used the last crumb! In my house, it doesnt take long!

What Seasonings To Use On Steak

There are countless options to choose from when it comes to applying seasoning to steak, but we have the favorites below. These go great with different types of cuts.

1. Cinnamon- Cinnamon used on steak helps keep the meat moist by increasing blood flow to the surface area. This allows the meat to stay tender throughout the entire cooking process.

2. Rosemary- Rosemary contains volatile oils that impart a rich flavor to food. It blends well with other seasonings yet works best as an independent meat ingredient. One word of caution rosemary has a strong odor, so make sure not to overdo it.

3. Chili powder- This fiery kick adds a nice flavor to any dish that uses chili powder, especially beef. The color of the powder also makes it easy to see if youve added enough spices to suit your taste.

4. Cumin- Cumin goes well with most dishes. When applied on the surface of the steak, it imparts a rich aroma that complements the natural flavor of beef. Just be careful not to add too much since excess cumin can become overly spicy.

5. Red pepper flakes- If you enjoy Asian flavors in your food, red pepper flakes are a must-have. They give a nice burst of flavor to many foods and pair very well with beef.

Don’t Use Old Herbs And Spices

Old herbs and spices mean less flavor. And for this spice blend, we definitely want newer dried herbs and spices!

Dried spices and herbs have a shelf life of about two years when properly stored, depending on the spice or herb. To test potency, crumble some of the herb or spice into the palm of your hand with your fingers. If you can barely smell it or its dusty smelling, its time to get some new stuff!

Pro tip: Use an airtight glass jar to mix the ingredients together and youll save on cleanup!

Seasoning Your Steaks In Advance

If you’re ok with starting early and want to give this method a try, here’s how: Pat the meat dry with paper towels and sprinkle both sides of the steaks generously with Kosher salt. Be sure to get the salt on the edges of the steaks as well. That’s 1½ inches of surface you definitely want to cover. Press the salt crystals into the meat with your hands.

Transfer the steaks to cooling racks with a sheet pan or cookie sheet underneath, cover the whole tray with plastic wrap and stick them in the fridge, for up to 24 hours. Take them out about 30 minutes before cooking, pat them dry again with paper towels , season with freshly ground black pepper , and then grill as you normally would. The reason to pat them is that a dry steak will form a browner crust when it’s cooked.

Freshly Ground Black Pepper

There’s another debate about seasoning steaks, which relates to black pepper. One school of thought suggests that applying the pepper before cooking can cause the pepper to burn while you cook it, imparting a bitter flavor. Followers of this school suggest grinding pepper onto the steaks after searing them or right before serving. The other school simply seasons their steaks with freshly ground black pepper before cooking and doesn’t give it a second thought.

Who’s right? It’s not that the notion of burning pepper is complete nonsense in theory, yes, black pepper could burn. The problem with peppering midway through cooking is that the pepper granules might not stick to the meat. You could pass a pepper grinder at the table, but if you’re cooking outside and eating in an informal style, this may not be feasible. So unless you’ve detected a burnt pepper flavor on your steaks in the past, by all means, season your steaks with freshly ground black pepper before cooking them.
