Velveting is a process used in traditional Chinese cooking to prepare meats for stir-frying. Chinese velveting techniques vary, depending upon the cut and type of meat used for the dish, and also involve tenderizing, marinating, and different cooking methods.

Through the process of velveting, meats retain their moisture and take on a soft and velvety texture that is a signature quality of Chinese cuisine.

What Kind Of Beef Do You Use For Steak Stir

Wed like to tell you that any cut of beef works when trying to achieve a high quality stir-fry, but when it comes to making the very best steak stir-fry, its all about the cut. While you can use flat iron, skirt steak or sirloin, our favorite cut of beef for stir-frying will always be flank steak. Heres why we love flank steak for stir-fries:

  • Its lean! Flank steak is made from a cows abdominal muscles and is therefore super lean. Perfect for stir-frying in our ultra-delicious garlicky soy sauce and butter sauce.
  • Its affordable. While flank steak is not always the cheapest cut, it is one of the more affordable cuts of beef.
  • It slices easily into thin, even pieces. And thin slices are the key to perfect stir-fried beef. But more on that later.

Note: If you cant find flank steak at your local grocery store, sirloin or skirt steak will also yield delicious results.

Can You Use Any Steak For Philly Cheesesteak

The answer to this question is no, you cannot use just any steak for a Philly cheesesteak. The steak must be thinly sliced and tender in order to work well in the sandwich.

Traditionally, the Philadelphia cheesesteak is served with thinly shaved steak , and it is grilled on a grill. It can be served alone or with toppings such as onions and peppers. provolone cheese or Cheez Whiz are the most common ingredients in the sandwich. provolone or Cheez Whiz, a shelf stable cheese product sold in jars, are two other cheeses on the market. Place steak in the freezer for about 10 minutes on a sheet pan and freeze it. A classic cheesesteak can also be made with the top round. It is not recommended to consume meat that is difficult to cook, such as flank steak or brisket.

    The answer to this question is a little complicated. The truth is, the amount of water you add to your stir-fry will depend on the type of stir-fry youre making, as well as the ingredients youre using.

    Generally speaking, you wont need to add any water to your stir-fry if youre using a light oil, like vegetable oil. However, if youre using a more viscous oil, like peanut oil, you may need to add a little bit of water to help the ingredients cook evenly.

    If youre stir-frying a wet ingredient, like broccoli, youll probably need to add a small amount of water to help the broccoli cook. However, if youre stir-frying a dry ingredient, like chicken, you wont need to add any water.

    In general, you should add just enough water to help the ingredients cook evenly. If you add too much water, your stir-fry will be watery and unsatisfying.

    • Step 3 Add one-third of the beef strips and stir-fry for 1-2 minutes or until the beef is browned and just cooked. Transfer to a plate. Repeat with the beef in two more batches, reheating the wok between each batch. Remove all beef from the wok.
    • Step 4 Adding and cooking the beef in batches is very important as it seals the meat, keeping in the juices. If you add too much meat at once, the wok will lose its heat and the meat will stew and become tough.
    • Step 5 Heat remaining oil in the wok over medium-high heat. Add the onion , capsicum , corn and broccolini . Stir-fry for 2 minutes. Add the water , cover and cook for 30-60 seconds or until the vegetables are just tender.

    It Also Doesnt Have As Much Flavor The Best Choice For A Philly Cheesesteak: Top Sirloin

    Sirloin is also a great choice for a Philly cheese steak, in addition to top sirloin. Although it is slightly more expensive, it is also more flavorful. There will be a little more tenderness than a ribeye, but not as much as a round. It will also cost more. The most affordable option is Top/Eye of Round however, it will be less tender than the other two.

    Shortcut To Tenderizing Beef At Home

    If the process used by Chinese restaurants to tenderize beef described above sounds a bit like a hassle, you can still tenderize beef using a shortcut.

    Baking soda is a powerful tenderizer, but if too much is added, it can add an off-taste to the beef, which is why it is rinsed off.

    The solution is to add a smaller amount of baking soda and increase the marinating time. Adding 1/8 teaspoon to 1/4 teaspoon of baking soda and 2 to 3 tablespoons of water per pound of beef. Mix and work it into the meat before marinating. This will also do a fine job tenderizing!

    Increase the marinating time for your beef by at least 15 minutes.

    I will also say that adding water to the beef is a personal choice. I feel there are merits to having both moist hydrated beef or a drier beef for some stir-fry dishes.
