The age-old question when it comes to cooking steak centers on what seasonings to use if any. Some say marinate. Others have spent years perfecting their spice and herb mixtures. Still, the purists insist the steak go bare or maybe just sprinkle it with a little salt. If you decide to go with a seasoning, you are faced with another question: Should you season the meat before or after cooking?

We decided to conduct our own impromptu experiment and put both methods to the test. It shouldn’t come as a surprise that our taste testers enjoyed both ways. But they did come to a conclusion: If you want a stronger burst of flavor from your spices, season after cooking. If you would prefer to taste steak with just a hint of kick, season before cooking.

How To Grill Steak

Grilling steak can be intimidatingespecially when everyone has a different opinion about how cooked it should be . But I promise you that, in reality, it’s easier and faster than grilling chicken. Below is our basic guide for grilling steak. Follow our rules and cooking times, and you’ll be a grill boss in no time.

Remove the chill.

Steak right out of the fridge will cook unevenly. Set yours out at room temperature for 30 minutes before grilling

Be direct.

Direct heat means you’re cooking something directly over the flame . It’s what gives grilled meat that beautiful dark char. Indirect heat means you’re cooking the food to the side of the heat source. For steak, you’re mainly dealing with direct heat.

Temperature matters.

The next thing to consider is temperature. If you’re not super comfortable in the kitchen, yes, you should go buy a meat thermometer if you don’t have one already. If you like your steak medium rare, 130-135° is your range. For medium, it’s 135-145° and for medium well, 145-155°. Please don’t go any higher than that! For all you grill bosses out there, a good way to check if the meat is done is by touch. It should give in a little bit in the middle but bounce back quickly after you press it.

If you’re working with a leaner cut, marinate it!

Let it rest.

Dont even think about slicing into your steak until its had a minimum of10 minutes to seal in all its glorious juices.

Slice against the grain.

A Guide On The Temperature Of A Gas Grill According To The Cut Of The Steak:

To know about what temperature to grill a steak on a gas grill, the following temperature guide will help you in connection with the cut and the thickness of the steak.

  • For a half-inch steak, the gas grill temperature is somewhere between 420 to 450 degrees Fahrenheit.
  • The best gas grill temperature for a three-forth-inch steak is between 350 to 400 degrees Fahrenheit, but it also depends on the type of
  • The gas grill temperature for a one-inch steak is somewhere between 320 to 350 degrees Fahrenheit. For medium-rare and rare-cooked steaks also this temperature of the gas grill is quite suitable.

Let The Steak Rest Briefly Then Serve

Setting The Temperature To Grill Steak

One of the most common mistakes people make is determining the success of the grilling by only the steak cook times, which is something you should avoid at all costs. You have to understand that its a combination of cook time and temperature. The temperature on the grill varies depending on the steaks size, type of meat, thickness, and even the shape of the cut.

Ok, we know this is confusing for most. Run through the steak temperature guide below to understand how to grill a steak. But before that, its nice to read about the best time to buy a grill on the market? Then you can save some costs by purchasing a grill for less $500 or a grill for less than $300.

Another important factor we need to emphasize is that you will have to preheat your gas grill around 450°F 500°F irrespective of the type of steak you grill. This is how you do it after turning the gas grill on, set it to a high heat setting and close the lid to inner temperature to increase allow it around 30 minutes. How To Grill Steak:

1. Season the meat and allow it to rest before grilling!

You can use a wet marinade , or a simple dry seasoning to add flavor to your steak. Allow the steaks to rest at room temperature at least 15-20 minutes before grilling and season them about 10-15 minutes before grilling.

2. Clean and oil your grill.

Turn your charcoal or gas grill to high and heat it for about 10-15 minutes before you start cooking. If you have a temperature gauge on your grill, look for it to reach about 450-500ºF. Otherwise, observe the coals or gas heat level to see if the coals are barely covered with ash or hold your hand over the heat and you shouldnt be able to handle it for more than about 3-4 seconds.

Use a grill brush to brush away any chunks of charred meat and drippings. To prevent the steak from sticking to the grill, soak a paper towel with some vegetable oil and use tongs to rub it gently over the grill rack.

3. Sear and cook: only flip once!

The cook time of your steak will largely depend on the thickness of the steak. Heres a rough guide but use a thermometer for more accurate internal temperatures.

  • 1 inch thick : grill 3-7 minutes per side depending on desired doneness.
  • 1 ¼ inch thick : grill 8-10 minutes per side depending on desired doneness.

Only flip steaks one time during cooking.

4. Use a thermometer to check for doneness.

5. Let it rest.

Helpful Tips For Grilling To Keep In Mind

Once you have a good grill sear over high heat, you can move your steaks to a lower temperature to make sure they dont dry out quickly. This is known as indirect grilling. To do this, sear both sides over high heat for a couple of minutes on each side, and then move to low heat. Only turn your steaks once the full time for one side has been reached. Flipping too often on the grill can ruin the cooking process and dry out your steaks faster.

Also, always allow your steaks to rest. You should plan to rest your steak for 5 to 10 minutes to allow the juices to move back through the meat for ultimate flavor and tenderness.

If you do use a digital meat thermometer to better gauge your time for steaks on the grill, make sure you remove your steaks when its internal temperature reaches about five degrees below your desired temperature, since it will continue to cook a bit after you remove it from the grill. If you want your steak to cook to 135 degrees, then remove it when it hits about 130 degrees.

What Temperature To Grill Tenderloin

Once the grills are adequately hot, you can place the tenderloin over the heat. A temperature of 135°F for eight-minute per side would provide you a good cook of medium-rare and 140°F for medium.

However, according to our perspective, tenderloin filets must not be cooked more than that, as they tend to get overcooked when you go beyond Medium. Obviously, you dont want to injure a pricey piece of meat by charring it all you have to do is, stick to the timings mentioned above and temperature levels.

What Temperature To Use

In most of my grill recipes, I give a range, and many other sites will also. But, this is not a kitchen oven so you can’t be really exact. Just opening the top of a grill releases lots of heat. All this means is it is a little more an art than a science.

I like to think of three levels of heat I usually use. These are my arbitrary divisions, and I’m sure others may disagree.

And there are many times you should deviate from this, admittedly. An example would be my Grilled Whole Chicken where I used indirect heat in the 350° range.

Or if I’m grilling a 1 ½ inch thick steak, I won’t be using high. I might use a reverse searing or I would sear on high then move to a lower indirect heat to finish.

What Is A Medium Rare Steak

MEDIUM RARE A truly seared steak. A medium rare steak is the recommended doneness to taste the natural flavor of the meat. Its usually how meat connoisseurs and chefs like to eat it.

  • Internal Temperature: 130-135
  • Grill Time: ~3.5 minutes per side

What Temperature To Grill Round Steak

Since the round steak is naturally tough, they have a tendency to get rubbery once they go past the medium-rare stage. The recommendable temperature for round steak is 130°F, 8 minutes per one side.

Remember to use a thermometer to keep the temperature at the ideal range , and it gets cooked even after you remove it from the grates. Of course, you can cook them even up to well-done steaks as far as you dont care them to a bit leathery.

Checking Steak Doneness Based On Internal Temperature

The internal temperature is critical to cook your steak to the desired doneness you want. The internal temperature is recorded in the thickest part of the steak and you should absolutely use a probe meat thermometer to check your temperature readings.
