How To Make Steak Marinade

Marinade VS Dry Rub on Steaks – What’s Better? [Steak Experiment]

Making the marinade itself takes practically notime! You will need a bowl and cling film or a Ziploc bag.

  • Make the marinade. In a mixing bowl or large Ziplock bag, combine cup of soy sauce, cup of lemon juice, cup of olive oil, 2 tablespoons of Worcestershire sauce, 1 tablespoon of garlic, and ½ a teaspoon each of salt and pepper. Add 1 ½ pounds of steak and seal or cover the bowl with plastic wrap.
  • Marinate the steaks in the refrigerator for at least 1 hour, preferably overnight, but no more than 24 hours.
  • Cook your steak. Grill or pan sear your steaks until they reach your desired doneness.
  • Rest and Serve. Transfer to a plate or cutting board and top each steak with 1 tablespoon of butter. Loosely tent foil over the top and let rest for 10-15 minutes before eating.
  • Use your steak marinade to serve up a flavorful pan seared NY strip or grilled cowboy ribeye steak. For more ideas on what to serve with steak, check out our page on the best steak side dishes! Enjoy!

    • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
    • Place beef in a ziplock bag with Marinade and marinade overnight .
    • Remove from the fridge 30 minutes before cooking to bring to room temperature – key for even cooking of steaks. Shake off excess marinade.
    • Brush BBQ Grills with oil, then heat on high heat until is really hot – you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil – it will heat almost instantly.
    • Add steaks. For 2cm / 3/4″ thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes .
    • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
    • Serve! I couldn’t resist garlic butter – see recipe in notes.

How Long Does A Marinated Steak Last In The Refrigerator

The answer to this question depends on the type of steak and the marinade.

If you are cooking a steak, it can last for up to three days in the refrigerator. For a steak without a sauce, it lasts for an entire week.

A marinated steak can last up to two weeks in the refrigerator if you use oil and vinegar dressing or barbecue sauce, and an entire month with other types of marinades.

How To Marinate Steak Without A Recipe

For the grill, I always choose a thin, quick-cooking steakIm talking skirt, hanger, or flank steak tri-tip, short ribs, faux hanger , or entraña steak. These are all cut from large, strong, active muscles, which makes them more flavorful and great for serving a crowd. But those strong muscles are also naturally tougher. Which is why these steaks require a marinade.

Making a steak marinade is a lot like making a salad dressingyou can customize it depending on your mood, your menu, or whatever happens to be in your pantry. But unlike salad dressing, you want the flavors in your marinade to be extra strongstrong enough to infuse the meat with flavor that will linger long after the marinade is discarded.

Every steak marinade needs four elementsoil, acid, flavoring, and salt. Once you understand the basic ratio and timeline of how to marinate steak, youll never need to look at another recipe again.

Lets dig in: heres how to marinate steak without a recipe:

What Do You Look For In A Meat Tenderizer

    Best Steak Marinade

The blades of a needle or blade meat tenderizer are another important factor to consider. Your blades should be durable and sharp to ensure maximum efficacy as a kitchen tool. Weak blades are likely to break after youve used them several times or if you try to use them on a very tough piece of meat.

    Why Marinate A Steak

    • Tenderize: Marinades contain acidic ingredients like wine, vinegar, lemon juice, or any combination of them. The acids change the consistency of the meat, making it tender.
    • Flavor: Marinades usually contain salt, herbs, aromatics, & bold flavors which in turn flavor the meat.
    • Caramelize: Marinades help with caramelization to give that nice brown crust we love so much.

How Long Do You Marinate Steak

Even though I swear by the 20-minute time on this marinade, you can soak it for longer. For example, if you have extra time or want to make this marinade in the morning or the night before, you can either make it and marinate it longer or put it all together 20 minutes before you are ready to grill.

If you are using a lesser cut of steak, you can go longer to really tenderize it. If you get in a real pickle or forget about it, your steak will still be good to cook for up to 24 hours in a marinade.

Should You Oil Steak Before Seasoning

Oil the meat, not the pan This ensures a nice, even coating, helps the seasoning stick to the steak and means you wont have a pan of hot oil spitting in your face. If youre feeling particularly indulgent, drop a nice blob of butter into the pan once the steak is underway and use it to baste the meat.

Should You Let Your Steak Rest

Perfect Tender Flank Steak | Marinade and Grill Recipe

Always, always, always let the meat rest before slicing it. You see, all the juices inside the meat are driven to the steak’s center as it cooks. Those juices need time to redistribute within the meat, making sure every bite is as juicy as the next. If you were to slice it right away, those juices would spill out onto the cutting board, making some of the steak taste dry. After going through so much trouble to infuse the meat with those 3-ingredient marinade flavors and cook it to the perfect temperature, it would be a shame to end up with a less-than-perfect steak.

Instead, let the steak rest for at least three minutes . Then, grab a sharp carving knife and slice away. Some juices will still come out as you slice, so it’s best to use a cutting board with a deep groove around the outside to catch the excess liquid.

How To Apply A Steak Marinade:

    • First, decide what steak marinade recipe youre going to make. Weve listed several of our favorites homemade recipes below, but a quick online search will result in hundreds of recipe options. If youre pinched on time, you can buy one too .
    • Next, make the steak marinade recipe. Most marinades use very simple pantry ingredients like olive oil, soy sauce, and Worcestershire sauce.
    • If you want a deeper flavor, prick the surface of the meat with a fork before marinating. Less tender cuts should be marinated for anywhere from 20 minutes to 24 hours. The longer you marinade the beef, the stronger the flavor will be.
    • Then, place the steak marinade and steak in a sealed plastic bag or glass container. Immerse the beef in the liquid, and refrigerate until its time to cook. Dont use a metal container for the marinade since the acidic ingredients can react with metal.
    • Once youve placed the steak in the steak marinade mixture, place it in the refrigerator for anywhere from 20 minutes to overnight. Never marinate beef at room temperature for health safety reasons.

Is There A Natural Meat Tenderizer

Salt as Natural Meat Tenderizer Salt and its alkaline cousin, baking soda, both break down proteins in beef. A thick coating of kosher salt, sea salt or baking soda applied one hour before cooking will draw water from the meat, allowing some of the salt or soda to sink into the beef. This improves the meats texture.

How Long Should You Marinate Steak With This 3

You don’t need to marinate a steak for as long as you might think. In our first 3-ingredient steak marinade test batch, our top sirloin steak was in the marinade for only 30 minutes before cooking it. Was it long enough? You bet! The flavor coated the exterior of the steak, seasoning each slice to the perfect amount of flavor. The flavors were stronger when we extended the marinade time to four hours but not necessarily any better or worse than our 30-minute marinade.

You certainly don’t want to marinate the steak for longer than 24 hours. The acidic component of the marinade will work overtime. Instead of tenderizing the outside of the meat, it will turn it to mush. That’s not exactly the texture we’re hoping to use to describe our steak. The salt in the marinade can also become too intense over time, so try to keep your marinade time between 30 minutes and 12 hours for the best results.

Acid Makes Tougher Cuts Perfectly Tender

The acid component of the marinade is what helps to soften and break down tougher cuts of meat. It tenderizes muscular connective tissue and can completely transform steaks that would be chewy into something that melts in your mouth. Vinegar is a great choice and you can select the perfect flavor based on your preferences and the other ingredients in the marinade. Balsamic, red wine, apple cider or rice vinegar can all be great options depending on what youre cooking. You can also use the acid from citrus fruits like lemon, lime or orange for this part of the marinade.

“My Mom used to make this a lot while we were growing up. I hoped that these would be similar to how she used to make them. The meat only marinated for 30 minutes and was long enough to be able to taste the marinade, but I wish I would have let it sit longer. I let everyone add their own garlic salt and hot sauce to taste. It turned out fantastic.”

    Tenderize The Meat Physically:

The first thing you should do is breaking down the muscle fibers of the tough meat steak. A meat mallet comes handy here to get the job done for you. However, you must be careful when pounding the meat. Because you dont want to ruin your meat with the mallet. Also, a knife or even a fork will be pretty much useful here for scoring the surface of the meat.

Should I Marinate Steak Before Cooking

Some steak recipes call for marinating a steak before cooking it. This method does take more time than pulling steak from the refrigerator and cooking it, so you might naturally wonder if its worth the extra time and if its even necessary at all.

We love a good steak marinade to add flavor to steak, but we can also admit when its not a necessary step in the process of getting your steak to the dinner table. Read this guide to determine when steak marinade is needed and when you can skip it in favor of a quicker meal.

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

When I Grill Steaks They Come Out Toughwhy

Lets rewind a little bit you probably missed adding an acidic touch to your marinade recipe. Muscle fibers within your steak need to be broken down, as well as the proteins turned into gelatin in order to make your steak tender. Over high heat and with more tender cuts of steak like filet mignon, this happens very easily. But for tougher cuts of meat, you need to grill it slowly and continue to keep it covered in marinade.

Cooking a steak might seem as simple as putting it on a flaming grill or in a sizzling pan, but there is a lot more prep work that goes into making the perfect steak meal than you may think.

First, you have to select the right cut of meat, then you have to determine how you want to cook it, what you want it to be served with, and what level of doneness you want the steak to reach when it’s finished. Another crucial step is deciding on the marinade you’ll have for the steak, but it isn’t as simple as just placing the meat into some sauce.

“Marinating a steak is done for many reasons, but the two main reasons people will marinate their steaks are for flavor and texture,” says Stephen Bukoff, Executive Chef at The Langham, Boston. “Once the marinade contacts the meat, it starts to break down the tissue, making the meat tender.”

So what is this chef’s favorite way to marinate meat? Read on to learn about Bukoff’s suggested recipe and method for marinating the perfect steak.

Selecting a marinade is subjective and dependent upon the preferred flavor profiles of whoever will be eating the steak, but Bukoff says one of his favorite combines red wine vinegar, soy sauce, olive oil, fresh garlic clove, shallot, rosemary, thyme, salt, pepper, and Worcestershire sauce.6254a4d1642c605c54bf1cab17d50f1e
