What’s The Difference Between Grass Fed Beef And Grain Fed Beef

Ep.1 – Grass Fed Beef: The Steakhouse Steak

In the U.S., we have a wide variety of labeling laws that permit processors to make claims about the meat they sell. Many of the labels seem to indicate quality, but the rules for labeling are often not understood by the average person. In fact, most of the labels we see on grocery store meat tell us a surprisingly small amount about what we are eating. Grass-fed beef is one of those misleading labels.

It might surprise you to learn that almost all cattle in the U.S. are grass-fed for the majority of their lives. Prior to slaughter, most cattle are fed a grain-based diet to increase the fat content and improve the flavor and texture of the meat. So when you buy a 100% grass-fed steak, you are simply buying an animal that wasn’t finished on grain.

The Best Steak Grilling Outside

  • 1-2 tablespoons coarse salt
  • 1-2 teaspoons ground black pepper
  • 1-2 cloves garlic, minced
  • Either 1 sirloin, sirloin tip, tri-tip, top round or London Broil, rib eye, porterhouse, t-bone, top loin or tenderloin steak.

Combine the salt, pepper and garlic in a small bowl. Rub the mixture into both sides of the steak, then allow the meat to come to room temperature while you prepare the grill.

Start the grill and warm it until it is hot. If you are using a gas grill, turn off all but one of the burners once it has come up to temperature. If you are using charcoal, be sure all the coals have been raked to one side. Use the hand test: the grate will be hot enough when you can hold your palm 3-4 inches above the metal for no more than three seconds.

Sear the steaks for 2+- minutes on each side directly over the flame, with the lid down. Then, move the steaks to the part of grill that is not lit. Set the lid in place and allow the steaks to cook, without flipping them, until they reach 120-135 degrees**, about 10-20 minutes, depending on the size of the steak. This will vary depending on how you want your steak cooked and thickness of steak. Remove the steaks to a platter and allow them to rest a few minutes before serving.

When In Doubt Tenderize

There are lots of great ways to tenderize meat. And any of them would work well with grass-fed beef.

Apply a marinade that contains a meat tenderizer or an acidic juice like lemon juice. Use an injector or special tenderizer utensil to push the juice into the inside of the meat. This helps break down the tissues before you cook it.

Or you can tenderize meat by putting it into a plastic bag and pounding it with a meat mallet. Better yet, salt the meat before you put it into the plastic bag. Salt creates a mini-brine to further tenderize it.

Also, cut the meat the right way, against the grain. This breaks up the stringy bits of muscle that make up the cut. It’ll be much easier to chew if it’s cut against the grain.

  • Grass-fed steak has less water and less fat content than the grain-finished steak you might be used to. Here are our best tips for cooking a grass-finished steak to perfect yumminess:
  • Grass-fed beef takes 25-30% less time to cook. If you typically cook your rib steaks 4 minutes per side, try 3 minutes with a grass-finished steak.
  • Sous vide is a fail-safe cooking method for grass-finished. If youre at all nervous about over-cooking your grass-fed steak, sous vide it in a vacuum-sealed bag. That method has the dual benefit of zero lost moisture content and temperature precision .

How Do You Marinate Grass

Combine soy sauce, oil, sugar, Worcestershire, garlic, chives and pepper in a medium bowl. Place marinade and steaks in a gallon-size zipper-lock bag press out as much air as possible and seal bag. Refrigerate one hour, flipping bag after 30 minutes to ensure steaks marinate evenly. DO NOT OVER MARINADE.

You can cook grass fed steak on a stove top using pan sears. Youll need to start the sear before you begin to grill the steaks. Once youre ready to go, youll want to turn off the burner and cover the skillet with foil to keep the steam from escaping. Then, place the lid on top of this and cook the beef over medium heat for about 5 minutes per side. This will take care of any excess grease that may have built up on both sides of your steak during the cooking process. If you dont have a skillet, try using a cast iron skillet. Or, if your skillet is already seasoned, simply add a little olive oil to it and put it over the hot pan. Cook the onions and peppers until they are tender, about 3 minutes.     No, this is really a terrible idea. Worchestershire is actually a very strong acid, making it a bad idea for cooking purposes. You should only use it when you want to tenderize meat. If youre using it to make a marinade, you should use a neutral liquid such as water or wine. For cooking, try using a milder sauce, suchas a light soy sauce. This will help prevent the sauce from becoming too strong.

Instead of soaking that meat in marinade overnight, dry age it in the refrigerator. This helps to tighten up the surface, keeping the juiciness inside. Then, just before grilling, inject that steak with your favorite marinade recipe.

    Reverse Sear: You were probably taught to cook a steak by putting it on a grill with really high heat for a minute or two, flip it over for a couple minutes, then drop the temperature until the steak cooks to the desired doneness. A technique we love for a variety of reasons is the reverse sear. It’s a simple way to get tender, juicy steak that is perfectly cooked each and every time. The downside is that it takes a little longer than the traditional method.

    How Do You Marinate Grass Fed Steak

    In a shallow dish, whisk together the lemon juice, soy sauce, olive oil, honey, and salt. Its best to keep it refrigerated for at least four hours or overnight. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

    In a large skillet, heat the oil over medium-high heat. Once hot, add the steak and cook until browned on all sides, about 5 minutes per side. Transfer to a paper towel-lined plate and let rest for 10 minutes before slicing.

    How To Cook Your Grassfed Steak In A Cast Iron Or On The Grill

  • Take your steak out of the package and pat dry.
  • If you have aged your steak for a long time, you can rinse off the steak first to remove some of the oxidized blood odor if desired.
  • If possible, let your steak sit for 30 minutes to 1 hour to get rid of the refrigerator chill and adjust to room temperature.
  • Pro tip: if you cook a steak straight from the fridge, your finished product will be more likely to have an inside cold and underdone, and an outside charred and overdone.
  • Season your steak generously.
  • You can choose a classic salt and pepper mix, or try a rub or spice mix. Grassfed beef goes well with warm, smoky flavors, like paprika, ancho chile, cayenne, and cumin.
  • Heat cast iron pan on medium-high and add enough oil to lightly coat.
  • Test that your pan is hot enough before your steak by flicking a drop of water onto the pan and listening for a sizzle. This will help you get good caramelization.
  • Add your steak and press down to get a good sear. A crust of caramelization on the outside of your steak is where you get the best flavor!
  • After you get a good sear on one side of the steak, flip and sear the other side .
  • Grassfed steaks are leaner, and as such, they usually don’t take as long to cook as a traditional steak. For perfect tenderness, we recommend cooking your steak to a rare or medium rare.
