If youve ever looked closely at a steak thats been graded USDA Prime and compared it next to a steak thats been graded USDA Choice, you know what Im talking about. Marbling is the meats internal fat. Im not talking about those big, connective ribbons of fat that curve through the middle of a ribeye but rather all those tiny white speckles that are present within the red part.

Technically speaking, there are two levels of prime and three levels of choice, according to a USDA inspector I spoke with a while back. Those highly nuanced distinctions within each grade are hidden from consumers. The top tier steaks are typically reserved for high-end restaurants. Yes, you can buy prime beef at Costco, but very few grocery stores get access to USDA Prime beef, and they certainly dont get that highest tier. Thanks to the upheaval of this pandemic, we all have access to it now. And even as some of these dining rooms begin to reopen, their butcher-shop offerings continue, at least for now.

Thats the highlight of his only U.S. restaurant, Los Fuegos at the Faena Hotel Miami Beach. Oak and charcoal fuel the specially built grill that combines a plancha, parrilla and smoker as well as the open pit that cooks whole chickens and steaks hanging from strings. Though nearly everything is kissed by the orange flames, the star of the show is the steak, in particular the 48-ounce hanging tomahawk ribeye that hovers over the flames to cook, then is served sliced alongside its giant, club-sized bone.

Asda Extra Special Wagyu Beef Rump Steak 2296/kg

Many sneer at wagyu as the rich idiots option, and this 28-day matured British rump did not look promising. It was very wet and its famed intramuscular fat did not appear to be particularly densely concentrated. Nonetheless, smoke poured out of the pan, confirming a high fat content, and this rosy, seriously tender meat as soft as an old shammy leather definitely has an unusually glossy, if not outrageously rich, mouthfeel. Beyond its beefy base, the flavour is complex, too, with red wine and tart yet honeyed fruit notes discernible. Not the best, but certainly the most interesting meat in this taste test.6.5/10

What Makes One Type Of Steak Better Than Another

We all have our own idea of what makes a steak good.

The same applies when we talk about better steaks. For this article, were going to assume that the better steak is super flavorful yet tender. Were also going to assume that cost is not a factor.

Filet Mignon comes from the tenderloin portion of the cow.

It contains very little fat and comes from a non-weight-bearing muscle. This, along with it not containing much connective tissue makes it the most tender cut of meat. However, the lack of fat does not make it the most flavorful.

This is why it is usually served with some sort of sauce or wrapped in bacon.

Strip steaks, like the NY Strip, is a good balance of flavor and tenderness. Its got some fat in it, making it more flavorful than the filet mignon. Its also a well-worked muscle, making it less tender.

The Ribeye is the most flavorful cust of meat. Look for high marbling. This is the white swirling youll see in the steak. The more marbling, the more flavorful the steak. If cooked with care, it can also be very tender.

So, what makes one steak better than another steak? A good amount of fat and cut from an area that doesnt do much work .
