Grilling certainly doesnt get any easier when all the meat is shipped directly to your house.

I had about 21 pounds of meat to break out this weekend and went straight for the rib eye and filet minion.

Rib eye is one of the tastiest cuts of beef to grill, so there is no need to marinade it. Layering the flavor is what you do with cheaper cuts of beef.

Simply let the steak sit at room temperature for at least 30 minutes, then add a thin layer of olive oil to both sides of the steak and generously season with salt and pepper.

Is Beef Chuck Eye Steak The Same As Ribeye

No, chuck eye steak and ribeye steak are not the same, but they are close. Rib eyes are from the 6th to the 12th rib of the cow and the chuck eye is from the 5th rib. Because they are located so close to each other, they do have some of the same flavor and tenderness as the ribeye.

Chuck eye steak is also not the same as chuck steak , but they are right next to each other. Once you try this beef chuck eye steak recipe, youll see that its way more tender than a regular chuck steak!

I practically jump for joy when chuck eye steak is in stock, since theres only two chuck eye steaks per cow. I usually buy all they have and freeze what I dont use.

Grilled Grass Fed Rib Eye Steaks

The Perfect Marinade for your Grass-Fed Beef (ButcherBox Ribeye Steak | Sear Roast)

Grass fed rib eye steaks cost beaucoup bucks so the last thing you want to do is waste your hard-earned cash by overcooking them. This dish is super-fast and tasty provided you follow these simple rules:

  • Salt your meat ahead of time. A day or two ahead if you remember but a minimum of 30 minutes if you dont. Per acclaimed SF chef Judy Rodgers, salting early seasons the beef all the way through and itll be more moist and tender.
  • Always bring your grass fed steaks up to cool room temperature before cooking. That means taking them out of the fridge 45 minutes to an hour before you cook them.
  • If the steaks are thicker than 1-inch, your best bet is to cook them sous vide and then sear them. Serious Eats has a primer on this method here. No SousVide Supreme? Hack a sous vide contraption yourself!
  • If your steaks are thin sear them on a hot greased grill or grill pan for about 2-3 minutes on each side undisturbed. You can snip the edge with a pair or scissors to keep them from curling up. Grass fed steaks are very lean so you gotta eat them rare or medium rare or theyll taste like leather. You should aim for an internal temperature of 125F .
  • If you cook the steaks in a pan or on a grill, you must let the meat rest for at least 10 minutes before serving it. This resting time will ensure the steak stays juicy and moist. Dont believe me? The geeks at Serious Eats proved it in their Food Lab and you can read about it here.

How Long Do You Grill Ribeye Steaks

The meat doesnt take long to grill, so prepare your side dishes in advance. Try this slow cooker corn on the cob with cilantro-lime butter and use the butter on the steaks too! I also served this low carb potato salad.

How To Cook Chuck Eye Steak On A Grill Or Stove Top

Lets talk for a second about how to get the BEST flavor out of these tender cuts of meat.

First, you need to season it really well. Dont be afraid of the salt and pepper. You want to be able to see a thick coat of seasoning on each side.

I usually season mine and place them in the refrigerator for one to two hours uncovered. This forms a nice crust on the steak.

Alternatively, you can marinate your chuck eye steaks with balsamic steak marinade.

Second, you can either grill them on the grill OR in a grill pan on the stove. I personally always choose the grill whenever possible. Brush the grates with a bit of coconut oil or avocado oil before placing the steak down so they dont stick.

Third, youll also want to make a quick herb butter to top the grilled chuck steak with. I usually do this right when I season the steaks, so the butter can have a few hours to develop its flavors as well.

You can really do whatever you want here. I just use what I have on hand. Parsley, cilantro, chives, rosemary, chiles, garlic, and different seasonings all work well.

TIP: Use about 1 tablespoon of herbs per 2 tablespoons of butter and then whatever other seasonings you want.
