Baste With A Sprig Of Rosemary

How to Make Spice-Crusted Steaks and Grilled Bacon Burgers with Caramelized Onion

This is one of those tricks that takes minimal effort but works exceptionally well. Place a sprig of rosemary in the pan with your steak. After the flip, use your tongs to grab the rosemary and mop up the pan juices. Brush it over the steak to infuse each bite with flavorful rosemary oil. By the way, heres how to cook medium-rare steak the right way.

Steak Seasoning Flavor Variations

I love this spice blend recipe as its written, but you can absolutely add other flavors to the mix to customize it to your tastes.

  • Spicy Steak Rub: Add 1/2 teaspoon of crushed red pepper flakes, or ground chipotle pepper to the mix.
  • Garlic Lovers Rub: Double the amount of garlic in the recipe.
  • Herb Lovers Rub: Add 1 teaspoon each of dried rosemary and parsley, and 1/4 teaspoon dried oregano.
  • Mexican Rub: Add 1 tablespoon chili powder and 1 teaspoon ground coriander to the mix.

Whats The Benefit Of Steak Seasoning

Steak seasoning refers to any herbs, spices, or spice blend mixtures you use on your steak to boost its flavor profile. Although many people season their steaks before cooking them, they may not know the benefits behind steak seasoning.

One of the obvious benefits is that steak seasoning gives steak a flavor boost that enhances its natural flavors. Sure, you love the flavor of steak on its own. But when you add some sea salt and ground black pepper to your steak before cooking it, you bring out even more of that savory flavor you love.

Seasoning a steak has another not-so-obvious benefit: it can tenderize the meat. Any good steak recipe will call for salt, and thats because salt draws out moisture in the steak. This process, known as dry brining, creates a brine that, when the steak cooks, gets reabsorbed back into the meat to tenderize it. Theres a lot of science that goes on behind the scenes to make your filet mignon or sirloin steak delicious!

Pat your steak dry with paper towels, then sprinkle a generous amount of rub on one side of the steak. Use your fingers and hands to rub the spice blend into the steak. Flip and repeat on the other side.

Though you can immediately cook the steak, if you let it sit at room temperature for an hour the rub will penetrate the meat and give a deeper flavor. You can even cover and let it sit overnight in the fridge for a more robust flavor.

Once its ready, grill or fry in a pan as you normally would. You can even sous vide the steak with rub on it, though I would add more rub right before reverse-searing it.

How Do You Season Steak

Steak should always be seasoned generouslyreally generously. Youre going to need to sprinkle on more salt than you think is appropriate because you want it to completely cover the steak. Sprinkle the salt from above for more even coverage. Its going to seem like overkill, but seriously just keep salting. Once youve salted your steak, gently press the crystals into the meat with your hands to help them adhere. If youre making a really thin cut of steak, like skirt steak, dont salt as heavily, but if youre making a 2-inch-thick, bone-in porterhouse , then keep salting. You want the salt to flavor the whole thing.

When To Season Steak Heavily And When To Cut It Back

You might notice that most steak recipes have one thing in common: they tell you to season steak generously. But you might wonder just how generous you need to be to avoid overseasoning your steak. Its a common conundrum, but were here to help.

Generally, the amount of steak seasoning you need depends on how thick your steak is. The seasoning sits only on the outer side of the steak, so the middle of the steak doesnt get seasoned. Therefore, thicker steaks require more seasoning to ensure that you get a flavorful bite, whereas thinner steaks dont need as much because you wont be eating as large of an unseasoned portion in each bite.

So, strip steak, filet mignon, ribeye, and other thick steaks typically call for a generous amount of seasoning. But flank steak and flat iron popular thinner steaks may not need as much to achieve the same taste result.
