Sometimes the steak’s internal temperature will putter along around 100 degrees Fahrenheit and suddenly shoot past the 135-degree target.

The ideal grilled steak has an appetizing browned exterior with tender, still-pink meat inside. The tricky part is making sure that you don’t burn the surface of the meat before the inside gets warm enough to eat, or cooking the inside too much before getting those nice surface grill marks.

There are two ways to go about it.

  • Direct grilling: Cooking the steak over high heat, and flipping occasionally until the meat reaches the desired internal temperature .

  • Reverse searing: Cooking the steak slowly at a low temperature with indirect heat to get the meat 10 to 15 degrees from the final desired internal temperature, then finishing by cooking over high heat to get browning and grill marks.

  • How Long Should I Cook My Filet

    Due to differences in cooking temperatures and possible hot spots, I am including desired cooking temperatures. Generally speaking, these filets need to cook for 6-7 minutes per side.

    I highly recommend using a meat thermometer if you are unsure of doneness based on touch. Since these steaks are dry aged, they will stay more tender even though they have reached the desired internal cooking temperature.

    Cooking Frozen Steaks On The Grill

    Lets talk about the differences between using a charcoal grill vs. a pellet grill like a Traeger. Just because the latter typically is used for smoker recipes doesnt mean you cant barbecue on it too. Smoking meats is when the temperature is 250 F or lower, anything above that is considered grilling.

    If you use pellets and you can set the temperature set it to 350 and wait until it preheats. For charcoal, light them and wait until they turn white before putting food on the grates.

  • For both you want to find two areas
  • youll need the indirect heat side for a longer period to cook thru to the middle
  • direct or high heat is necessary to sear or cook the steak on the outside to get those nice grill marks youll want
  • It doesnt matter what type youre cooking, these instructions will remain the same either way. Thick cut steaks may need more timing of course. Youll want a digital thermometer to test grilled steaks along the way so theyre perfect for everyone.

  • Combine Traeger Sweet & Heat BBQ Sauce into a shallow casserole dish and stir to combine.
  • Place the strip steak in the mixture, making sure the steak is coated evenly on both sides. Cover with plastic wrap and marinate in the refrigerator for a minimum of 3 hours to overnight.
  • Remove the steak from the marinade and season with Traeger Beef Rub. Let steaks come to room temperature before grilling, about 45 minutes.
  • When ready to cook, set the Traeger to 500 and preheat, lid closed for 15 minutes.
  • Place steak toward the front of the grill grate and cook for 4-5 minutes on each side until steaks reach desired internal temperature, 130 for medium-rare.
  • Remove from the grill and let rest for 5 minutes. Slice against the grain to serve. Enjoy! *Cook times will vary depending on set and ambient temperatures.

    So you really want a get the pellet grill to the highest temperature whether youve got a top temperature of 700°F or 350°F it really doesnt matter.

    As long as youve got that form of heat retention that makes all the difference. The ability of a pellet grill to sear and create a crust on the steak is all about holding heat.

    You might already have one hanging around at home but basically you just need a cast-iron pan. The biggest tip I have with one of these is to be really careful with the handle.

    After I have had a few drinks, Ill still give myself a minor burn by grabbing the handle without some form of protection even an old dish towel drying towel will do the job for you.

    Another tip if you want to actually get little bit more crust going on especially if you have a steak with a bit of fat either separated fat or when its intertwined into the muscle wagyu.

    The old chef trickIf you using a cast-iron pan youre able to get oil in the pan and then put some butter in, the oil will slow down the butter from burning and then steak will sear, brown and crust more easily.

    You dont need a lot of butter.

    Trust me, youll get another level of crust, I learned this trick when I was doing some observations inside commercial kitchens as a pseudo fine dining consultant and seeing how the chefs were doing things .

    How Did The Smoked Ribeye Turn Out

    I overshot the internal temperature a little so the steak was slightly overcooked for my preference. This is one of the tricky parts about pulling off the perfect reverse sear as it is easy to overcook when using high heat.

    That being said, the steak was tender, had a great crust and a wonderful smoky flavor. It is hard to beat the taste of a juicy ribeye and I really enjoyed wolfing this one down.

    I was surprised that the coffee rub, which tastes extremely balanced coming out of the jar, made the steak sweeter than I was expecting. When I repeat this recipe I will probably season the steak with salt and pepper first and then come back with the coffee rub as a secondary flavor level.

    Which type of searing will net you the best results? Honestly, thereâs no clear-cut winner between traditional and reverse searing â except for you and your hungry guests.

    Now that you know how to cook steak on a pellet grill, you have no excuse not to pick up some ribeyes, T-bones, New York Strips or sirloins for dinner tonight. Perfect isnât always possible when it comes to grilling steaks. But when youâre cooking on a Grilla, youâre well on your way.

    Why Cook Steak On The Traeger

    If you are looking for a black and blue steak with a dark purple cool center, you need to sear that at 900°F for a minute per side. You can’t get that on the Traeger. Because the Traeger grill cooks indirectly, a dark charred sear is not achievable without completely overcooking your steak. But that is ok. If you are most interested in flavor and looking to find new wrinkles of flavor, this one is for you. It doesn’t get more simple than steak, salt, pepper, and your Trager grill.
