Significance Of The Best Traeger Grill

How to Reverse Sear Ribeye Steaks | Traeger Staples

Pellet barbecues may be used to smoke, barbeque, heat, or even braise food. It should come as no surprise that pellet grills behave more like an outdoor broiler than a traditional BBQ in terms of performance.

Traeger claims that most first-time customers are taken aback by the versatility of a pellet barbecue, regardless of their experience with one.

Pellet barbecue is nearly limitless because, unlike other types of grills or smokers, a pellets barbecue allows you to cook things low and moderately or more scorching and quickly according to your preferences.

Furthermore, you may program a specific temperature that will provide consistently predictable and practical cooking results. Ginevra points out that since there is no immediate heat cooking and no open fire, there is no need to be concerned about flare-ups.

Do You Close The Grill When Cooking Steak

Yes, you close the grill when cooking steak. Closing the grill helps the temperature stay high, achieving the tasty sear you want on the surface of the steak.

But you should check the temperature of the steak frequently. If you have a Traeger that’s no problem, because you can use the temperature probe to keep track.

The higher the cooking temperature, the more often you should peek and test. Different cuts cook at different rates, and you never know exactly how long it’s going to take. Sometimes the steak’s internal temperature will putter along around 100 degrees Fahrenheit and suddenly shoot past the 135-degree target.

Season Your Venison Steaks

The key to making venison taste great is to season it properly. First, place the steaks on a paper towel and season them with salt, about 1/2-1 teaspoon of salt per pound of meat. Pat the meat super dry before placing it on the grill to ensure a great crust. This is a tip I often use in my cookbook, Venison Every Day.

The Two Best Ways To Grill Steak

The ideal grilled steak has an appetizing browned exterior with tender, still-pink meat inside. The tricky part is making sure that you don’t burn the surface of the meat before the inside gets warm enough to eat, or cooking the inside too much before getting those nice surface grill marks.

There are two ways to go about it.

  • Direct grilling: Cooking the steak over high heat, and flipping occasionally until the meat reaches the desired internal temperature .

  • Reverse searing: Cooking the steak slowly at a low temperature with indirect heat to get the meat 10 to 15 degrees from the final desired internal temperature, then finishing by cooking over high heat to get browning and grill marks.

  • How Long Should I Cook My Filet

    Traeger Wood Fired Grills

Due to differences in cooking temperatures and possible hot spots, I am including desired cooking temperatures. Generally speaking, these filets need to cook for 6-7 minutes per side.

I highly recommend using a meat thermometer if you are unsure of doneness based on touch. Since these steaks are dry aged, they will stay more tender even though they have reached the desired internal cooking temperature.

Lets talk about the differences between using a charcoal grill vs. a pellet grill like a Traeger. Just because the latter typically is used for smoker recipes doesnt mean you cant barbecue on it too. Smoking meats is when the temperature is 250 F or lower, anything above that is considered grilling.

If you use pellets and you can set the temperature set it to 350 and wait until it preheats. For charcoal, light them and wait until they turn white before putting food on the grates.

  • For both you want to find two areas
  • youll need the indirect heat side for a longer period to cook thru to the middle
  • direct or high heat is necessary to sear or cook the steak on the outside to get those nice grill marks youll want
  • It doesnt matter what type youre cooking, these instructions will remain the same either way. Thick cut steaks may need more timing of course. Youll want a digital thermometer to test grilled steaks along the way so theyre perfect for everyone.

The reverse sear method of cooking meat and steak has been gaining popularity among steak lovers and food geeks in recent years. The concept is simple. Instead of searing the steak first in a hot grill or pan, the steak is cooked at a low temperature until the entire piece of the meat reaches the optimal doneness. Then, once its cooked through, the meat is seared at the very end to achieve a crisp crust.

As the name suggests, it basically changes the sequence of the traditional steak-cooking formula by searing the steak last.

For those of you who are familiar with sous vide which is all about precision cooking, you might be wondering the differences between the two. How is reverse searing better? Can it cook steaks evenly from edge to edge just as sous vide? Does it deliver steaks with the same desirable tender perfection? The answer is YES. Thats exactly what the reverse sear method does.

With reverse sear on the Traeger, and you can even cook each piece of meat to various degrees of doneness compared to sous vide. This is a great benefit when youre cooking for a group of people who enjoy their steaks differently.

How Did The Smoked Ribeye Turn Out

I overshot the internal temperature a little so the steak was slightly overcooked for my preference. This is one of the tricky parts about pulling off the perfect reverse sear as it is easy to overcook when using high heat.

That being said, the steak was tender, had a great crust and a wonderful smoky flavor. It is hard to beat the taste of a juicy ribeye and I really enjoyed wolfing this one down.

I was surprised that the coffee rub, which tastes extremely balanced coming out of the jar, made the steak sweeter than I was expecting. When I repeat this recipe I will probably season the steak with salt and pepper first and then come back with the coffee rub as a secondary flavor level.

    Ribeye Or New York Strip

A New York strip is tender, but also has a fair amount of fat marbling so it has similar qualities to a ribeye. The ribeye typically has more fat, resulting in more flavor. There’s usually less obvious marbling in a New York strip, but the fat is better distributed throughout the steak. Also, because of the more even distribution of marbling, each bite of a New York strip has more consistent flavor.
