Angela’s Tips & Recipe Notes

Is This Wagyu Steak Worth $450?
  • I highly recommend using a cast iron skillet when pan searing steak! The cast iron will help caramelize the outside of the steak to that perfect golden-brown color, resulting in better overall flavor. This is just my personal preference, any large skillet or frying pan will suffice.
  • If you are cooking multiple steaks make sure you are not crowding the pan or they will cook unevenly. Use multiple skillets or work in batches if you need to.
  • For an even more distinct flavor, you can add the garlic and herbs at any time during the cooking process. Add them when you start cooking, when you flip the steak, as well as near the end to really infuse the melting butter with more flavor.
  • Try not to overcook your steak. The more you cook it, the fat will melt and you will begin to lose its delicious, buttery flavor.
  • If you bought your Wagyu in advance and need to freeze it, do so immediately once you return home from purchasing your steak. Freezer burn is caused by air exposure, so the quicker you get it into the freezer and the less air it is exposed to prior to freezing, the better.
  • Use a meat thermometer! It takes all the guess work out of cooking a steak so you’ll know when you’ve got it just right.

How Is Wagyu Beef Raised

Wagyu beef is raised on farms in Japan, as well as in Australia and the United States, each with its own specific feeding protocols. Cattle are often grass-fed or pasture-raised but will be finished with the farm’s signature choice of feed. In Japan, there are cattle that are finished on olives or locally grown rice stalks. In the U.S. they can be finished with corn, soy, or a proprietary mix of ingredients. But almost all wagyu livestock is antibiotic-free and raised without hormones.

Why Is Wagyu Beef So Expensive

Wagyu beef comes from select Japanese cows that are raised in a specific manner. The genetic heritage of the cows, along with the way the cattle are raised, leads to meat that has ample intramuscular fat marbling. This signature fat marbling gives wagyu beef its rich, tender, umami flavor. Because of the time-intensive labor involved in raising these select cows, wagyu beef is one of the most expensive types of beef available.

Best Homestyle Butcher: Rastelli’s

  • Only one available style of wagyu

  • Certain wagyu cuts are often out of stock due to limited supply

Rastellis started as a family business butcher shop over 40 years ago but has since expanded into an online business with a network of farms and partners across the globe. But even with the expansion of the business, the Rastellis family has strived to run their business like a small family shop, working and sourcing their meat from family farms and fisheries that have been owned for generations. Rastellis sells beef, poultry, seafood, pork, and lamb, all delivered vacuum-sealed and flash frozen for optimum freshness.

Rastellis American Wagyu is the only wagyu they sell. The Wagyu cattle, raised in the Ohio valley, are direct descendants of the original Japanese bloodline that was imported to the U.S. during the 1970s. Pasture-raised until they are 16 months old, the cattle are then switched to an all-vegetarian diet of high-moisture grains, resulting in meat with the delicate texture wagyu enthusiasts have come to expect.

Wagyu beef is definitely a luxury purchase, but Rastellis does offer some options. In addition to one-time orders, customers also have the option for their order to be turned into a subscription with an additional 5% off. Rastellis subscription model allows delivery in whatever frequency you like and can be paused or canceled at any time.

Japanese Meat Grading Association, JMGA, grades the beefs ranking quality and yield based on fat marbling, texture, color, firmness, brightness and fat quality. More marbling means a tender, creamier texture, and is what wagyu beef connoisseurs highly prize. The higher the Beef Marble Standard score the more expensive the beef. The Top Tier on the Japanese scale, a BMS of 8 to 12, is denoted A5.

Australian Wagyu is the result of breeding a 100% full-blooded Wagyu Sire and an Angus Dam. An F1 Crossbred or First Crossbred Generation is 50% Wagyu Genetics. Taking advantage of their reputation and experience in the cattle industry, Australian ranchers introduce the very best genetics through an F2 and F3 crossbreeding with up 87% Wagyu Genetics. They created something new and unique to a market looking for something rare and exclusive under their former Brand F1″ and now call Wagyu X.

Just as the Japanese Beef, Australian Beef tenderness, juiciness and richness is determined by BMS. Australian grading score scale tops out at 9 with everything above it denoted as 9+ in some cases.

What Is The Difference Between Kobe And Wagyu Beef

Australian M5 Wagyu Ribeye â Steak King

Though the terms Kobe and wagyu are often used interchangeably, especially for marketing purposes in the U.S., they do mean different things. Wagyu is a Japanese phrase that translates to Japanese cattle the word wa means Japanese and gyu”means cow.

In Japan there are four wagyu breeds: the Japanese Black, the Japanese Brown , Japanese Shorthorn, and the Japanese Polled. Kobe beef comes from a specific breed of cow, the Japanese Black, raised in the Hyogo Prefecture region of Japan, where the city of Kobe is. Thus, all Kobe beef is wagyu beef, but not all wagyu beef is Kobe beef.
