  • I highly recommend using a cast iron skillet when pan searing steak! The cast iron will help caramelize the outside of the steak to that perfect golden-brown color, resulting in better overall flavor. This is just my personal preference, any large skillet or frying pan will suffice.
  • If you are cooking multiple steaks make sure you are not crowding the pan or they will cook unevenly. Use multiple skillets or work in batches if you need to.
  • For an even more distinct flavor, you can add the garlic and herbs at any time during the cooking process. Add them when you start cooking, when you flip the steak, as well as near the end to really infuse the melting butter with more flavor.
  • Try not to overcook your steak. The more you cook it, the fat will melt and you will begin to lose its delicious, buttery flavor.
  • If you bought your Wagyu in advance and need to freeze it, do so immediately once you return home from purchasing your steak. Freezer burn is caused by air exposure, so the quicker you get it into the freezer and the less air it is exposed to prior to freezing, the better.

How Is Wagyu Beef Raised

Wagyu beef is raised on farms in Japan, as well as in Australia and the United States, each with its own specific feeding protocols. What Are The Different Grades Of Wagyu Beef

Japanese wagyu beef is graded with a letter A through C and a number 1 through 5. The letter grade represents how much wagyu can be harvested from the cow, with A being the highest score. The number grade measures the firmness and texture, with 5 being the highest. Thus A5 is the highest grade possible. A secondary scale called BMS stands for Beef Marbling Scale and goes from 1 to 12 with a BMS 12 being the highest rating it has at least 56.3% intramuscular fat.

What Is The Difference Between Kobe And Wagyu Beef

Australian M5 Wagyu Ribeye â Steak King

Though the terms Kobe and wagyu are often used interchangeably, especially for marketing purposes in the U.S., they do mean different things. Wagyu is a Japanese phrase that translates to Japanese cattle the word wa means Japanese and gyu”means cow.

In Japan there are four wagyu breeds: the Japanese Black, the Japanese Brown , Japanese Shorthorn, and the Japanese Polled. Kobe beef comes from a specific breed of cow, the Japanese Black, raised in the Hyogo Prefecture region of Japan, where the city of Kobe is. Thus, all Kobe beef is wagyu beef, but not all wagyu beef is Kobe beef.

We will ship on Mon/Tue/Wed only so that the product doesnt risk sitting in a terminal over the weekend. Product is shipped frozen and will arrive cold and thawed or partially thawed. If you have special requirements, please send us a message, most likely we can accommodate you.

Cattle

All animals sold on this site have been raised on our personal farm, or have been raised by other ranchers around us who share the same feelings on animal welfare, feeding, and health. No animals sold will have been given hormone or implants as is common in the industry. We use antibiotics only when absolutely necessary, which is not often as we have a robust vaccination program, but animals do get hurt or catch pneumonia from time to time. We care for these animals like our own children, except on that last day.

Variation

As cattle are natural creatures and not stamped out of a production line, there will be variations in the meat. Sizes are not uniform theyll be of different shapes and potentially different thicknesses. They may be different colors. Marbling will vary per animal and per cut.
