  • Season flat iron steak with kosher salt and leave it in a fridge overnight. If short on time, season at least 4 hours before cooking. Salt will tenderize the steak and make it more flavorful. Salt draws out the moisture from flat iron steak and forms a salty brine. The same brine will soak back into the meat and make it more tender and juicy.
